6 ounces whole-grain bread, cut into 1/4-inch cubes
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter
1 cup chopped yellow onion
1/2 cup diced carrot
1/2 cup diced celery
1 tablespoon minced garlic
4 tablespoons chopped fresh flat-leaf parsley
2 tablespoons chopped fresh sage
1 cup chicken stock, plus more if needed
8 quail, semi-boneless (with leg and thigh-bone, or ask your butcher to debone)

Steps:

  • Preheat oven to 425 degrees F.
  • Place the bread on a rimmed baking sheet and drizzle with olive oil and salt. Toast for 5 to 8 minutes, until crisp. Transfer to a large bowl.
  • In a heavy-bottomed skillet over medium-high heat, heat the butter until it's melted and foamy. Add the onion, carrot, celery and garlic and cook, stirring, until the vegetables are tender, about 10 minutes. Stir in the parsley, sage and chicken stock. Season with salt and pepper. Add the toasted bread and toss to combine. If you need more liquid for the bread, add more chicken stock 1/4 cup at a time. Remove pan from heat and allow to cool to room temperature
  • Preheat the oven to 350 degrees F.
  • Once the stuffing is cool, wear kitchen rubber gloves to stuff the cavity of the quails with about 1 cup of stuffing per quail. Place the remaining stuffing on the bottom of a roasting pan or large cast-iron skillet. Season the quail with salt and pepper and rest on top of the stuffing. Roast the quail for 15 to 20 minutes or until juices run clear when you pierce the skin. Serve right away.

Although she was raised in Connecticut, she attributes her passion for cooking to spending time with her grandmother in the kitchen and summers at her mother's family farm near Cartersville, Georgia. A longtime proponent of sustainability, Anne prides herself on using locally grown seasonal and organic produce, much of which is from her own garden at the same family farm that inspired her as a child, Summerland, where she now resides. She and her husband, chef Clifford Harrison, operate five of Atlanta's most celebrated restaurants. Her food and style of cooking is grounded in perfectly executed technique and the philosophy of using the best quality basic ingredients to produce something spectacular. This recipe is adapted from her beautiful cookbook, also named Summerland, based on a calendar year at her farm. Quail meat is white and delicately flavored. Wild quail will taste stronger and a bit gamier than farm-raised quail.

1 tablespoon pure olive oil
4 ounces mixed mushrooms (such as white button, cremini, chanterelle, morel, and shiitake), chopped
1 shallot, very finely chopped
Coarse kosher salt and freshly ground black pepper
2 tablespoons bourbon or brandy
8 ounces ground chicken
1 tablespoon chopped fresh herbs, such as parsley, thyme, and chives
8 semiboneless quail (about 4 ounces each, or 2 pounds total)
2 tablespoons unsalted butter, melted

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the mushrooms and shallot and season with salt and pepper. Cook, stirring occasionally, until all the liquid has cooked away and the mushrooms are tender, 5 minutes. Add the bourbon and cook until it has evaporated, 45 to 60 seconds. Transfer to a bowl and refrigerate to cool, 10 minutes. Once cooled, add the ground chicken and herbs. Season with salt and pepper. (To taste and adjust the seasoning, simply zap a teaspoon or so of the mixture in a bowl in the microwave to cook it through. Season with salt and pepper as needed.)
  • Heat the oven to 350 degrees F.
  • Using a tablespoon, stuff the interior of each quail with the mushroom-chicken mixture. Using kitchen twine, tie the legs of each bird together, and then flip the wingtips under the back of each bird to hold the wings in place. Brush the birds with the melted butter, and then season heartily with salt and pepper. Roast, basting occasionally with the melted butter, until the birds are pale golden brown and the interior of the stuffing registers 165 degrees F when measured with an instant-read thermometer, 30 minutes.
  • Switch the oven to broil and place the birds under the broiler to darken the skin, if desired, for 45 to 60 seconds depending on the strength of your broiler. Serve immediately.

GRILLED FILET MIGNON STUFFED WITH FOIE GRAS AND MOREL SAUCE



Grilled Filet Mignon Stuffed with Foie Gras and Morel Sauce image

2 tablespoons butter
2 tablespoons minced shallots
1 pound fresh morel mushrooms, split in half and brushed clean
1 tablespoons minced garlic
2 cups red wine
1 cup veal stock or beef broth
2 tablespoons chopped fresh thyme
Salt and pepper, to taste
4 (8-ounce) filet mignon steaks, cut from the center of beef tender loin
4 (2-ounce) slices foie gras*
Olive oil
Salt and pepper

Steps:

  • To prepare the steaks make an incision in the side of the steak 3/4 of the way through, creating a deep pocket in the middle. Season a piece of foie gras and stuff 1 into each steak. Season the outside of each steak with salt and pepper and coat with olive oil. Grill on each side for about 5 minutes for medium rare.
  • Morel Sauce: In a saucepan on a hot part of the grill cook the shallots in 2 tablespoons of butter until lightly browned. Add the garlic and morels and cook until the mushrooms start to release some of their liquid. Add the wine and cook until the wine is about 75 percent reduced. Add the broth and thyme and boil until broth is 50 percent reduced. Stir in the butter and season. Ladle over each steak.
  • *Fatted duck or goose livers available in specialty food stores.

2 tablespoons brown sugar
1/4 cup balsamic vinegar
5 sliced plums
1 to 1 1/4 pounds foie gras (duck liver)

Steps:

  • Heat saute pan over medium heat add butter and sugar and heat until caramel forms. Add vinegar and plums. Cook until slightly thick. Reserve. Heat pan over high heat, slice foie gras 1/4 inch slices, and season with salt and pepper. Add to pan and cook for 1 1/2 minutes on each side. When cooked, place on a paper towel to drain. Place plums on plates and top with foie gras drizzle caramel around plate and serve.

3 ounces foie gras
16 strips bacon

Steps:

  • Rinse the quails and pat them dry. Use poultry shears or a sharp knife to cut away the feet and any extra neck skin. Season them inside and out with salt and pepper.
  • Preheat the oven to 425 degrees. Cut the foie gras into 8 equal pieces. Place a small amount of each piece into the cavity of each bird, and place the remainder on the breast of each bird. Wrap two strips of bacon tightly around each bird to hold the foie gras in place, securing the bacon with kitchen string or toothpicks if necessary.
  • Place the wrapped quails, breast-side up, on a roasting pan fitted with a rack and roast for 20 minutes, or until the bacon is crispy and the juices from the bird are rosy and no longer red. Remove from the oven, cover with foil and let cool for 5 minutes before serving. Serve with the cranberry relish.

1 lb boneless skinless chicken breast (chilled)
salt
fresh ground white pepper
1 1/2 cups heavy cream, chilled
1 egg white, chilled
1 tablespoon chopped chives
2 tablespoons chopped parsley
8 semi-boneless quail
4 tablespoons butter
4 cups mixed sliced mushrooms (such as crimini, oyster, shiitake, etc)
1 tablespoon minced garlic
3 cups low sodium chicken broth (unsalted or low-sodium)
2 sprigs fresh thyme
3 ounces foie gras, terrine

Steps:

  • Make the poultry mousse.
  • Cut the chicken into small pieces, season well with salt and white pepper, and place in bowl of food processor fitted with a sharp blade.
  • Process the chicken, scraping bowl down as necessary, until it is completely broken down into a homogenous paste, about 2 minutes.
  • Add the egg white and blend to incorporate and loosen paste, about 30 seconds.
  • With processor blade running, slowly pour in the heavy cream.
  • Process until all of the cream is incorporated, the grain of the mousse is very fine, and the mousse is solid enough that a scoop of it will not fall off of a rubber scraper held in the air, about 2 minutes.
  • Transfer to a bowl and fold in chives and 1 tablespoon of the parsley.
  • Preheat oven to 375°F Stuff the body of each quail with some of the chicken mousse.
  • Save remaining mousse for another use (make sure to cover it well with plastic wrap to lessen air exposure).
  • Tie quail legs together with a piece of butcher's twine.
  • Season quails with salt and freshly ground white pepper.
  • Heat 2 tablespoons of the butter in a large skillet set over medium-high heat.
  • Working in two batches so as not to overcrowd the pan, brown quail on both sides, about 3-4 minutes per side.
  • Transfer quail to a baking sheet (do not clean skillet) and place in oven. Cook until firm and done all the way through, 15-20 minutes.
  • Meanwhile, add mushrooms to skillet and cook, stirring frequently, until about three-quarters done, about 5 minutes.
  • Add garlic, season with salt and white pepper, and finish cooking, about 3 minutes more.
  • Mix in remaining tablespoon of chopped parsley, transfer to a bowl, and set aside.
  • Add chicken broth and thyme leaves to skillet and boil until reduced by two-thirds, to about 1 cup in volume, about 15 minutes.
  • Transfer reduced broth to a blender and add foie gras terrine and remaining 2 tablespoons butter.
  • Blend until smooth and frothy.
  • Service:.
  • Remove butcher's twine from quail and discard.
  • Divide mushrooms and quail among warm plates.
  • Spoon foie gras sauce over quail and mushrooms.
