1 teaspoon olive oil
1 medium onion, chopped
1 cup sliced fresh mushrooms
1 cup cubed fully cooked ham
1/8 teaspoon pepper
1/2 cup reduced-sodium chicken broth
1/4 cup water
3/4 cup uncooked instant rice
2 green onions, sliced
1/4 cup shredded Parmesan cheese

Steps:

  • In a large nonstick skillet, heat oil over medium-high heat; saute onion and mushrooms until tender. Stir in ham, pepper, broth and water; bring to a boil. Stir in rice. Reduce heat; simmer, covered, until rice is tender, about 5 minutes., Fluff with a fork. Top with green onions and cheese.

If you want to try curing your own meat, this salted duck breast is easy, flavourful and will make you feel like a true kitchen pro

small handful fresh thyme
1 tsp black peppercorns
2 cloves
1 garlic clove
1 dried bay leaf , roughly crushed
200g flaky sea salt
200g golden caster sugar
1 large meaty duck breast (about 250g)

Steps:

  • Using a pestle and mortar, roughly crush the thyme, peppercorns, cloves, garlic and bay. Tip into a bowl with the salt and sugar, and mix everything together thoroughly. Lightly score the skin on the breast in a criss-cross pattern.
  • Scatter about a third of the salt mixture into a container that will hold the duck breast snugly. Lay the duck, flesh-side down, on the salt and cover with the remaining mixture. Cover tightly with cling film or a lid and leave in the fridge for 3 days.
  • Remove the duck from the mixture, rinse under cold water, then dry well with kitchen paper. The ham is now ready to thinly slice and serve on its own or in a salad. Wrapped in cling film, it will keep in the fridge for up to 1 month.

2 tablespoons vegetable oil
4 green onions, chopped
1 cup cubed ham
4 eggs, beaten
1 cup frozen mixed peas and carrots
4 cups cold cooked rice
1 cup bean sprouts
1 teaspoon salt
½ teaspoon ground black pepper
3 tablespoons soy sauce

Steps:

  • Heat the vegetable oil in a skillet over medium-high heat. Cook the green onions in the oil for 1 minute. Add the ham, eggs, and the peas and carrot blend to the oil. Cook and stir until the egg is completely cooked. Add the rice and bean sprouts to the egg mixture and stir continually until the rice is heated completely through. Remove from heat; season with salt, pepper, and soy sauce.

2 tablespoons vegetable oil
Coarse salt
3 large eggs, lightly beaten with 2 teaspoons water
4 scallions, thinly sliced
4 garlic cloves, minced
5 ounces ham, thinly sliced and cut into strips
3 tablespoons rice vinegar
1 1/2 cups frozen peas, thawed
4 cups cooked rice

Steps:

  • In a large nonstick skillet, heat 1 tablespoon oil over medium-low heat; swirl to coat pan. In a small bowl, lightly beat together eggs, 2 teaspoons water, and 1/4 teaspoon salt. Pour into pan; cook, pulling in egg from edge of pan, until set, about 2 minutes. Transfer to a plate; when cool enough to handle, cut into strips.
  • In pan, heat remaining tablespoon oil over mediumheat. Add scallions and garlic; cook until fragrant, about 1 minute. Add ham and rice; season with salt. Cook, stirring often, until very hot, about 5 minutes.
  • Add vinegar, peas, and eggs; cook until very hot, about 2 minutes.

  • Get a wok or large frying pan very hot over a strong burner. Add the duck fat or peanut oil, and the moment it begins to smoke, add the garlic, chiles and the white part of the scallions. Stir fry about 30 seconds.
  • Add the duck meat, rice, carrots and peas and stir fry 2 minutes. Push everything to one side of the wok and pour in the beaten egg. Swirl it with a chopstick or somesuch until it sets, then stir fry it into the rest of the rice. This helps keep it in largish, recognizable pieces.
  • Let the stir fry sit for 1 minute without touching it. You want to develop some browning and crispiness on the bottom. After the minute has elapsed, pour the soy sauce in around the edges of the rice, then mix well. Turn off the heat and drizzle the sesame oil over it.
