MASALA-SPICED ROAST CHICKEN
Masala powder flavors the meat all the way down to the breast, and garlic roasts to succulence under the skin.

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- Place chicken upright on a rack in a roasting pan. Cut 10 slits in the skin using a sharp knife, pull the skin away from the meat; slip a garlic clove into each slit. Rub the masala powder over the whole chicken. Squeeze the juice of the lime over the chicken, turn the chicken breast side down in the roasting pan, and place the rind in the chicken cavity.
- Roast the chicken in the preheated oven for 20 minutes. Lower the oven to 350 degrees F (175 degrees C), and bake until no longer pink at the bone and the juices run clear, about 45 more minutes. An instant-read thermometer inserted into the thickest part of the thigh should read 180 degrees F (82 degrees C). Remove the chicken from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing.

GARAM MASALA CHICKEN WITH ROASTED VEGETABLES

- In a small bowl, mix together 1/4 cup oil, garam masala, ginger, garlic, and 1 tablespoon salt. Place chicken in a large baking dish or plastic bag, loosen the skin from the breast and legs of the chicken and, using your hands, spread a good part of the mixture underneath. Rub the remaining mixture inside the chicken cavity and over the skin. Tie the legs together with kitchen twine. Loosely cover, refrigerate, and let marinate 30 minutes or up to 12 hours.
- Arrange the rack in the center of the oven and heat oven to 400 degrees F.
- Remove chicken from marinade, let any excess drip off, and reserve marinade. Let chicken sit at room temperature while oven warms up, about 30 minutes.
- When the oven is heated, place potatoes, squash, and onions in bottom of a roasting pan, drizzle with any remaining marinade, remaining 1/4 cup oil, remaining 1 tablespoon salt, and season well freshly ground black pepper. Toss to coat. Place chicken, breast side up, on top of vegetables and roast until skin becomes brown and vegetables are starting to get tender, about 1 hour. Brush yogurt on chicken and continue roasting until chicken is well browned, juices run clear when inner thigh is pierced with a knife, legs move easily in the joint, and a meat thermometer inserted into the thickest portion of the thigh registers160 to 165 degrees F on an instant-read thermometer, about another 40 to 50 minutes. Let chicken rest at least 10 to 15 minutes before serving.
ROAST CHICKEN MASALA

Steps:
- Clean chicken thighs, removing excess fat.
- Rub with salt and turmeric powder and set aside.
- Heat oil in wok and add curry leaves, cumin and fennel seeds and fry till brown, shaking the pan vigorously to prevent burning.
- (browning the spice brings the flavour and smell out of the spices) Add bay leaves, and onions and saute till the onions are light brown.
- Add the ginger and garlic purees and cook, stirring for 1 minute.
- Add the tomatoes and continue to cook until almost dry.
- Mix the coriander and chilli powders with a little water to make a paste and add it to wok.
- Cook, stirring for 1 minute, then push the fried paste to the side of wok.
- Lay chicken thighs in the pan skin-side down and spread the paste all over them, rubbing it in well.
- Cover, reduce the heat and allow the chicken pieces to brown on the skin side.
- Add 2 tablespoon of water to create steam and cailitate the cooking.
- Turn chicken thighs over and continue cooking for 15 minutes or until done.
- To test if cooked, pierce the thickest part of one thigh with a metal skewer; if liquid runs clear, the chicken is ready.
- Add fresh coriander and mint leaves, cover the pan and remove from the heat ready for serve.

ROASTED CHICKEN MARSALA
This recipe cooks in the oven rather than sauteeing. Basically just pop it in and let the oven do the work.

Steps:
- Preheat oven to 425.
- Place chicken in roasting pan and sprinkle with 1/2 tsp salt and 1/2 tsp Italian seasoning.
- In a separate bowl toss mushrooms, red peppers and onion with remaining salt and Italian Seasoning.
- Arrange vegetables around chicken in roasting pan.
- Pour Marsala wine into the pan.
- Roast chicken approximately 50 minutes until no longer pink inside.
- Remove chicken and vegetables from pan.
- In a bowl mix flour with 1/4 cup of water.
- Place pan juices into pot and cook over medium high heat.
- Whisk in flour mixture and cook until thickened.
- Pour over chicken and serve.

- Using a sharp knife, make two deep, diagonal cuts into each breast of the chicken, going all the way down to the bone. Make two equally deep slashes in the thighs and two in the drumsticks as well.
- Place the chicken, breast side up, on a roasting tray lined with enough foil to cover the bird completely.
- Pour the marinade paste over the chicken, rubbing it well into all the cuts. Set aside for 30 minutes.
- Sprinkle the chilli powder and black pepper over the chicken evenly. Wrap up the chicken in the foil so it is completely covered, with the tightly closed seam at the top.
- Unwrap, without letting the juices run out, and cook, uncovered, for 15 minutes, basting two or three times with the juices.
- Check the chicken is cooked by inserting a skewer into the thickest part of the thigh, between the leg and the body. If the juices run clear with no trace of pink, it is cooked.
