A three-ingredient ricotta dessert that you quickly blend by hand or in your food processor.

1 cup whole milk ricotta cheese ((half of a 15 oz container))
2 tablespoons honey (or a sugar-free sweetener (see note))
1/2 teaspoon pure vanilla extract

Steps:

  • Place the ingredients in your food processor bowl.
  • Process until very smooth, about 2 minutes.
  • Refrigerate for one hour before serving.
  • Serve in small, 1/3-cup dessert bowls or ramekins.

Spring Pea and Ricotta Crostini with Fava Beans image

"When fava beans are in season, there's nothing like them. Pairing favas with creamy, cheesy peas makes for a yummy bite," says Anne.

Kosher salt
1 1/2 cups shelled English peas
1 cup shelled fava beans
1 cup ricotta cheese
1/4 cup freshly grated parmigiano, plus more shaved for topping
1 tablespoon extra-virgin olive oil, plus more for brushing and drizzling
2 tablespoons chopped fresh mint
1/2 teaspoon grated lemon zest
1 baguette, sliced 1/4 inch thick
Flaky sea salt, for topping

Steps:

  • Bring a medium pot of well-salted water to a boil and set up a bowl of well-salted ice water. Drop the peas in the boiling water, let the water return to a boil and cook the peas for 2 minutes. Scoop the peas out of the water and plunge them immediately into the ice water. When the peas are cool, remove them from the ice water and reserve. Repeat this process with the fava beans. When the favas are cool, peel off the tough outer layer and reserve the beans.
  • In a food processor, pulse the peas to make a coarse paste. In a large bowl, combine the pea paste, ricotta and parmigiano; mix well, season with kosher salt (about 1/2 teaspoon) and taste to make sure it's delicious. In a separate bowl, toss the favas with the olive oil, mint, lemon zest and a pinch of kosher salt. Set aside.
  • Heat a grill pan over medium-high heat. Brush both sides of the bread slices with olive oil and grill, flipping, until lightly charred, 30 seconds to 1 minute.
  • Spread about 1 tablespoon of the pea-ricotta mixture onto each crostini. Top with the favas, a final shaving of parmigiano, a drizzle of olive oil and a pinch of sea salt.

RICOTTA BEIGNETS

I love yeast-risen doughnuts, but I adore this beignet recipe, which takes you from zero to doughnuts in 45 minutes or less. This batter is simple to whip up and it cooks fast. When I make these for a houseful of guests, the aroma is enough to wake everyone up. The beignets disappear just as quickly as they appeared, accompanied by sighs of satisfaction.

489 grams (2 cups) ricotta cheese (whole-milk is best), at room temperature
170 grams (3 large) eggs, at room temperature
27 grams (1 large) egg yolk, at room temperature
66 grams (1/3 cup) granulated sugar
1/2 vanilla bean, split lengthwise
6 grams (1 tablespoon) finely grated orange zest
210 grams (1 3/4 cups) all-purpose flour
12 grams (1 tablespoon) baking powder
1 gram (1/4 teaspoon) fine sea salt
About 967 grams (4 cups) vegetable oil for deep-frying
Powdered sugar, for finishing

Steps:

  • Cover a baking sheet with several layers of paper towels.
  • In a large bowl, whisk the ricotta to loosen it slightly. Add the eggs and egg yolk and whisk to combine. Add the granulated sugar and orange zest and whisk to combine. Scrape the seeds from the vanilla bean and add the seeds to the bowl (use the pod for vanilla sugar; see Chef's Notes) and whisk to combine. Add the flour, baking powder, and salt and whisk just to combine--do not overmix. The batter can be used immediately or refrigerated overnight (see Chef's Notes).
  • In a medium pot, heat about 4 inches of oil over medium heat. You can either attach a deep-fry or candy thermometer to the pot and heat until it reads around 325 degrees F (162 degrees C) or just use a little bit of batter to test the oil temperature: If the batter immediately sizzles and rises to the surface, the oil is ready; if the batter begins to brown immediately, the oil is too hot--remove it from the heat and let it cool somewhat, then try the test again.
  • Working in batches so you don't overcrowd the pot, drop tablespoons of dough (I use a No. 60 or 1-tablespoon scoop, but you can just wing it) into the hot oil and fry, turning occasionally, until the beignets are golden brown on both sides, 3 to 4 minutes. Use a slotted spoon or a spider to lift the beignets out of the oil and set them on the paper towels to drain.
  • Transfer the warm beignets to a serving platter. Sift powdered sugar generously over them and serve immediately.

Butter, for greasing the muffin cups
1 (15-ounce) container whole milk ricotta cheese, at room temperature
1/2 cup mascarpone cheese, at room temperature
3 eggs, at room temperature
1/4 cup heavy cream
1/4 cup maple syrup
3 tablespoons sugar
1/8 teaspoon fine sea salt
1 vanilla bean
2 cups fresh, or frozen and thawed, cranberries
1/2 cup water
1 large orange, zested and juiced
1/2 cup sugar, plus extra, as needed

Steps:

  • For the puddings: Arrange an oven rack in the center of the oven and preheat the oven to 350 degrees F.
  • Butter 10 nonstick muffin cups and line the bottom of each cup with a disk of parchment paper. Set aside.
  • In a blender, combine the ricotta cheese, mascarpone cheese, eggs, heavy cream, maple syrup, sugar, and salt. Using a paring knife, split the vanilla bean in half and scrape the seeds into the blender. (Reserve the seeded vanilla pod for the sauce.) Blend the mixture until smooth. Pour the batter into the prepared muffin cups. Bake for 35 to 40 minutes until puffed and lightly browned. Remove the muffin cups from the oven to a wire rack and cool for 30 minutes (puddings will deflate during cooling). Refrigerate the puddings, in the muffin cups, for 2 hours. Using a thin, flexible spatula, carefully remove the puddings from the muffin cups and discard the parchment paper from the bottom of the puddings.
  • For the sauce: In a medium saucepan, combine the reserved vanilla pod, cranberries, water, orange juice, orange zest and 1/2 cup sugar over medium heat. Bring the mixture to a boil, stirring occasionally. Reduce the heat and gently simmer until the mixture has thickened and the liquid has reduced by half, about 30 to 35 minutes. Cool for 20 minutes. Remove the vanilla pod and sweeten with extra sugar, to taste, if necessary.
  • To serve: Arrange the puddings on small dessert plates and spoon the sauce over the top.

RICOTTA POUND CAKE WITH VANILLA BEAN

A delicious and rich pound cake flavored with ricotta and real vanilla. If you don't have a vanilla bean, feel free to swap it out for vanilla extract. This cake is fantastic when served with fresh berries and/or whipped cream.

2 teaspoons baking powder
½ teaspoon salt
1 ¾ cups whole milk ricotta cheese, at room temperature
¾ cup unsalted butter, softened
1 cup white sugar
3 large eggs
½ teaspoon almond extract
1 (3 inch) vanilla bean

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease an 8 1/2 x 4 1/2-inch loaf pan and line the bottom with parchment paper.
  • Sift together flour, baking powder, and salt in a bowl.
  • Cream together ricotta, butter, and sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 7 minutes. Mixture will look somewhat grainy and curdled--this is normal. Beat in eggs, 1 at a time, mixing well after each addition. Beat batter an additional 2 to 3 minutes on medium-high speed after adding the last egg. Mix in almond extract.
  • Use a small paring knife to slice vanilla bean in half lengthwise. Scrape the seeds out of each half and add to the batter. Mix on low speed until vanilla seeds are evenly dispersed.
  • Add half of the dry ingredients to the batter, mixing until only just combined. Mix in remaining dry ingredients until just combined. Pour batter into prepared loaf pan and smooth the top. Tap pan lightly on the counter a few times to remove air bubbles.
  • Place pan into preheated oven and bake until a toothpick inserted into the center comes out clean, 70 to 75 minutes. Allow cake to cool in the pan for 30 minutes. Gently run a knife around the edges of the cake to loosen, the remove to a wire rack to cool completely.

2 tablespoons unsalted butter, melted
6 slices challah, each 1 1/4-inches thick, cut into 1/2-inch cubes
1/2 cup golden raisin
1 cup milk
15 ounces ricotta cheese
1/2 cup sugar
2 eggs
1 cup sour cream
1 teaspoon grated lemon zest
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon

Steps:

  • Coat a 1 1/2-quart souffle dish with 1 tablespoon melted butter. Add bread and raisins to dish. Pour milk over top; stir to combine. Set aside.
  • Mix together the ricotta, sugar, eggs, sour cream, lemon zest and vanilla. Pour ricotta mixture over bread; mix lightly. Drizzle remaining 1 tablespoons butter over bread and sprinkle with cinnamon. Cover dish with aluminum foil; place in slow cooker bowl. Fill bowl with boiling water to reach 1-inch up the side of dish.
  • Cover top of slow cooker with a dish towel; top with lid. Cook for 2 1/2 hours on high or until internal temperature registers 140 on an instant read thermometer. Cool at least 20 minutes.
