SIMPLE HOMEMADE CHOCOLATE SAUCE

Number Of Ingredients 5

1/2 cup unsweetened cocoa powder
1 cup sugar
1/8 teaspoon kosher salt
1/2 cup cold water
1 1/2 teaspoons vanilla

Steps:

  • In a cold saucepan, whisk together the cocoa and the sugar until all lumps are removed. Add the salt and the water and bring to a boil over medium to medium high heat.
  • Reduce to a simmer; stirring constantly. Simmer for about 30 seconds and then remove from heat. Let cool and then add vanilla. Pour into a glass jar and refrigerate until needed. Enjoy!

50g good-quality dark chocolate (use at least 70% cocoa solids)
25g butter
125ml double cream
1 tbsp caster sugar
1 tbsp Disaronno liqueur (optional)

Steps:

  • Melt the chocolate in a bowl over a pan of barely simmering water until completely smooth (see step-by-step).
  • Heat all of the remaining ingredients in a small saucepan until evenly combined. Remove from the heat and stir through the melted chocolate. Serve warm over chocolate pudding, vanilla ice cream or both!

  • In a small heavy saucepan, combine all ingredients. Bring to a boil over medium heat, stirring constantly. Boil and stir 2 minutes., Store in airtight containers in the refrigerator. Warm gently before serving.

¾ cup white sugar
1 ½ tablespoons all-purpose flour
½ cup unsweetened cocoa powder
1 ¼ cups milk
2 tablespoons butter
½ teaspoon vanilla extract, or more to taste
1 tiny pinch salt

Steps:

  • Place sugar, flour, and cocoa powder into a bowl. Whisk together to remove lumps.
  • Heat milk, butter, and vanilla extract in a saucepan over medium heat until butter melts.
  • Whisk dry ingredients into the milk mixture a little at a time. Increase heat to medium-high until mixture comes to a simmer. Cook, stirring constantly, for 6 minutes. After 6 minutes, turn off heat. Whisk in a pinch of salt.
  • Pour hot over ice cream or store in airtight containers in the refrigerator.

This works with any type of chocolate really, but for the sake of the recipe I'll specify white. I make this all the time as a last minute sauce for my fiance, who likes chocolate on everything. It takes minutes to make and is really yummy (but not very healthy!) Great over fruit, ice cream and pretty much any pudding in general. I'm afraid I eyeball this so amounts are approximate.

100 g white chocolate
50 g double cream

Steps:

  • Break chocolate up into pieces and place in a microwaveable dish. Melt in a microwave on high power in 30 second bursts (for 100g of chocolate I'd say it usually takes me a couple of minutes or so at least, but it'll no doubt depend on the power of your microwave, etc. so you need to keep a close eye on it).
  • When chocolate it melted, remove from microwave and add cream.
  • Mix well. Initially you'll feel like you've added too much cream and that it'll never mix together but some weird molecular thing will then happen and suddenly the whole thing will thicken and smooth out.
  • Serve immediately. Yummy, yummy.

8 ounces semisweet chocolate, such as Valrhona Equatoriale, finely chopped
1 cup heavy cream
1/2 cup light corn syrup

Steps:

  • Place the chocolate in a metal bowl.
  • Combine the cream and corn syrup in a small heavy nonreactive saucepan and bring to a simmer. Pour the liquid over the chocolate and allow it to sit for 3 to 4 minutes, or until the chocolate has melted. Whisk to combine. Allow the sauce to cool slightly, then pour into a bowl or other container. (Stored in the refrigerator, tightly covered, the sauce will keep for up to 2 weeks.)
  • To serve, warm the sauce gently in the top of a double boiler or in the microwave.
