I bake challah every week for our Sabbath meal. It's so easy to make in a KitchenAid mixer. Challah tastes great in French Toast or Cinnamon Toast recipes. This challah recipe is my kid's favorite.

Number Of Ingredients 12

1 teaspoon sugar
1/2 cup warm water
3 teaspoons yeast
4 cups flour
4 tablespoons sugar
1 teaspoon salt
1/3 cup oil
2 eggs
1/4 cup warm water
1 egg yolk, beaten with
1 teaspoon water
sesame seeds or poppy seed

Steps:

  • Preheat oven to 400°F Dissolve 1 teaspoon sugar in 1/2 cup water in bowl of mixer. Sprinkle yeast over water and mix,let stand 10 minutes until foamy.
  • Add the next 6 ingredients to mixing bowl. Mix with dough hook for 6 minutes. Dough should be a little sticky.
  • Place in oiled bowl, cover and let rise in warm place until double in bulk.
  • Punch down dough. Let rise again until double in bulk.
  • Punch down again. Divide dough into 3 equal parts.
  • Roll dough into three long strands. Braid the strands, tucking ends under. Cover with towel and let double in bulk.
  • Brush with beaten egg yolk. Sprinkle with seeds. Bake at 400 F for approximately 30 minutes, until golden brown. The challah is done when it sounds hollow when thumped on the bottom.

Challah bread is one of the most satisfying things I make. I usually knead it in my Kenwood mixer, but there's nothing like kneading by hand to help relieve stress.

Number Of Ingredients 7

8 -9 cups flour
3/4-1 cup sugar (or ¾ cup honey)
1 tablespoon salt
1 (2 ounce) package yeast
2 1/2 cups lukewarm water (, or 2 cups only if using honey)
1/2 cup oil
5 eggs

Steps:

  • Mix together 2 1/2 cups flour with the sugar (honey), salt and yeast.
  • There is no need to dissolve the yeast first.
  • Add the water and oil.
  • Mix in 4 eggs.
  • Beat in another 1 1/2 cups of flour very well.
  • Add 4-5 cups of flour, until a very soft dough is formed.
  • Knead for about 10 minutes.
  • If using the dough hook, knead for about 7 minutes.
  • Let rise for 1-2 hours until doubled in size.
  • Alternately, let rise in the refrigerator overnight and then let warm to room temperature for about 1 or 2 hours.
  • Decide how many challahs you want, how many strands you want to braid in each.
  • Make a dough ball for each strand; roll them into ropes and braid.
  • Let rise covered for 1/2-1 hour.
  • Beat the remaining egg and brush on the challah.
  • Bake in a preheated oven at 325 F (150 C) for 30 minutes.
  • Apply egg wash once more and bake for another 30 minutes at 350 F (175 C).
  • This dough is enough for 4 medium sized challahs.
  • You can really let your imagination run rampant here, making intricate braids, placing the braids in a loaf pan, even then winding them into a circle.
  • You can add about 1/4 cup of raisins to the dough, but we leave them out.

1 tablespoon sugar
1 3/4 teaspoons active dry yeast
1 cup minus 2 tablespoons water (warm but not boiling)
2 cups bread flour (scoop and sweep method, un-sifted), plus more for dusting
2 cups semolina flour (scoop and sweep method, un-sifted)
1 1/2 teaspoons sea salt
1/4 cup olive oil, plus more to drizzle
1 1/2 tablespoons honey
2 large egg yolks
1 large whole egg
3/4 cup raisins, optional
1 yolk
1 tablespoon cream or milk
Sesame seeds, for sprinkling, optional

Steps:

  • For the sponge starter: Add the sugar and yeast to the warm water. Mix to dissolve. Add about 1/2 cup of the bread flour and mix vigorously with a wire whisk. The mixture should look like a thick pancake batter. Cover with plastic or a plate and leave to ferment in a warm room temperature place for about an hour. This sponge will give the challah a rich flavor and will extend its shelf life.
  • Add the remaining 1 1/2 cups bread flour, the semolina flour and salt into a mixer bowl. Add the sponge starter, oil, honey, yolks and egg. Mix on low speed with the dough hook until the ingredients seem to come together. Then switch to medium speed and knead to develop the gluten, 5 to 7 minutes. The dough should be smooth and satiny, and have a nice stretch.
  • Shape the dough into a ball and place it back in the mixer bowl. Sprinkle a bit of olive oil and turn the dough so it's lightly coated. Cover with plastic or a plate and let rise in a warm area until doubled, about 1 1/2 hours. To test, lightly poke a finger in the dough. It should be relaxed and not pull back to shape immediately.
  • Turn the dough onto a lightly floured counter and fold it over upon itself few times to redistribute the yeast. If using, sprinkle the raisins onto the dough and press them into it.
  • Divide into desired number of braids (3, 4 or 6) and roll each braid to elongate. Braid the strands to a long loaf or a round shape and place on a baking tray lined with parchment paper. Brush the braided loaf with the egg wash and let rise until doubled in size, about 1 1/2 hours.
  • Preheat the oven to 450 degrees F as the challah rises.
  • Reapply the egg wash and, if using, sprinkle the seeds before placing the tray with the challah in the oven. Lower the oven temperature to 350 degrees F and bake until golden, 30 to 35 minutes. The challah will develop a deep brown and shiny crust, and will sound hollow when tapped on the underside. Cool on a rack.

This recipe can also be done on the dough cycle in your bread machine and finished by hand. Best of all it makes THE BEST French toast! Cooking time does not include rising time.

1/2 cup water or 1/2 cup milk, for more richness
4 eggs
6 tablespoons oil, makes it more cake like
6 tablespoons sugar
1 1/2 teaspoons salt
5 cups flour
2 1/2 teaspoons instant yeast (OR AMOUNT SPECIFIED BY YOUR YEAST PER CUP OF FLOUR) or 2 1/2 teaspoons bread machine yeast (OR AMOUNT SPECIFIED BY YOUR YEAST PER CUP OF FLOUR)
2 egg yolks
2 tablespoons water
1/8 teaspoon salt

Steps:

  • In bread machine add to bread pan in order suggested by manufacturer, select dough setting, press start.
  • After beep, remove risen dough and follow directions on how to shape and bake below.
  • In Kitchen-aid stand mixer or like devise mix dry ingredients in bowl and turn on low speed to incorporate.
  • Add eggs one at a time, allow to mix in before adding next one, then add oil.
  • Turn mixer up to next speed (2 on Kitchen-aid), add milk in a slow stream, knead until soft, smooth, and warm, about 3 to 4 minutes.
  • Grease a bowl and place dough in bowl turning to coat.
  • Allow to rest and rise until double in size.
  • ***Shaping and baking***.
  • Punch down and turn out risen dough onto a lightly oiled surface, let rest 5 minutes, punching dough down gets it all excited, it needs to sit and relax.
  • Shape dough into a log and cut off 1/3; set aside.
  • Cut remaining dough into 3 pieces and roll into 18 inch ropes, start braid from middle and braid to one end, pinch together and tuck under, repeat with other side.
  • Cut set aside dough into 3 pieces and roll out to 13-15 inches long, repeat braiding method and place smaller braid on top of larger braid.
  • Grease a large 1/2 sheet baking sheet and place finished braid sideways from corner to corner.
  • Allow to rise until almost double, mix glaze ingredients and brush loaf gently.
  • Bake in preheated 350°F oven for 35-45 minutes, cover loosely with foil 15-20 minutes into baking to avoid over browning.

Traditional egg bread for the Jewish Sabbath. You can add 1 cup raisins or golden raisins to the dough just before shaping and then make the loafs into round braids for Rosh Hashanah.

2 ½ cups warm water (110 degrees F/45 degrees C)
1 tablespoon active dry yeast
½ cup honey
4 tablespoons vegetable oil
3 eggs
1 tablespoon salt
8 cups unbleached all-purpose flour
1 tablespoon poppy seeds

Steps:

  • In a large bowl, sprinkle yeast over barely warm water. Beat in honey, oil, 2 eggs, and salt. Add the flour one cup at a time, beating after each addition, graduating to kneading with hands as dough thickens. Knead until smooth and elastic and no longer sticky, adding flour as needed. Cover with a damp clean cloth and let rise for 1 1/2 hours or until dough has doubled in bulk.
  • Punch down the risen dough and turn out onto floured board. Divide in half and knead each half for five minutes or so, adding flour as needed to keep from getting sticky. Divide each half into thirds and roll into long snake about 1 1/2 inches in diameter. Pinch the ends of the three snakes together firmly and braid from middle. Either leave as braid or form into a round braided loaf by bringing ends together, curving braid into a circle, pinch ends together. Grease two baking trays and place finished braid or round on each. Cover with towel and let rise about one hour.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat the remaining egg and brush a generous amount over each braid. Sprinkle with poppy seeds if desired.
  • Bake at 375 degrees F (190 degrees C) for about 40 minutes. Bread should have a nice hollow sound when thumped on the bottom. Cool on a rack for at least one hour before slicing.

Nothing makes your house smell so good as freshly baking bread, and this eggy bread is my favorite.

Number Of Ingredients 7

4 c unbleached bread flour
2 Tbsp sugar
1 tsp salt
1 pkg active dry yeast
2 Tbsp vegetable oil
2 eggs, plus 1 egg yolk, beaten (save white for top of bread)
1 c water at 110 degrees

Steps:

  • 1. In the bowl of a stand mixer, whisk together the flour, sugar, salt, and yeast. In a bowl, add the yeast to the water; add this to the dry ingredients in bowl. Add the oil, eggs, and egg yolk. Using the dough hook attachment, mix at low speed until the dough forms.
  • 2. On medium-low, and continue kneading until the dough becomes soft, usually 6 minutes. The dough should not be sticky; add additional flour or water as needed.
  • 3. Turn the dough out onto a lightly floured surface. Pull the edges into the center to shape into a ball. Place dough in a large, lightly-oiled bowl, rolling it around to coat it with oil, leaving the dough smooth side up. Cover tightly with plastic wrap, then with a clean, dry towel, and let stand at room temperature for 1 hour. I turn the oven to 175 degrees for a couple of minutes, then turn it off, place the dough in the oven with the door ajar, then close the door when most of the heat has escaped.
  • 4. Keeping the dough in the bowl, fold one end up, then the other end down, then crosswise, turning over to keep the smooth side on top. Cover again with plastic wrap, then towel and let rise another hour (it should just about double in size). You can use the above technique again to help it rise.
  • 5. Turn the dough out onto a lightly floured surface, and gently deflate with your fist. Divide it into 3 equal pieces and form each into a long rope on countertop. Cover loosely with plastic wrap and let rest on the counter for 10 minutes.
  • 6. Line a baking sheet with parchment paper. Roll each rope into a strand, all of the same length. Braid three strands together. Transfer the loaf to the prepared pan.
  • 7. Beat the remaining egg white with 1 tablespoon water to make an egg wash. Brush the loaf with the egg wash. Cover loosely with lightly oiled plastic wrap, and let sit at room temperature until nearly doubled in size, about 70 minutes. 30 minutes before baking, preheat the oven to 350°, placing the rack in the middle position of the oven.
  • 8. Gently brush the loaf again with the egg wash, taking care not to deflate. Bake at 350º F for 20 minutes. Rotate the pan 180º and continue baking for 20 to 45 minutes, until the bread is a rich golden brown and hollow sounding when you tap on it. Cool on a wire rack to for about an hour before serving.

2 teaspoons active dry yeast
1/3 cup water
1/4 cup sugar
1/4 cup orange juice
2 teaspoons kosher salt
3 tablespoons unsalted butter, melted, plus more, softened, for the bowl
3 large eggs, divided
1/4 cup golden raisins
3 cups bread flour

Steps:

  • Dough: In the bowl of a stand mixer, whisk yeast and water to fully dissolve yeast. Add sugar, orange juice, salt, melted butter, and 2 eggs, and whisk to combine. Then add raisins and flour. Attach a dough hook and mix on low speed just until the dough comes together and is not sticky. Mix an additional 2 minutes, the last 15 seconds on medium speed.
  • Turn dough onto a work surface and knead a few times to bring it together, then place in a large buttered bowl. Place plastic wrap over dough, making sure to lightly tuck the plastic around the sides of the dough. Allow dough to rise until doubled in size, about 60-90 minutes.
  • The dough is ready when you can press your finger into the dough and it holds the indentation. Gently move the dough onto your work surface in one piece. Cut the dough into thirds and, without deflating the dough too much, roll each piece into a strand about 10 inches long. Lay the strands out parallel to each other, and pinch them together at one end. Pull the rightmost strand over the center one, then the left over the new center, alternating until you have a tightly finished braid and can pinch the end together. At this point, you can wrap the braid around itself to form a "turban" and seal the ends together. If it doesn't look right, just unbraid and try again! Place challah on a parchment-lined baking tray and cover with plastic wrap. Allow to rise until doubled in size, about 1 hour. Preheat oven to 350 degrees F.
  • Whisk the remaining egg with 2 tablespoons water in a bowl. Glaze the top and sides of the challah with this egg wash, then bake 35-45 minutes.
  • To test if the challah is fully cooked, tap on its bottom-it should sound hollow. Let cool 30 minutes. Serve. (And remember, if you're eating it fresh, tear it apart with your hands!)
