HORSERADISH SAUCE FOR ROAST BEEF
This pungent yet cool and creamy horseradish sauce wakes up the palate, making it perfect to serve with a roasted prime rib.

Steps:
- Gather the ingredients.
- Add the sour cream, mustard, prepared horseradish, chives, salt, and pepper into a mixing bowl. Stir well.
- Cover and refrigerate for at least 2 hours to let the flavors come together.
- About 15 minutes before you want to serve it, take it out of the fridge and let it sit at room temperature so it isn't ice-cold. Stir before serving.

HERB-CRUSTED ROAST BEEF WITH HORSERADISH CREAM

Steps:
- Special Equipment: food processor
- Preheat oven to 350 degrees F.
- Season roast well with salt and pepper. In a medium saute pan over medium-high heat, add 2 tablespoons oil. When hot, sear roast on all sides, until nicely caramelized, about 8 to 10 minutes. Remove roast to a sheet tray lined with a wire rack.
- Meanwhile, place garlic, parsley, thyme, oregano, rosemary, mustard powder, 1/2 cup oil, salt and pepper, to taste, in a food processor and pulse until mixture forms a paste.
- Rub paste all over roast. Bake in the oven until the roast is cooked to medium-rare or registers 125 degrees F on an instant-read thermometer, about 45 minutes.
- Let roast rest 10 minutes before slicing and serve with Horseradish Cream.
- Horseradish Cream:
- In a small bowl, mix together all ingredients. Cover and refrigerate until ready to serve.
- Yield: 1/2 cup
BEEF AND HORSERADISH SAUCE SANDWICH
Steps:
- Preheat the oven to 500 degrees F.
- Place the beef on a baking sheet and pat the outside dry with a paper towel. Mix the unsalted butter and mustard together in a small bowl and spread the mixture over the beef with your hands. Sprinkle evenly with the salt and pepper. Roast in the oven for exactly 22 minutes for rare and 25 minutes for medium-rare.
- Remove the beef from the oven, cover it tightly with aluminum foil, and allow it to rest at room temperature for 20 minutes. Remove the strings and slice the fillet thickly.
- To make the sandwiches, cut the bread into 1/4-inch thick slices. Spread 4 of the slices thickly with the Mustard Horseradish Sauce. Top with slices of beef and arugula and sprinkle with salt and pepper. Spread 4 more slices of bread very lightly with butter and place, butter side down, on top of the beef.
- Whisk together the mayonnaise, mustards, horseradish, sour cream, and a pinch of salt in a small bowl. Serve at room temperature.
- Yield: 1 cup
ROAST BEEF WITH HORSERADISH SAUCE

- Heat oven to 325°F.
- Beat whipping cream with mixer on high speed until soft peaks form. Mix steak sauce, onions and horseradish in medium bowl. Add whipped cream; stir gently until well blended. Cover. Refrigerate until ready to use.
- Place meat in roasting pan.
- Bake 45 min. to 1 hour 15 min. or until done (160°F). Cut meat into thin slices. Serve with horseradish sauce.

I make a batch of these roll-ups on Sunday and give them to the hubby and kids in their lunches throughout the week. They are also great to put out for parties!

- Beat the cream cheese, horseradish, and mustard together in a bowl until well blended.
- Spread a thin layer of the cream cheese mixture over each tortilla. Arrange spinach leaves evenly over the tortillas. Place two slices of roast beef over the cream cheese. Sprinkle with Cheddar cheese, dividing evenly between tortillas. Starting at one end, gently roll up each tortilla into a tight tube. Wrap with aluminum foil or plastic wrap to keep the rolls tight. Refrigerate at least 4 hours.
- To serve for lunch, unwrap and slice into 2 or 3 pieces. Only cut the rolls you will be using that day so the others do not dry out. To serve for parties, unwrap and slice the rolls diagonally into 1 inch sections, and arrange on a serving platter.

- Place roast in a 6-qt. slow cooker; sprinkle with salt and pepper. Top roast with onions. In a small bowl, combine next five ingredients; pour over roast and onions. Cook, covered, on low until meat is tender, 7-8 hours. , Remove roast; cool slightly and shred with two forks. Skim fat from cooking juices. Steps:
- Rub halves of roast all over with herb rub, then coat them with cooking spray.
- Heat a nonstick skillet over medium high heat and brown roast halves on all sides; remove roast halves to a 3 1/2-qt crock pot.
- Add broth to the skillet and heat, stirring to scrape up any browned bit sticking to the pan; pour over beef.
- Cover crock pot and cook on high setting 1 hour.
- Turn to low setting and cook 6-8 hours more.
- Remove roasts from pot, let stand 15 minutes, then slice thinly across the grain diagonally.
- Spoon pan juices over beef slices.
- Pass around Horseradish Sauce to spoon over beef.

- Preheat the oven to 375°. Set a rack in a large, deep roasting pan and place the beef roast on the rack.
- In a small bowl, blend the horseradish with the salt, Dijon mustard, chopped parsley, ground pepper, sugar and sherry vinegar to form a paste. Slather the paste all over the top and sides of the meat. Roast in the lower third of the oven for about 2 hours, until an instant-read thermometer inserted in the center of the roast registers 125°. Transfer the roast to a cutting board and let rest for at least 20 minutes.
- Discard the string and thinly slice the roast beef across the grain. Transfer the meat to a platter and serve.
