ROTEL SAUSAGE CREAM CHEESE DIP

Steps:
- Brown sausage in a large skillet over medium-high heat, breaking it up into small pieces as it's cooking. Drain off any excess oil, as necessary.
- Reduce heat to medium-low and dump in 2 cans of Rotel.
- Add the cubed cream cheese and cook over medium-low heat, stirring frequently until the cream cheese melts and everything is fully combined.
- Serve warm with thick restaurant-style tortilla chips.
- Brown the sausage in a large skillet over medium heat, breaking it up into small pieces as it's cooking. Drain off any excess oil.
- Transfer the browned sausage to your crockpot insert, and dump in 2 cans of Rotel.
- Add the cubed cream cheese and cover. Choose your desired heat setting depending on when you want to serve your dip. Heat stirring occasionally until fully combined, about one hour on low heat. Turn heat down to "keep warm".
- Serve warm with thick restaurant-style tortilla chips.

CREAM CHEESE ROTEL DIP
This is the best and easiest dip EVER!! I take this dip to parties all the time. EASY EASY EASY...and it follows my simple rule of recipes...."Does it have cream cheese in it?" Yes....okay...this has to be a good recipe!! Haha! :)

Steps:
- Cut blocks of cream cheese into cubes and put in small crock pot.
- Pour can of rotel (do not drain) over cream cheese.
- Set crock pot to low and heat through. Stir often, it will burn. Once the cream cheese is really soft stir well. I use a whisk or hand blender to get the ingredients to combine better. You don't want it to be lumpy.
- This dip will stay in the crockpot for just a couple of hours before it will start to burn and just turn gross. Make sure you turn the crockpot off after about 2 hours.
- Serve with Tortilla Chips! Enjoy! :).
CREAM CHEESE ROTEL DIP
This recipe was brought to my grandmothers for our Christmas Eve dinner as an appetizer. The bowl was cleaned and everyone wanted the recipe. It's quick and easy and offers a twist on the original velveeta rotel dip. Dip with tortilla chips or fritos. You will love this dip!!!

- Brown sausage in large frying pan, drain and return to pan.
- Add 3 packages of cream cheese to the sausage.
- Drain about half of the liquid off the rotel tomatoes (actually pouring the rotels into a strainer will drain off too much of the liquid, just drain with lid on can).
- Add the rotel tomatoes to the cream cheese and saugage and melt all ingredients together until well blended.
- Can be served in a crock pot to stay hot.

Steps:
- Mash the Ro-Tel into softened cream cheese, mixing well. It will look curdy at first but keep mixing.
- Chill for at least 2 hours; overnight is best. Serve with tortilla chips. This dip may be served hot, if desired.
- This dip can be made 2-3 days ahead of time.
