- In a saucepan, combine the whole milk, evaporated milk and vanilla and warm up over low heat.
- Combine the cocoa powder, sugar, cornstarch and cinnamon in a bowl. Whisk the cocoa mixture into the warm milk mixture until smooth. Bring to a boil, whisking frequently to prevent it from scorching.

Steps:
- Bring the liquid almost to a simmer with the salt over medium heat, then remove it from the heat and add the chocolate. Let it rest for 1 minute, then whisk the mixture until chocolate is melted and liquid is smooth. Stir in vanilla and taste it. If you want a stronger, deeper chocolate flavor, whisk in the cocoa. If necessary, reheat the liquid over medium-low heat, stirring.
- If you like it frothy, or the cocoa powder didn't blend in smoothly, blend it in the blender.
- This recipe multiplies easily. When you get up to a quart of milk, use 1/4 teaspoon salt.
HOT CHOCOLATE FOR ONE
This is my recipe for home-made hot chocolate. I couldn't find one like it here on food.com, and was curious about the nutritional content. A little less sweet than some and a little more chocolatey than others, it also makes good chocolate milk (Just allow the syrup to cool and add to cold milk.) Be adventurous and change up the flavors if you like. A sprinkle of cinnamon, a few drops of mint or orange extract, or half a spoonful of instant coffee can turn a simple cup of cocoa into a gourmet experience. This could be easily multiplied to serve more than one.

RICH HOT CHOCOLATE
Each winter in early February my friends and I gather for an outdoor show called Mittenfest. We skip the Bloody Marys and fill our thermoses with these hot cocoas instead.

RICH HOT CHOCOLATE FOR ONE
I make this perfectly rich and easy hot chocolate for myself most mornings. It's lowfat, sugar free, and I'd rather the antioxidants from this versus caffeine from coffee. This is way better than those questionable, hardly chocolatey, who-knows-whats-in-them packets.

Steps:
- Heat milk in mug in microwave until hot, about 2 minutes.
- Stir in quickly cocoa powder, salt, and Splenda. Stir briskly to incorporate any cocoa lumps. If the cocoa is lumping too much after a lot of stirring, your milk may not be hot enough, so nuke it a minute more.
- Stir till well incorporated and enjoy.

- While the milk is heating, sift the sugar and cocoa powder over a small bowl (I like to use a mesh tea strainer for this). Stir in the salt.
- Add the cocoa mixture and the chocolate to the milk and whisk well to combine. Simmer the hot chocolate for about 1 minute, until the chocolate is melted. Pour the hot chocolate through a fine strainer to remove any lumps.
- Whip the heavy cream with a whisk or immersion blender until it forms soft peaks. Divide the hot chocolate into cups and spoon some of the cream on top. Sprinkle with cocoa, if you like.
