BUTTERMILK-BRINED CHICKEN WITH CRESS AND BREAD SALAD

Buttermilk-Brined Chicken with Cress and Bread Salad image

Provided by Alison Roman

Categories     Chicken     Roast     Easter     Dinner     Spring     Watercress     Bon Appétit     Peanut Free     Tree Nut Free     Soy Free

Yield Makes 6 to 8 servings

Number Of Ingredients 13

2 1/2 lemons
2 quarts buttermilk
4 garlic cloves, crushed
2 tablespoons kosher salt plus more
2 3 1/2- to 4-pound chickens
1 bunch fresh marjoram
1/4 cup (1/2 stick) unsalted butter, room temperature
Freshly ground black pepper
1 small shallot, finely chopped
1/2 cup olive oil
1/3 cup Champagne or white wine vinegar
1 loaf country-style bread or ciabatta, crust removed, torn into 1 1/2" pieces (about 8 cups)
2 bunches watercress, thick stems trimmed (about 8 cups)

Steps:

  • Thinly slice 1 lemon. Whisk buttermilk, garlic, and 2 tablespoons salt in a medium bowl. Divide buttermilk mixture and lemon slices between 2 large resealable plastic bags. Place 1 chicken in each bag and seal, pressing out any excess air. Refrigerate, turning occasionally, at least 8 hours and up to 1 day.
  • Preheat oven to 425°F. Remove chickens from marinade, rinse with cold water, and pat dry. Thinly slice half of a lemon; cut remaining whole lemon in half. Place chickens on a wire rack set inside a large rimmed baking sheet; stuff each with 1/2 bunch of marjoram and a lemon half. Working from neck end of chicken, gently loosen skin from chicken breasts. Place several lemon slices under skin of each breast. Rub chickens with butter; season with salt and pepper. Tie legs with kitchen twine and tuck wing tips under chicken.
  • Roast chickens until they begin to brown, 30-35 minutes. Reduce oven temperature to 350°F and roast until chickens are cooked through and a thermometer inserted into the thickest part of the thigh registers 165°F, 20-25 minutes longer. Transfer chickens to a platter, tent with foil, and let rest while preparing bread salad. Keep oven on.
  • Carefully pour chicken roasting juices from baking sheet into a large bowl (set baking sheet aside). Whisk shallot, oil, and vinegar into juices in bowl; season vinaigrette with salt and pepper.
  • Pour half of vinaigrette into a small bowl; set aside. Add bread to vinaigrette in large bowl and toss, pressing gently to help bread absorb vinaigrette.
  • Transfer bread to reserved baking sheet and toast, tossing occasionally, until bread is golden brown but still soft in the center, 10-15 minutes (set bowl aside).
  • Place warm bread in reserved bowl. Add watercress and reserved vinaigrette; season with salt and pepper and toss to combine. Arrange salad on a platter and place chickens on top.

Provided by Food Network

Yield 6 servings

Number Of Ingredients 14

3 tablespoons Balsamic vinegar
1/3 cup extra virgin olive oil
1/2 teaspoon salt.
1/4 teaspoon ground black pepper
1 medium (2 cups sliced) red onion, peeled, sliced into 1/2 moons
1 tablespoon extra virgin olive oil
1 fresh minced clove
3 or 4 slices rustic bread, day old works great!
4 cups loosely packed arugula, washed and dried
1 cup fennel bulb, cored and thinly sliced
1/3 cup roasted bell pepper, 1/4 inch thick strips
1/4 cup pinenuts, toasted
1 1/2 cups seedless green or red grapes, picked from stem and rinsed
1/4 cup parmesan cheese, shaved or grated

Steps:

  • In a small bowl whisk together dressing ingredients.
  • Place red onions in baking dish lined with foil. Drizzle with 2 tablespoons of prepared dressing and toss well. Cover tightly with foil and bake at 350 degrees F for 30 minutes. Remove from oven and let cool.
  • Mix 1 tablespoon of olive oil with crushed garlic. Brush onto bread slices. Broil or grill bread for 1-2 minutes on each side until toasted. Cut bread into strips about 1/2 inch wide. Place bread, roasted onions, arugula, fennel, bell pepper, pinenuts and grapes in large bowl, and toss with remaining vinaigrette. Sprinkle with Parmesan and serve.

CHICKEN MILANESE WITH SLOW-ROASTED CHERRY TOMATOES AND ARUGULA

Chicken Milanese With Slow-Roasted Cherry Tomatoes and Arugula image

This recipe, from Gwyneth Paltrow, is a very basic and yummy chicken milanese, which is made special with the addition of the roasted cherry tomatoes and arugula salad. Arugula is like a super food. It's so healthy for you! The chicken couldn't be easier and the salad topping is such a nice complement. Simple and satisfying!

Provided by LifeIsGood

Categories     One Dish Meal

Time 1h20m

Yield 4 serving(s)

Number Of Ingredients 12

4 boneless skinless chicken breasts
1 cup milk
2 cups breadcrumbs, plain. (I prefer to use Panko)
1 teaspoon kosher salt
1 teaspoon fresh ground black pepper
1/2 teaspoon dried oregano
1/2 cup extra virgin olive oil
2 cups cherry tomatoes
2 tablespoons extra virgin olive oil, divided
coarse salt, to taste
5 ounces arugula (or about 6 cups)
1 tablespoon balsamic vinegar, high quality if possible

Steps:

  • To make the Slow Roasted Cherry Tomatoes & Arugula:.
  • Preheat the oven to 400 degrees F.
  • Put the tomatoes on a rimmed cookie sheet and drizzle with 1 tablespoon of the olive oil and a pinch of salt. Roast for about 30 minutes (depending on your oven, they may be done in as little as 20 minute or as long as 40 min.), stirring occasionally, until the tomatoes are split and blistered. Which means they are super sweet.
  • While the chicken is cooking, toss the arugula with the remaining tablespoon of olive oil, the vinegar and pinch of salt. Fold the tomatoes into the arugula.
  • Chicken:.
  • Put the chicken breasts in between two sheets of wax paper and pound them with a mallet, until they are very, very thin - you should be able to almost see through them - about 1/6 inch thick.
  • Mix the oregano, salt and pepper into the bread crumbs or panko and set on a plate.
  • Put the milk into a shallow bowl.
  • Dip each chicken piece into the milk and then dredge in the bread crumbs. You should have a thin, even coating.
  • Heat 1/4 cup of olive oil in a large nonstick skillet. Cook the chicken for about 4 minutes on the first side, or until evenly browned and crisp. Flip and cook for another 2-3 minutes or until the other side is browned and crisp and the chicken is firm to the touch.
  • Place a piece of chicken on each plate and mound a handful of the arugula mix over each piece.

WARM ROAST CHICKEN BREAST AND BREAD SALAD WITH ARUGULA

Warm Roast Chicken Breast and Bread Salad With Arugula image

Adapted from Cook's Illustrated, this simple dinner sidesteps the issue of doing a whole roast chicken and gets a satisfying dinner on the table quick.

Provided by Mr. Capers

Categories     Chicken

Time 1h10m

Yield 4 serving(s)

Number Of Ingredients 12

4 cups French bread, cut or torn into 1 inch cubes, (about 6 ounces)
3 tablespoons olive oil
salt & freshly ground black pepper
4 chicken breast halves, bone-in, skin-on (at least 10 oz. each)
1 teaspoon minced fresh garlic, (about 1 medium clove)
1/2 teaspoon thyme leaves, minced fresh, or 1/4 tsp. dried
2/3 cup chicken broth, (low sodium)
1 tablespoon red wine vinegar or 1 tablespoon sherry wine vinegar
4 ounces baby arugula (baby mustard is great, about 7 cups, lightly packed) or 4 ounces other strong greens (baby mustard is great, about 7 cups, lightly packed)
1 medium tomatoes, core, medium chop (seed if you wish)
1 tablespoon toasted pine nuts
shaved parmesan cheese (to serve)

Steps:

  • Place oven rack at lowest level and preheat oven to 450.
  • Toss bread cubes with 1 tablespoon of the oil, 1/4 teaspoon salt and pepper to taste. Place bread in 8 inch baking dish and set aside.
  • Dry chicken with paper towels and season with salt and pepper.
  • Heat 1 tablespoon of the oil until hot. Place chicken in skillet, skin side down, and saute until skin is deep golden color, about 5 minutes.
  • Place chicken, skin side up, on bread cubes in baking dish and bake until the thickest part of the breast is 160-165 degrees and the bread is spotty brown, about 18 to 20 minutes. Take care, don't overcook the breasts!
  • Transfer chicken to cutting board. When chicken is cool enough, take meat off bones and cut into pieces similar in size to bread cubes. Throw away the bones.
  • While chicken is baking, pour off fat in skillet, add the last tablespoon of oil, the garlic and thyme, and cook for a moment until the garlic is fragrant. Add broth and scrape up any brown bits from skillet. Cook until thickened slightly, stir in vinegar, cover, and take off the heat.
  • Toss bread cubes in a bowl with most of dressing mixture in skillet - reserve 2 tablespoons - add chicken and any juices from it. Then add arugula, tomato, pine nuts and the remaining dressing. Season with salt and pepper to taste - remember, the cheese will add some salty taste. Toss a final time. Garnish with Parmesan shavings and serve.
  • (To gild the lilly a bit, you can add what Lydia Bastianich calls a final "blessing" of extra virgin olive oil. Or, put that on the table. Some will find it fine without.).
  • Enjoy!

Yield Serves 4

Number Of Ingredients 7

8 cups 1-inch cubes country-style white bread (from about 12 ounces)
1 7-pound whole roasting chicken, neck and giblets discarded
1/2 cup canned low-salt chicken broth
1/3 cup white wine vinegar
3/4 cup thinly sliced green onions
1/2 cup dried currants
3 bunches fresh arugula, trimmed, halved crosswise (about 2 cups)

Steps:

  • Preheat oven to 400°F. Place bread on large baking sheet. Bake until bread is lightly toasted, about 6 minutes. Set aside. Maintain oven temperature.
  • Rinse chicken inside and out; pat dry. Sprinkle inside and out with salt and pepper. Place breast side up on rack in heavy large roasting pan. Tie legs together to hold shape. • Pour pan juices into 4-cup measuring cup (do not clean pan). Spoon fat off top of pan juices, returning 2 tablespoons fat to pan. Add pan juices, canned chicken broth and vinegar to pan. Season with salt and pepper. Serve with chicken.

Provided by Ina Garten

Categories     main-dish

Time P1DT1h40m

Yield 4 servings

Number Of Ingredients 17

1 (4- to 4 1/2-pound) whole chicken, preferably Bell & Evans
4 sprigs fresh thyme
2 large garlic cloves, smashed flat
1 lemon, quartered
2 teaspoons fine sea salt, plus extra for serving
1/2 teaspoon freshly ground black pepper
3 to 4 (3/4-inch-thick) slices country bread
Good olive oil
Arugula Salad, recipe follows
1/4 cup Champagne vinegar
1 teaspoon Dijon mustard
1 teaspoon minced garlic
Kosher salt and freshly ground black pepper
1/2 cup good olive oil
1/2 cup thinly sliced scallions, white and green parts (3 scallions)
2 tablespoons dried currants
6 cups baby arugula, lightly packed (6 to 8 ounces)

Steps:

  • Place the chicken in a baking dish. Using your fingers, gently loosen the skin from the breasts and thighs without breaking the skin. Carefully slide the sprigs of thyme and the garlic under the skin. Put the lemon in the cavity. Tie the legs together and tuck the wings under the body. Sprinkle with 2 teaspoons of sea salt and the pepper, cover the dish tightly with plastic wrap, and refrigerate for 24 to 48 hours.
  • Preheat the oven to 500 degrees F. (Be sure your oven is very clean!) Place the bread in a medium (10-inch) cast-iron skillet in a single layer. Brush the chicken with olive oil and place it, breast side up, on top of the bread. Roast for 30 minutes, turn it over and roast for 15 minutes, until the juices run clear when you cut between the leg and the thigh. Wrap the skillet tightly with aluminum foil and allow the chicken to rest at room temperature for a full 30 minutes. (Don¿t worry; it will stay hot.) The bread will be almost burnt on the bottom and soft with the pan drippings on top.
  • Place the Arugula Salad in a very large, shallow serving platter. Put the chicken and the bread on a cutting board. Cut the bread into 1-inch squares and sprinkle them on the salad. Carve the chicken thickly (see note) and place it on top of the salad. Spoon the pan juices over the chicken, sprinkle it with sea salt, and serve warm.
  • Whisk the vinegar, mustard, garlic, 1 teaspoon salt, and 1/2 teaspoon pepper together in a small bowl or glass measuring cup. Whisk in the olive oil, stir in the scallions and currants, and set aside.
  • Place the arugula in a large bowl, add the vinaigrette, and toss well.

  • Remove and discard the lump of fat inside the chicken. Rinse the chicken and pat very dry inside and out. Be thorough -- a wet chicken will spend too much time steaming before it begins to turn golden brown.
  • Approaching from the edge of the cavity, slide a finger under the skin of each of the breasts, making 2 little pockets. Now use the tip of your finger to gently loosen a pocket of skin on the outside of the thickest section of each thigh. Using your finger, shove an herb sprig into each of the 4 pockets.
  • Season the chicken liberally all over with salt and pepper, allowing about three-fourths teaspoon of sea salt per pound of chicken. Season the thick sections a little more heavily than the skinny ankles and wings. Sprinkle a little of the salt just inside the cavity, on the backbone, but otherwise don't worry about seasoning the inside. Twist and tuck the wing tips behind the shoulders. Cover loosely and refrigerate for 1 to 3 days.
  • When ready to cook, heat the oven to 475 degrees. (Depending on the size, efficiency and accuracy of your oven and the size of your bird, you may need to adjust the heat to as high as 500 degrees or as low as 450 degrees during the course of roasting the chicken to get it to brown properly.)
