- In a large nonstick skillet, heat oil over medium-high heat; saute onion and mushrooms until tender. Stir in ham, pepper, broth and water; bring to a boil. Stir in rice. Reduce heat; simmer, covered, until rice is tender, about 5 minutes., Fluff with a fork. Top with green onions and cheese.

DUCK HAM

- Using a pestle and mortar, roughly crush the thyme, peppercorns, cloves, garlic and bay. Tip into a bowl with the salt and sugar, and mix everything together thoroughly. Lightly score the skin on the breast in a criss-cross pattern.
- Scatter about a third of the salt mixture into a container that will hold the duck breast snugly. Lay the duck, flesh-side down, on the salt and cover with the remaining mixture. Cover tightly with cling film or a lid and leave in the fridge for 3 days.
- Remove the duck from the mixture, rinse under cold water, then dry well with kitchen paper. The ham is now ready to thinly slice and serve on its own or in a salad. Wrapped in cling film, it will keep in the fridge for up to 1 month.

- In a large nonstick skillet, heat 1 tablespoon oil over medium-low heat; swirl to coat pan. In a small bowl, lightly beat together eggs, 2 teaspoons water, and 1/4 teaspoon salt. Pour into pan; cook, pulling in egg from edge of pan, until set, about 2 minutes. Transfer to a plate; when cool enough to handle, cut into strips.
- In pan, heat remaining tablespoon oil over mediumheat. Add scallions and garlic; cook until fragrant, about 1 minute. Add ham and rice; season with salt. Cook, stirring often, until very hot, about 5 minutes.
- Add vinegar, peas, and eggs; cook until very hot, about 2 minutes.

DUCK FRIED RICE RECIPE - CHINESE STYLE DUCK FRIED RICE

- Get a wok or large frying pan very hot over a strong burner. Add the duck fat or peanut oil, and the moment it begins to smoke, add the garlic, chiles and the white part of the scallions. Stir fry about 30 seconds.
- Add the duck meat, rice, carrots and peas and stir fry 2 minutes. Push everything to one side of the wok and pour in the beaten egg. Swirl it with a chopstick or somesuch until it sets, then stir fry it into the rest of the rice. This helps keep it in largish, recognizable pieces.
- Let the stir fry sit for 1 minute without touching it. You want to develop some browning and crispiness on the bottom. After the minute has elapsed, pour the soy sauce in around the edges of the rice, then mix well. Turn off the heat and drizzle the sesame oil over it.
