3kg piece of boneless, skin-on pork belly , skin well scored (see tip below)
2 tbsp sea salt
4 garlic cloves
small bunch of thyme , leaves chopped
8 bay leaves
1 tbsp sunflower oil
soft bread rolls , to serve
2 red peppers , deseeded and roughly chopped
4 red chillies , deseeded if you don't like it very hot, tops removed
2 banana shallots , roughly chopped
4 garlic cloves , peeled but left whole
1 ripe tomato , quartered
3 tbsp apple cider vinegar
2 tsp honey

Steps:

  • As soon as you can, season the pork all over with 1 tbsp of the salt. Up to 48 hrs before is perfect but if you don't have time, don't worry. Keep the salted pork covered and chilled.
  • In a mortar with a pestle (or finely chop with a knife) crush the garlic, thyme and bay together to make a paste and mix generously with some more salt and plenty of pepper. Lay the pork skin-side down on a chopping board, score the flesh in a criss-cross pattern all over and massage the herby seasoning into the flesh. Starting from the longest side, roll the belly up as tightly as you can into a joint surrounded by the skin, then use butcher's string to tie the joint tightly at regular 2cm intervals to hold the joint together. If you can do all this the day before, all the better, then leave the joint to cool in the fridge ready to be roasted. This can be prepared up to 48 hrs before or three months before and frozen - defrost completely before cooking.
  • When you're ready to cook, heat oven to 160C/140C fan/gas 3. Place a wire rack or trivet over a large roasting tray and sit the pork on top. Massage or brush the pork skin with the oil and give it a final sprinkling of salt. Roast for 3 hrs, basting with the fat every 30 mins after the first hour.
  • Remove the pork from the oven and turn up the heat to 240/220C fan/gas 9. Pour out most of the fat from the tray and tip in the peppers, chillies, shallots, garlic and tomato. Place the pork back on the wire rack and roast everything for a further 30-40 mins, turning the joint with tongs to expose different parts of the skin to crisp up the crackling and roast the vegetables. When the pork is ready, lift onto a board and rest for 10 mins ready to carve.
  • Scrape all the vegetables and pan juices into a mini chopper or smoothie maker with the vinegar and honey and a pinch of salt. Pulse to a sauce as chunky or smooth as you like. Carve the roast into slices with a serrated knife and serve in buns with the chilli sauce for spreading over.

peanut oil (for frying)
3 red shallots, trimmed and chopped
2 garlic cloves, peeled and chopped
4 -10 dried chilies (bird's eye)
2 pinches salt (large)
1 pinch palm sugar (optional)

Steps:

  • Heat oil in a small saucepan.
  • Deep-fry the shallots and garlic until golden. Remove and drain.
  • Deep-fry the chillies. Remove and drain.
  • Using a mortar and pestle, pound shallots, garlic and chillies into a coarse paste.
  • Season with salt and sugar (if used), and thin with some of the deep-frying oil.
  • The sauce should taste hot and salty.

3 lose cups dried Thai chilies

Steps:

  • Heat a pan over low heat (with no oil), add the dried chilies and stir continuously for about 5-7 minutes or until brown. Once done, the chilies should be a little shiny and darker in color but not blackened.
  • Let the chilies cool completely. Then, grind in a blender or food processor until the desired texture is reached.
  • Store in an airtight container and use within 1-2 months. (Thai chili flakes last longer than a few months but they lose their heat and flavor over time)

I have an abundance of chillis so I want to make a sauce. I'm planning on trying this with other types of chillis as needed, but for now, saving this recipe per how I found it. http://www.taste.com.au/recipes/19696/hot+chilli+sauce Modified per suggestions. Receipe states should last 3 weeks in the fridge, but I'm sure if you sterilised, it would last longer and canning would probably make it last even longer. Prep time includes blending time.

1 cup red birdseye chile, roughly chopped (swap in other chillis depending on your heat preference)
200 g diced tomatoes (canned is fine)
1/4 cup white sugar
1/4 cup white wine vinegar
salt, to taste

Steps:

  • Combine chilli, tomatoes, sugar, salt and vinegar in a saucepan over high heat. Bring to the boil. Reduce heat to medium. Simmer, stirring occasionally, for 7 minutes or until sauce thickens slightly. Remove from heat. Stand for 5 minutes.
  • Process mixture, in batches, until smooth. Pour into hot sterilized jars. Secure lids. Refrigerate for up to 3 weeks.

Nahm prik pao is traditionally made by roasting the chilies, shallots, and garlic over coal in charcoal stoves. At home, the ingredients are best grilled over a charcoal fire, but they may also be oven roasted, or cooked in a heavy skillet. Use in Tom Yum soup or anywhere you'd like a kick of smoky, chili pepper heat.

1/2 cup small dried red chilies such as chiles de arbol, stemmed halved crosswise and loosely packed (about 32) or 1/2 cup chile, japones stemmed halved crosswise and loosely packed (about 32)
1/2 cup shallot, unpeeled, cut into chunks, about 3 ounces
1/4 cup garlic clove, unpeeled (8 - 10 cloves)
1/2 cup vegetable oil
3 tablespoons palm sugar or 3 tablespoons brown sugar
3 tablespoons tamarind juice
1 tablespoon soy sauce
1 teaspoon salt

Steps:

  • In a wok or a small, heavy skillet, dry fry the chilies over med-low heat until the darken and become fragrant and brittle, 3-5 minutes. Remove and transfer to a plate to cool.
  • Increase the heat to medium and dry fry the shallots and garlic, turning them occasionally, until they are softened, wilted, and blistered.
  • Stem the chilies and discard most of the seeds. Crumble the chilies into small pieces. Trim the shallots and garlic, discarding the peel and root ends, and chop coarsely. Combine the chilies, shallots, and garlic in a mini-processor or blender and pulse to a coarse paste. Add 1/4 cup of the oil and grind to a fairly smooth paste. Transfer to a small bowl and set aside.
  • Pour the remaining 1/4 cup oil into the wok or a skillet. Place over medium heat until a bit of the paste added to the pan sizzles at once, about 1 minute. Add the ground chili paste and cook, stirring occasionally, until the paste gradually darkens and releases a rich fragrance, about 5 minutes. Remove from the heat and set aside to cool to room temperature.
  • Combine the sugar, tamarind, soy sauce, and salt in a small bowl and stir well. Add this mixture to the cooked chili paste and stir to combine. The paste will be quite oily, and must be well stirred before each use. Transfer to a jar, cap tightly, and refrigerate for up to one month. Use at room temp in recipes or as a condiment.
