BAY & ORANGE ROAST TURKEY
Brushing the turkey with a last-minute sticky glaze means your bird will be golden and looking its best when you bring it to the table

- Heat oven to 180C/160C fan/gas 4. Remove giblets, then wash and dry the turkey, removing any remaining feathers. Mix half the butter with the orange zest and plenty of seasoning. Lift up the skin at the neck end of the turkey and use your fingers to ease the skin away from the breasts. Gently smear some of the zesty butter over the breasts and under the skin. Pack the stuffing into the neck opening and secure the skin closed with skewers or cocktail sticks. Weigh the turkey at this point and write it down so you can work out your timings, then rub the rest of the zesty butter all over.
- Stuff the 2 whole oranges into the cavity with some bay leaves. Pile the sliced shallots and a few more bay leaves into a large roasting tin and sit the turkey on top. Pour 500ml of the stock around, cover with foil to make a tent over the turkey, then roast for 20 mins per 450g/1lb.
- Meanwhile, bubble the remaining butter, orange juice and sugar together until syrupy. With 30 mins cooking time to go, remove the foil, brush the turkey liberally with the syrup, then return to the oven to brown at 200C/180C fan/gas 6. Brush once or twice more while roasting. To test that the turkey is ready, pierce the thigh in its thickest part and make sure the juices run clear. Lift the turkey out, brush again with syrup and leave to rest, covered loosely with foil, for 20 mins or so while you make the gravy and finish cooking the veg.
- Pour the tin juices into a jug (keeping shallots and bay in the tin), then put the roasting tin over a flame. Stir in the flour, then gradually stir in the remaining stock Marmite and reserved turkey juices - skimmed of any fat. Bubble until a nice consistency, then strain into a saucepan, squishing the shallots with a masher to squeeze out all the flavour. Keep the gravy warm while you carve the turkey to serve.

- Preheat oven to 425 with rack in lower third position.
- Season cavity of turkey with 1 tablespoon salt and 1/2 teaspoon pepper. Stuff cavity with orange, lemon, onion, garlic, and herbs. Tie legs with twine and transfer turkey to a rack set inside a roasting pan.
- Rub skin with olive oil and season with remaining salt and pepper.
- Pour 2 cups chicken stock into roasting pan and transfer to oven. Roast turkey for 2 1/2 hours or until meat thermometer inserted into thickest part of breast registers 165 degrees. After first hour of roasting, baste turkey every 30 minutes, and tent with foil if skin becomes deep golden brown before turkey is cooked.
- Remove turkey from oven and transfer to a carving board. Let stand at least 15 minutes.
- Place roasting pan on stovetop over medium-high heat and bring pan drippings and remaining 1 cup chicken stock to a simmer. Combine milk and flour in a mason jar and shake vigorously to combine. Whisk milk mixture into gravy and simmer, whisking constantly, until gravy thickens slightly, about 2 minutes.
- Carve turkey and serve with gravy.

- Preheat the oven to 190°C (approximately 375°F). For the filling, heat the oil in a pan and sauté the ginger and lemongrass for 2 minutes. Peel onion and garlic, finely chop and add to the pan. Rinse chile and cut in half lengthwise, remove the seeds, chop finely and add to the pan. Cook everything for an additional 5 minutes until the onion is soft. Remove from heat and mix with the other ingredients for the filling. Stuff the turkey with some of the filling and sew skin to secure.
- The rest of the filling can be shaped into balls and cooked for 20 minutes with the turkey. Rinse 1/2 bunch cilantro, shake dry and place into the abdominal cavity of the turkey with the lemon wedges. Place the turkey, breast-side down in a greased roasting pan. Cook for 1 1/2-2 hours in the preheated oven. Baste with pan juices during cooking. Test the turkey for doneness by inserting a needle at the thickest point - if clear juice runs out, then the turkey is done.
- Remove the finished turkey, put on a plate, cover with aluminum foil and let rest 15 minutes. For the stuffed oranges, halve the fruit and squeeze the juice. Scrape remaining pulp from the orange halves. Peel the onion and garlic and chop finely. Heat the oil in a pan and cook the onion and garlic until soft. Add the sausage and the ham and cook until light brown.
- Simmer the chestnuts and 4 tablespoons orange juice for 5 minutes. Season with pepper and mix with other filling ingredients. Fill the hollowed-out orange halves with the mixture, sprinkle with orange zest and serve placed decoratively around the turkey.
ROAST TURKEY WITH ORANGES, BAY LEAVES, RED ONIONS, AND PAN GRAVY

- Roast turkey:
- Preheat oven to 425°F.
- Rinse turkey inside and out and pat dry. Sprinkle turkey inside and out with salt and pepper, then fold neck skin under body and secure with small skewer. Stuff large cavity with oranges, 1 onion, and bay leaves. Tie drumsticks together with kitchen string and secure wings to body with small skewers.
- Put turkey on a rack set in a large flameproof roasting pan and roast in middle of oven 30 minutes.
- While turkey is roasting, toss remaining 2 onions with 2 tablespoons melted butter.
- Reduce oven temperature to 350°F. Brush remaining 1/4 cup butter over turkey and roast 30 minutes more. Baste turkey and scatter buttered onion wedges around it, then roast, basting turkey every 30 minutes (add a little water to pan if onions get too dark) until an instant-read thermometer inserted into fleshy part of a thigh (do not touch bone) registers 170°F, 1 1/2 to 2 hours more (total roasting time: 2 1/2 to 3 hours). Transfer turkey to a platter (do not clean roasting pan) and let stand 25 minutes (temperature will rise to 180°F).
- Make gravy:
- Transfer pan juices with onions to a 2-quart glass measure, then skim off and reserve 1/4 cup fat. Add enough turkey stock to pan juices to make 4 1/2 cups total. Set roasting pan across 2 burners, then add 1 cup stock mixture and deglaze pan by boiling over moderately high heat, stirring and scraping up brown bits. Add remaining stock mixture and bring to a simmer. Pour stock through a fine sieve back into glass measure and discard onions.
- Whisk together reserved fat and flour in a large heavy saucepan and cook roux over moderately low heat, whisking, 3 minutes. Add hot stock mixture in a fast stream, whisking constantly to prevent lumps, then simmer, whisking occasionally, until thickened, about 10 minutes. Stir in any additional turkey juices accumulated on platter and season gravy with salt and pepper.
- Serve turkey with gravy on the side.

- Heat oven to 325ºF.
- Heat oil in large skillet on medium heat. Add onions and garlic; cook and stir 3 min. Add pork; cook 5 min. or until no longer pink, stirring occasionally. Stir in tomato sauce; cook 2 min. Add stuffing mix, raisins, nuts and the juice of 2 oranges (about 1/2 cup); mix well. Cook 5 min. or until heated through, stirring frequently. Remove from heat. Cool 15 min. before stuffing the turkey.
- Remove and discard neck and giblets from turkey cavities. Free legs from tucked position, but do not cut band of skin. Place turkey, breast-side up, in roasting pan. Spoon stuffing into neck and body cavities, being careful to not pack stuffing into turkey too tightly. Return legs to tucked position; turn wings back to hold neck skin in place. Cut 1 orange into 8 slices; arrange over turkey. Cover breast loosely with foil to prevent over-browning.
- Bake 3 hours, basting occasionally with pan juices. Meanwhile, combine tamarind pulp, sugar and juice from remaining 2 oranges in saucepan. Remove foil; bake turkey 45 min. to 1 hour or until done (165ºF), brushing with 1/4 cup of the tamarind mixture for the last 15 min.
- Remove turkey from oven; let stand 15 min. before carving. Meanwhile, stir cornstarch into remaining tamarind mixture until completely dissolved. Bring to boil; cook and stir 1 min. or until thickened. Remove from heat; stir in butter. Serve warm with turkey.

TRADITIONAL ROAST STUFFED TURKEY
When I eat roast turkey, I want a basic recipe, no special herbs or brines. Slow roasted straight up, browned to perfection. Just the way Grandma used to do it when I was a little girl. I begin the stuffing preparation the night before. Don't let the long instructions scare you off, I explained each step for beginner cooks.

- Tear the bread into pieces, and place back into the bags overnight.
- Dice the onion, and leave covered on the counter.
- The next day, saute the diced onion in margarine, stir in sage and chicken broth.
- Place the bread pieces in a large mixing bowl, pour most of the onion mixture onto the bread and stir.
- The stuffing has enough moisture when you can squeeze a handful, and when opening your hand, the stuffing stays in a loose ball. If it falls apart, add a little more onion mixture.
- If it is soggy and squeezes together tightly, add a little more bread pieces.
- If the bird has skin which is binding it's legs together, cut this.
- Rinse the bird, remove and discard heart, neck etc. and pat the insides to remove some of the moisture.
- Push the stuffing into the carcass,until you cant' get anymore in, overstuffing the bird as seen in the picture. The tighter you push it in, the moister the stuffing will be.
- Stuff the neck cavity.
- If you have leftover stuffing, that is a good thing. Place it in a sprayed crock pot and cook on low for 4-5 hours.
- Wrap the legs and wings with foil, they will cook quickly.
- Put a piece of loose foil over the entire bird.
- Roast at 325°F for about 3 hours.
- Remove all of the foil, setting it aside and roast for another hour.
- If the turkey does not have a pop up timer, use a meat thermometer.
- When done, set the turkey out on the counter and cover loosely with the foil, let it stand 20 minutes for a moist bird.
- Remove the stuffing from the bird and mix it in with the crock pot stuffing.
- Carve the turkey and serve on a platter.
- Enjoy this time honored tradition with your loved ones.
- You may use more or less sage, according to your tastes.

ROAST STUFFED TURKEY

- Preheat oven to 450 degrees.
- Stuff turkey cavity with about 5 cups of stuffing. Place folded piece of aluminum foil inside cavity opening to hold stuffing in place. Fill neck opening with remaining stuffing and fold over skin to enclose. Truss turkey with string.
- Place turkey in large roasting pan. Rub all over with oil, salt and pepper. Scatter onions and turkey neck around it. Put in oven and roast about 45 minutes or until golden brown. Baste and cover breast loosely with aluminum foil.
- Reduce oven heat to 400 degrees.
- Roast turkey about 50 minutes and pour chicken broth and water around it. Replace foil and continue baking, basting often, at least every 15 minutes. Cook about 2 hours longer. Total cooking time is 3 hours and 30 minutes. The cooking time is 11 or 12 minutes per pound. When done, joint between leg and thigh bone will move easily when touched. If skin is pierced at that joint, the juices that run out will be clear. A meat thermometer inserted into the stuffing or breast meat will register 160 degrees.
- Remove turkey from roasting pan and pour off the basting liquid. Strain it. Skim off the fat. Pour skimmed juices into the giblet gravy. Bring to the boil and skim off any additional fat. There should be about 3 cups of gravy.
ORANGE & TARRAGON ROAST TURKEY

- Heat oven to 180C/160C fan/gas 4. Line a roasting tin with a very generous length of double-thickness foil. Weigh the turkey to calculate the cooking time, allowing 40 mins per kg for the first 4kg, then 50 mins for every kg over that weight (a turkey this size should take 3½-4 hrs).
- Put the butter in a bowl and finely grate the zest from the orange on top. Add the chopped tarragon, garlic and seasoning and mix well. You can make this 3 days ahead.
- Gently push your fingers under the turkey skin, starting from the neck end of the bird, easing the skin away from the breast and the top of the drumsticks. Now spread the flavoured butter under the skin, taking care not to tear it. You won't be able to reach all the way down to the drumsticks, but you can ease the butter along by smoothing it through the skin. Quarter the orange and tuck into the turkey cavity with the onion and the bunch of tarragon (step-by-step). You can do this the night before.
- Season the turkey with salt and pepper, then lift it onto the foil-lined roasting tin. Pour the wine into the cavity of the turkey, then bring up the sides of the foil and cover the top of the bird with a layer of foil. Roast according to your calculated time.
- Thirty mins before the end of cooking time, remove the foil from the top of the turkey and add the potatoes to the oven.
- To test if the turkey is cooked, pierce the fattest part of the thigh with a skewer - the juices that run out should be clear, not pink. If they are pink, continue to roast, checking at 10-min intervals.
- Remove the turkey, transfer to a warm serving platter and let it rest, covered loosely with the foil, for 30-40 mins before carving. Meanwhile, turn up the oven to 200C/180C fan/gas 6 and cook the potatoes for 30 mins more, with the stuffing and sausages. Serve the turkey decorated with herbs.

- Heat oven to 400 degrees. Pat turkey dry with paper towel and place it on a rack in a roasting pan. In a small bowl or on a clean cutting board, mash the butter together with the orange zest, sage, garlic, salt and pepper to create a paste. - Finely grate zest from oranges. Cut the fruit into wedges. Combine softened butter and orange zest.
