This is a new recipe I discovered this past Thanksgiving. We wanted to try a a new vegetable. I have to admit rutabaga, or yellow turnip as it is sometimes called, was something I wasn't totally wild about trying, but it turned out great. I love it now! Definitely a repeat!

1 rutabaga, peeled and cut into 1/2-inch cubes
2 tablespoons olive oil, or more to taste
2 teaspoons kosher salt
1 teaspoon white sugar
¼ teaspoon dried basil, or to taste
¼ teaspoon dried oregano, or to taste

Steps:

  • Place a rack in the center of the oven and preheat to 400 degrees F (200 degrees C).
  • Place rutabaga in a large resealable plastic bag and drizzle olive oil over it. Seal the bag tightly and shake until rutabaga is nicely covered with oil. Open the bag and add salt, sugar, basil, and oregano. Seal the bag again and shake gently until spices are evenly distributed. Transfer rutabaga to a nonstick baking sheet.
  • Roast in the preheated oven until tender and golden, stirring halfway through, about 40 minutes.

Found the original recipe on a product site. Made a few changes and it ended up pretty darn good. I grew up eating pureed rutabaga, but a few years ago discovered the joy of roasting it. Roasting rutabaga concentrates and highlights it's natural sweetness. In this recipe I season the rutabaga which also highlights the sweetness. I also add a tablespoon of sugar, which actually has little effect on the sweetness but encourages browning.

1 rutabaga
3 teaspoons olive oil
1/2 tablespoon basil
1/4 tablespoon rosemary
1/4 tablespoon thyme
1/8 tablespoon oregano
2 teaspoons kosher salt
1 tablespoon sugar

Steps:

  • Heat oven to 400 degrees.
  • Peel rutabaga and cut into 1/2-inch cubes.
  • Place rutabaga cubes in a large mixing bowl and drizzle with olive oil.
  • Cover bowl with a plate and shake to coat rutabaga with oil.(You may need a bit more oil.).
  • Sprinkle rutabaga with remaining ingredients and shake again distribute.
  • Transfer rutabaga to a parchment-lined or non-stick baking sheet.
  • Roast in center of the oven until edges brown and rutabaga is tender - 40 to 50 minutes - stirring about halfway through to minimize sticking. (Note: It may take longer depending on the size of the rutabaga. You know they are ready when you can stick a fork all the way in with little resistance.).

Steps:

  • Gather the ingredients. Preheat the oven to 425 F.

I wasn't able to find a recipe like this for rutabaga anywhere, so I came up with one on my own, and it was fantastic! Just make sure that you thoroughly cook your rutabaga--it's not so good when it still has that bitter semi-raw taste.

extra-virgin olive oil, plus more for greasing
4 russet potatoes, peeled and chopped into 1-inch cubes
1 rutabaga, peeled and chopped into 1-inch cubes
½ pound baby carrots
½ large red onion, chopped into 1-inch pieces
½ large white onion, chopped into 1-inch pieces
½ lemon, juiced
3 cloves garlic, minced
2 teaspoons Italian seasoning
1 teaspoon lemon pepper
½ teaspoon sea salt

Steps:

  • Adjust oven rack to bottom position. Preheat oven to 450 degrees F (230 degrees C). Grease a large roasting pan with olive oil.
  • Toss potatoes, rutabaga, carrots, red onion, and white onion in a large mixing bowl. Add 1/4 cup olive oil and toss to evenly coat vegetables. Mix in lemon juice and garlic. Add Italian seasoning, lemon pepper, and sea salt; toss to thoroughly distribute ingredients. Transfer vegetable mixture to the prepared roasting pan.

My grandmother usually cooks rutabagas on the stovetop with smoked meat, so all I ever tasted was smoke. As for me, I want a rutabaga to taste like a rutabaga and this recipe does just that-with a fresh, tart cranberry sauce for an added twist!

8 tablespoons (1 stick) salted butter, plus more for buttering the dish
3 pounds rutabagas (about 4), peeled and cut into 1 1/2-inch cubes
6 shallots, peeled and quartered lengthwise
4 sprigs fresh rosemary
Kosher salt and freshly ground black pepper
One 12-ounce bag fresh cranberries
1 cup granulated sugar
1/2 cup light brown sugar
1 orange, 1-inch piece of rind reserved, juiced

Steps:

  • Preheat the oven to 400 degrees F. Butter a deep 9-by13-inch baking dish.
  • Add the rutabagas and shallots to the baking dish. Slice the stick of butter and distribute it over the top. Strip the leaves from 3 sprigs rosemary and sprinkle them over the top along with salt and pepper to taste. Roast until the rutabagas develop a deep golden color, about 45 minutes.
  • Meanwhile, combine the cranberries, granulated sugar, brown sugar, orange rind, orange juice, the remaining sprig rosemary and 3/4 cup water in a medium saucepan. Cover and cook the cranberries over medium heat until they burst, about 30 minutes. Remove from the heat and set aside until ready to serve. Discard the rosemary sprig.
  • Remove the rutabagas from the oven. Toss to combine the ingredients and serve drizzled with the cranberry sauce.
