1/2 cup jasmine rice, rinsed
4 cups water
1 piece fresh ginger, peeled (3-inch long)
3 cups low sodium chicken broth
1 tablespoon fish sauce (nam pla)
1/4 teaspoon salt
1/4 teaspoon sugar
1/2 cup shredded cooked chicken
2 scallions, green parts only, thinly sliced
2 tablespoons fresh cilantro, chopped

Steps:

  • Pour rice and water into medium-sized saucepan. Turn heat to high and bring to boil. Reduce heat to low, and simmer until rice is very tender and puffed up, about 25 minutes. Meanwhile, thinly slice ginger into matchsticks.
  • Add chicken stock, fish sauce, salt, and sugar to saucepan. Simmer over low heat for 10 minutes. Add half of ginger, and simmer for further 10 minutes.
  • Ladle soup into bowl and garnish with chicken, sliced scallion, chopped cilantro, and remaining ginger. Season with salt to taste.

This recipe is by Jamie Oliver. It's easy to make, taking only about 30 minutes. You can use your choice of fish or shrimp (or a combination!). Firm fish works best, such as cod, haddock, etc. Have fun with it and enjoy!

5 tablespoons vegetables (can even use coconut oil) or 5 tablespoons sunflower oil (can even use coconut oil)
1 -2 tablespoon brown mustard seeds (depending on how much you like)
fresh curry leaf, picked off the stalks
2 teaspoons cumin seeds
1 teaspoon garam masala
1 1/2 teaspoons chili powder
2 teaspoons turmeric
3 red chilies, deseeded and finely sliced
2 pieces fresh ginger, peeled and grated
6 garlic cloves, peeled and finely chopped
2 onions, peeled and finely chopped
basmati rice
2 1/2 cups water
22 ounces fish, skinned, filleted and cut into 2-3 inch chunks
2 (14 ounce) cans coconut milk
sea salt
fresh ground black pepper
2 limes, juice of
fresh cilantro, roughly chopped, divided
3 tablespoons freshly grated coconut (optional)

Steps:

  • In a large pan, heat up the oil and add the mustard seeds, curry leaves, cumin seeds, garam masala, chilli powder and turmeric. Cook for a few minutes.
  • Add the chillies, ginger, garlic and onions. Continue cooking slowly until the garlic and onions are soft.
  • Then add the rice and water. Bring to a boil then reduce the heat and simmer for 15 minutes.
  • Add the fish and coconut milk with a pinch of salt. Put the lid on the pan and simmer for another 10 minutes, then stir well to break up the pieces of fish. Taste and correct the seasoning with salt and pepper.
  • Just before serving, squeeze in the lime juice ans stir in half the cilantro. Serve in warmed bowls, sprinkle some freshly grated coconut (opt) and garnish with the rest of the cilantro.

1 (2 -3 lb) fish, whole (if not the Australian "blue bone , any large, firm-fleshed white fish)
1 stalk celery, chopped
3 tomatoes, chopped
1 cup chopped onion
2 stalks lemongrass
1 tablespoon soy sauce (or to taste)
1/2 tablespoon white vinegar
1 tablespoon turmeric
water
1 teaspoon salt
1 tablespoon cornstarch
3 cups steamed rice

Steps:

  • Remove flesh from fish and chop into chunks and reserve.
  • In a large pot, place cleaned fish head and bones.
  • Twist lemongrass stalks and tie in a knot. Beat them to release flavour before adding to the pot.
  • Cover with at least three inches of water, bring to a boil and simmer for 30 to 45 minutes.
  • Strain liquid, discarding solids.
  • Return fish broth to pot, add chopped vegetables, soy sauce, vinegar and, if necessary, water to cover.
  • Add chunks of fish, turmeric and salt to taste and cook over moderate heat until fish is cooked.
  • To thicken the soup, mix a tablespoon of cornstarch with water to a paste then add to the soup.
  • Serve poured over steamed rice or with rice on the side, as preferred.

I adopted this recipe of one of my favorite dishes. It may look complicated but it is just making soup by getting all the flavor you can from the ingredients. The results are INCREDIBLE.

4 lbs oxtails, cut into 1 1/2 to 2 inch pieces and trimmed of fat
1 piece gingerroot, unpeeled (3 inch)
1 large onion, halved and unpeeled
1/3 cup nuoc nam (fish sauce)
8 whole star anise
5 whole cloves
3 inches cinnamon sticks
1 teaspoon fennel seed
3 bay leaves
1 lb rice noodles (1/4 inch)
2 bunches scallions, sliced thin
1/2 cup tightly packed fresh cilantro leaves, roughly chopped
1/2 cup parsley, roughly chopped
1/2 cup basil, whole fresh plants
1 1/2 cups mung bean sprouts
3 large limes, cut into wedges and red chile paste (optional) or 3 large sliced fresh hot chili peppers (optional)
3/4 lb filet mignon, trimmed of fat and sliced very thin

Steps:

  • Put the oxtails into a large stockpot and add enough water to cover the bones by 4 inches (about 1 1/2 gallons). This will reduce to about 3 quarts when you are done.
  • Bring to a full boil and then lower the heat to a rapid simmer.
  • Skim the scum that rises to the surface.
  • Meanwhile put the ginger and onion halves on a baking sheet and char them under the broiler until lightly blackened, 10 to 15 minutes.
  • Turn them over halfway through cooking.
  • When cool enough to handle, rinse the onion and ginger under running water, using a knife to scrape away some of the charred surface.
  • Cut the ginger into 3 pieces and toss it and the onion halves into the simmering broth, along with 1 tablespoon salt and the fish sauce.
  • Put the star anise, cloves, and cinnamon stick in a small skillet and toast them on top of a stove burner over medium heat.
  • Turn the spices a couple of times until they're slightly darkened (3 to 4 minutes) and until you smell their aroma.
  • Put the toasted spices and fennel seeds in a small square of double thick cheesecloth and tie the bundle with a long piece of kitchen twine.
  • Add the spice bundle and the bay leaves to the broth, tying the end of the twine to the pot handle for easy retrieval.
  • Let the broth simmer slowly, uncovered, skimming occasionally.
  • After 4 hours, remove the spice bundle, onion, bay leaves and ginger from the pot and discard.
  • Remove the oxtails from the pot and set aside.
  • Let the broth continue to simmer.
  • When the meat is cool enough to handle, pull the meat from the bones.
  • Set the meat aside and return the bones to the broth.
  • Continue simmering, uncovered, until the broth is rich and flavorful, about 1 hour. At this point you should cool the broth in the refrigerator overnight and then defat.
  • Heat the broth and taste to determine if you need to add more salt or fish sauce as needed.
  • Meanwhile, soak the rice noodles in cold water for at least 20 minutes.
  • Arrange the sliced scallions, cilantro, parsley, basil, bean sprouts, lime wedges, and chiles on a platter in separate piles.
  • Bring a large pot of water to a boil and add the drained rice noodles.
  • Give the noodles a quick stir and cook until tender but firm, about 1 minute.
  • Rice noodles can quickly become gummy, so don't let them overcook.
  • Drain the noodles.
  • Warm 4 large bowls by rinsing them with hot water and divide the noodles among the bowls.
  • Just before serving, return the broth to a full boil.
  • Arrange the slices of raw filet and pieces of cooked oxtail meat over the noodles in each bowl.
  • Carefully ladle the boiling broth over all; the raw beef should be submerged in the broth.
  • Serve immediately, along with the platters of garnish.
  • Yield: 3 quarts of broth; serves 4 as a main course.

Here is a soup that my father taught me. In a ceviche-like approach, raw fish is marinated with onion, ginger, and cilantro. The semicooked mixture is then placed in the bottom of soup bowls, and the final cooking is done by the hot rice soup. When brought to the table, the seemingly plain white soup conceals a pleasant surprise of fish. Pair it with one of the salads in Chapter 1 for a Vietnamese soup-and-salad meal.

Yield serves 4 as a light lunch, or 6 to 8 with 2 or 3 other dishes

Number Of Ingredients 12

3/4 pound mild white fish fillet such as red snapper, sea bass, cod, or halibut, skin removed
1 small red onion, thinly sliced
1/4 teaspoon salt
1/2 teaspoon sugar
1 tablespoon canola or other neutral oil
2 tablespoons fish sauce
2 1/2 tablespoons cider vinegar
2 tablespoons peeled and finely shredded fresh ginger (page 51)
2 tablespoons chopped fresh cilantro
8 cups Basic Rice Soup (page 67)
1 scallion, green part only, thinly sliced
Black pepper

Steps:

  • Run your thumb along the top of the fish fillet to check for errant bones. If you find some, cut along each side of the line of bones, cutting as close to the bones as possible to avoid waste, and discard the thin strip containing them. Slice the fish into pieces about 2 inches long, 1 inch wide, and 1/8 inch thick, angling your knife if necessary to get the needed width.
  • To remove some of the harshness of the onion, put it in a bowl and add hot tap water to cover. Let sit for 5 minutes, then drain and rinse under cold water.
  • To make the marinade, in a bowl, combine the salt, sugar, oil, fish sauce, vinegar, ginger, and cilantro. Add the fish and onion and use your hand to mix gently. Set aside for 30 minutes at room temperature to allow the fish to absorb the other flavors and turn slightly opaque. The fish may be refrigerated for several hours, but it should sit at room temperature for 20 minutes before serving to take the chill off.
  • In a saucepan, bring the rice soup almost to a boil over medium heat, stirring occasionally to prevent scorching. Meanwhile, divide the fish among the soup bowls, leaving any liquid behind. Ladle the hot soup over the fish. Garnish with scallion and pepper before serving. Before eating, tell diners to stir the fish from the bottom to ensure that it cooks in the hot soup and the flavors are well mixed.
