Chocolate truffles, beautifully wrapped in boxes, will put a smile on anyone's face - and they're so easy to make

300g good-quality dark chocolate, 70% cocoa solids
300ml double cream
50g unsalted butter

Steps:

  • Chop the chocolate and tip into a large bowl. Put the cream and butter into a saucepan and heat gently until the butter melts and the cream reaches simmering point. Remove from heat, then pour over the chocolate. Stir the chocolate and cream together until you have a smooth mixture. Add any flavourings to the truffle mix at this stage (divide the mixture between bowls and mix in liqueurs or other flavourings, a tsp at a time, to taste. Try bourbon, Grand Marnier, coconut rum or the zest and juice of an orange), or leave plain. Cool and chill for at least 4 hrs.
  • To shape the truffles, dip a melon baller in hot water and scoop up balls of the mixture, then drop the truffles onto greaseproof paper. Or lightly coat your hands in flavourless oil (such as sunflower) and roll the truffles between your palms. You could also use a piping bag to pipe rounds onto baking parchment.
  • Coat your truffles immediately after shaping. Tip toppings into a bowl and gently roll the truffles until evenly coated, then chill on baking parchment. Try: crushed, shelled pistachio nuts; lightly toasted desiccated coconut; or roll a truffle flavoured with orange zest and juice in cocoa powder. To coat in chocolate, line a baking tray with baking parchment. Melt 100g milk, dark or white chocolate for 10 truffles. Allow chocolate to cool slightly. With a fork, pick up one truffle at a time and hold over the bowl of melted chocolate. Spoon the chocolate over the truffle until well-coated. Place on the baking tray, then chill.
  • To give as presents, place 8-10 truffles in individual foil or paper cases inside small, lined boxes tied with ribbon. Keep in the fridge until you're ready to give them. Will keep in an airtight container in the fridge for three days, or frozen for up to a month. Defrost in the fridge overnight.

8 ounces good-quality semi- or bittersweet chocolate, coarsely chopped
4 ounces unsweetened chocolate
8 tablespoons unsalted butter
1 (14 ounce) can sweetened condensed milk
Your choice of flavoring (see below)
Your choice of coating (see below)

Steps:

  • Heat chocolates, butter and milk in a pan until chocolates and butter are partially melted. Remove from heat and stir until completely melted. Whisk in desired flavoring until creamy-smooth.
  • Transfer to a bowl and let stand until firm enough to hold its shape, about 2 hours.
  • Using a tablespoon (a spring-action 1 Tb. scoop is ideal), mold chocolate into balls, 1 level Tb. at a time, and place on a cookie sheet lined with greased parchment paper.
  • Place desired coating in a small bowl. Working one at a time, drop truffles into the bowl with greased fingertips. Shake bowl back and forth so truffles are completely coated. If necessary, roll truffles by hand to make round. Return to parchment. (Can be refrigerated in an airtight container up to 5 days or frozen up to 1 month.) Before serving, let stand at room temperature to soften slightly.

1 cup (227g/8 ounces) heavy whipping cream
2 and 2/3 cups (454g/16 ounces) semi-sweet chocolate, finely chopped
5 and 1/2 Tablespoons (78g/2.75 ounces) unsalted butter, cut into small cubes and at room temperature
1 teaspoon peppermint extract
1 and 1/3 cups (226g/8 ounces) semi-sweet chocolate, chopped
6 full-size candy canes, finely crushed

Steps:

  • In a small saucepan over low heat, heat the cream just until it comes to a boil. Then immediately remove cream from heat and add in chopped chocolate. Allow the mixture to sit, untouched, for two minutes, then whisk smooth. Stir in the butter and peppermint extract and vigorously whisk until smooth and shiny.
  • Pour the mixture into a medium bowl and cool to room temperature before tightly covering the bowl with plastic wrap and refrigerating for 2 hours, or until firm enough to scoop.
  • Fill a medium pot one-third full with water and bring it to a low simmer over medium heat. Place a heatproof bowl that will fit on top of the pan snugly, but will not touch the simmering water, on top of the pan. Reduce the heat to low and add two-thirds of the chopped chocolate into the bowl over the pot. Heat until the chocolate is completely melted, stirring occasionally with a silicone spatula. Once the chocolate is completely melted, remove the pan from the heat - keeping the bowl on top of the pan - and stir in the reserved chocolate.
  • Right before dipping, pour the melted chocolate into a liquid measuring cup.
  • Before you begin, make sure you have enough room in your refrigerator for both baking sheets; the truffles must chill before being dipped in the chocolate coating.
  • Line two large baking sheets with parchment paper and set them aside.
  • Measure 2 teaspoons of the truffle filling and quickly roll it between your hands to form a ball. Transfer to the prepared baking sheet, and repeat with all truffles. Refrigerate the rolled truffles for at least 15 minutes before dipping in the chocolate.
  • Remove the chilled truffles from the refrigerator and begin dipping them into the chocolate using a small spoon or fork. Transfer the dipped truffles back onto the baking sheets and sprinkle with crushed candy canes.
  • Allow truffles to sit at room temperature until set, about 1 hour.

8 ounces good quality dark chocolate

Steps:

  • In a medium bowl break up your chocolate into small pieces and set aside.
  • In a small pot over medium heat, heat your cream until it begins to simmer.
  • Remove from heat and pour over your chocolate. Cover your bowl with plastic wrap and let it stand for about 10 minutes.
  • Uncover your bowl and whisk your chocolate mixture until it is smooth then mix in your vanilla.
  • Pour your mixture into a 9×9 glass pan and let cool for 20 minutes on your counter.
  • Once cooled cover with plastic wrap and set in the fridge to set for at least 2 hours. I prefer to leave mine overnight.
  • Scoop out tablespoon-sized truffles and roll them into smooth balls.
  • Once you have rolled your ball immediately roll it in your desired topping. I normally have all my toppings in small bowls or on small plates like an assembly line making it easy to roll.

1 2/3 cups whipping cream
1/2 cup real butter (no substitute)
8 ounces semisweet baking chocolate, chopped
1 1/3 cups semi-sweet chocolate chips, chopped
1 tablespoon vanilla extract or 1 tablespoon liqueur
12 -18 ounces semi-sweet chocolate chips or 12 -18 ounces milk chocolate chips
2 -3 tablespoons shortening
1/4 cup powdered sugar
1/4 teaspoon milk

Steps:

  • In saucepan, combine whipping cream & butter.
  • Cook over medium heat, stirring constantly, just until mixture boils; remove from heat. Stir in chocolates until melted; continue stirring until mixture cools & thickens slightly.
  • Stir in vanilla.
  • Pour into shallow glass dish.
  • Cover; chill until firm.
  • With spoon scoop mixture into 1 inch balls.
  • Coating Melt chocolate & shortening over low heat; stirring constantly.
  • (use 1 Tbsp of shortening for every 6 oz. of chocolate).
  • When mixture is smooth remove from heat. Dip each truffle into coating.
  • (I found dr opping them in the chocolate & then fishing them out with a spoon worked best. But work quickly or they will melt) Then either place them on foil or in foil candy papers & allow to harden.
  • Mix powdered sugar & milk.
  • Drizzle over truffles in various designs.

  • Chop the chocolate and butter into small pieces and place in a large metal bowl.
  • Bring the cream to a boil.
  • Immediately pour the hot cream over the chocolate and butter.

  • Stir in the brandy.
  • Pour the ganache into a flat, shallow, ungreased pan and chill until firm.

Cover the bowl with saran wrap over top of the bowl and place it in the fridge to firm up for at least 6 hours or overnight. This step is important as the ganache needs to be firm to the touch in order to roll it into balls.
  • Once firm, use a small cookie scoop to scoop the ganache and roll it in between your hands into a ball shape (your hands will get very messy). Place the ganache balls on a baking sheet lined with parchment paper and place back in the fridge while you prepare the chocolate shell in the meantime
  • Melt 1/2 cup chocolate chips using a double-boiler or a makeshift version by placing a small pot with your chocolate on top of a larger pot with simmering water and stirring continuously until thin. If needed, add a tablespoon of coconut oil to thin out the chocolate. Pour chocolate into a shallow bowl. Carefully dip each ball into the melted chocolate using a fork or a candy utensil. If desired, place a few espresso beans on top to garnish. Place the truffles back on the cookie sheet and refrigerate for another 20 minutes until the chocolate shell sets.
