CHEESE AND CHIVES BREAD (BREAD MACHINE - ABM)
The original recipe (from Oster) calls for cottage cheese, but I think I'll try it with ricotta, as that's usually what I have on hand.

Steps:
- All ingredients should be at room temperature.
- Add ingredients to your bread machine as the directions instruct.
- Mine say to add liquid ingredients to bread pan.
- Add all dry ingredients except yeast to bread pan.
- Make a well in dry ingredients and carefully add yeast.
- Choose the "Sweet" bread setting.
- Choose crust color if applicable.
- Press Start!
RICOTTA BREAD FOR BREAD MACHINES (1 POUND LOAF)
A favorite I have been making for years. This isn't a very tall loaf and yes - the amount of flour is correct. NOTE: (These days, most bread machines have much bigger pans, so if you have a larger capacity machine, you may instead wish to only mix the dough in the machine,let it rise, then bake the bread itself in a loaf pan (at 350 F for perhaps 30 minutes is a guess). This can still be baked in a larger capacity machine, it will just have an odd shape.

- Place all ingredients into a 1-pound capacity (or bigger) bread machine according to the directions in your manual.
- Select the basic bread cycle and light crust.
- After about 5 minutes, take a peek inside your machine to see if your dough is forming up a ball- if it is too wet, add up to 3 Tbsp additional flour, a spoonful at a time (or as needed based on the hunidity of the day), if too dry, add a little water.
COTTAGE CHEESE AND CHIVE BREAD ( BREAD MACHINE )
The original recipe was in the instruction book for my ABM (an Oster 2 Pound Expressbake). This bread is quite dense and very moist with a crisp crust. It slices easily and makes wonderful toast and sandwiches. It's our favorite of all the recipes I've tried so far. The cottage cheese is all but invisible in the bread so don't worry about offending those who turn up their noses at the mention of it. I find it to be a sneaky way to get added calcium into their diets.

- Measure and add ingredients to YOUR bread maker according to YOUR instructions. (Mine takes all liquids first, then dry ingredients, with the yeast last.).
- Select the "Sweet Bread" setting.
- Select "Crust Color" medium.
- Press Start, walk away, come back 2 hours and 50 minutes later to behold your creation!

- Cottage cheese - I drain all the whey that will readily pour off but don't actually strain it to remove all the liquid. I suppose the drained liquid could replace all or part of the water but I haven't tried it.
- Dough Consistency - As with all bread recipes, more flour or water may be needed depending on the humidity. Watch during the first knead & if the bread looks too dry, add water, 1 teaspoon at a time, until the dough gathers up. Likewise, if the dough looks to wet (my machine makes a louder noise when this is the case) sprinkle in flour.

ZUCCHINI RICOTTA CHIVE BREAD
Excess zucchini combined with leftover lasagna filling and chives from the garden turn into a tangy, moist bread.

Steps:
- In a large bowl, or the stand mixer bowl, combine the water, yeast, and honey. Stir and let stand 15 minutes or until the yeast is foamy.
- Add 1 cup of bread flour. Beat to combine. Cover and let sit for 2 hours.
- Add the remaining ingredients and knead for about 4 minutes, adding more flour if necessary to keep dough held together.
- NOTE: This dough is very soft due to the zucchini moisture. You want the dough to hold together, but not to be too dry.
- Transfer to an oiled bowl. Cover and let rise for one hour or until doubled in size.
- Scrape dough out onto a floured board. Let rest for 10 minutes.
- Form dough into a loaf and place in a greased 8½ x 4½ inch pan or 9 x 5 inch pan.
- Cover and let rise ½ - 1 hour.
- Preheat oven to 325 degrees. Score the top of the loaf.
- Bake for 50 - 75 minutes or until internal temperature reaches 190 degrees.
- Remove from oven. Let cool for 5 minutes. Remove from pan and completely cool before slicing.
DELICIOUS CHEDDAR CHIVE BREAD FOR THE BREAD MACHINE (ABM)
This is another quick and easy and delicious bread machine recipe! This recipe was given to me by my neighbor, who always is the beneficiary of loaves of bread from me! You can substitute 1 1/2 teaspoons bread machine yeast for the active dry yeast. Do not use the delay bake function for this bread. Cook time is an estimate but may vary depending on your bread machine.
