2 cups cooked rice
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 can (8 ounces) sliced water chestnuts, drained
1 jar (4-1/2 ounces) sliced mushrooms, drained
2 celery ribs, thinly sliced
3/4 cup mayonnaise
1 tablespoon chopped onion
1 tablespoon lemon juice
1/2 teaspoon salt
1/3 cup crushed saltines (about 10 crackers)
1 tablespoon butter, melted

Steps:

  • In a large bowl, combine the first 10 ingredients. Transfer to a greased 2-1/2-qt. baking dish. Combine the cracker crumbs and butter; sprinkle over the top. , Bake, uncovered, at 350° for 30-35 minutes or until bubbly.

5 chicken thighs
1 teaspoon salt
1 teaspoon pepper
1 teaspoon paprika
1 teaspoon dried parsley
1 tablespoon olive oil
1 tablespoon garlic, minced
½ cup red onion, diced
1 cup long grain rice
1 ½ cups chicken broth
salt, to taste
pepper, to taste

Steps:

  • Preheat oven to 400˚F (200˚C).
  • In a large bowl, evenly season chicken thighs with salt, pepper, paprika, and parsley.
  • On high, heat olive oil in a oven-proof pot and place chicken thighs, skin-side down, in the hot oil. Cook 5-6 minutes or the thighs develop brown crispy skin and flip over.
  • Cook an additional 5-6 minutes to brown the other side and remove from the pot.
  • Add the garlic and onions to the pot, and cook until the onions are transparent.
  • Pour in the rice and chicken broth to the pot and season with salt and pepper. Stir well, bringing to a boil.
  • Add the chicken thighs back into the pot, skin-side up, on top of the rice, bring back to a boil and cover with a lid.
  • Bake for 35-40 minutes, or until the rice is fully cooked.
  • NOTE: For a crispy skin, remove chicken thighs and broil.

1 teaspoon Italian seasoning
½ teaspoon salt
½ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 425 degrees F. Spray a 9 x 13-inch baking dish with cooking spray.
  • Stir marinara sauce, tomatoes (in their juice), and uncooked rice together in the prepared dish (or in a separate bowl).
  • In a small bowl, combine diced, uncooked chicken with Italian seasoning and salt.
  • Add seasoned chicken to the rice mixture and stir to completely combine. Transfer to prepared baking dish.
  • Cover tightly with foil or with a lid.

  • Preheat the oven to 425 degrees F. Melt the butter in a large ovenproof skillet over medium heat. Add the garlic and about three-quarters of the scallions and cook, stirring occasionally, until soft, about 2 minutes. 6 bone-in chicken thighs (1-1/2 lb.)

2 1/2 cups chicken stock (590 ml, boiling)

Steps:

  • Preheat oven to 400 degrees F. Add the uncooked rice and frozen peas to a 9x13" baking dish or roasting pan (3 quart capacity) with 2 teaspoons of the seasoning and the salt. Stir to combine.
  • Arrange chicken thighs over the rice, skin side up (trying to leave as much of the skin out of the liquid as possible).

1/8 teaspoon ground pepper

Steps:

  • First, preheat the oven to 375ºF. Then, prep chicken thighs by patting them dry with a piece of paper towel. Generously sprinkle them with chicken seasoning and set aside.
  • Heat 1.5 tablespoons olive oil in a large Dutch oven over medium/high heat. When olive oil is fragrant. Sear chicken thighs on both sides for 2 minutes to get them golden brown. Remove from heat.
  • Add 2 tablespoons of butter and 1 tablespoon of olive oil to the pan and use a wooden utensil to remove the brown bits from the bottom. Then, add onion, garlic, mushrooms, carrots and a pinch of salt and saute for 2-3 minutes.
  • Add in white rice, chicken broth, frozen peas, Worchestershire sauce, and spices, and mix to combine. Turn the heat to high. Once the liquid begins to bubble, immediately remove it from the heat.
  • Place the seared chicken thighs on top of the rice and place the top on the Dutch oven.
  • Bake at 375ºF for 35 minutes. Remove from the oven. At this point, the liquid should be completely absorbed. If it's not, continue baking for 5-10 minutes until it absorbs. Check the internal temperature of the chicken thighs. It should read at least 165ºF.
  • Option to broil the dish on high for around 1-2 minutes to really get the chicken golden brown.
  • Top with fresh parsley and then serve immediately.

My family loves this recipe I got from my Mom when I got married. It's one of my favorites. I usually double or triple the rice part of this recipe my kids love it and there's not enough of it if I don't. Hope you love it as much as we do!

4 -6 chicken breasts
1/4 cup vegetable oil (approximately)
3/4 teaspoon salt
1/4 teaspoon pepper
1/3 teaspoon garlic salt
2 chicken bouillon cubes
1 3/4 cups water
1/3 cup chopped onion
1 teaspoon parsley flakes
1/2 bay leaf
2/3 teaspoon salt
10 drops food coloring (for appearence only)
3/4 cup long grain rice

Steps:

  • Place chicken breast, skinned and rinsed and patted dry into 13x9 pan.
  • Brush tops and bottoms of chicken well with vegetable oil and place chicken meaty side up in pan. Discard remaining oil.
  • Sprinkle with 3/4 tsp salt, 1/3 tsp garlic salt and 1/4 tsp pepper.
  • Bake uncovered at 350 degrees for 30 minutes.
  • In a sauce pan combine 1 3/4 cup water, 2 chicken bouilion cubes, 1/3 cup chopped onion, 1 tsp parsley flakes, 1/2 bay leaf, 2/3 tsp salt and 10 drops yellow food coloring.
  • Bring just to a boil.
  • Remove chicken from pan, dump sauce pan ingredients into pan with chicken drippings. Sprinkle 3/4 cup long grain rice evely over broth mixture.
  • Place chicken on top of rice with meaty side down this time and cover tightly with foil.
  • Bake at 350 for 40 minutes. Remove bay leaf and discard. Enjoy!

3 Tablespoons unsalted butter
1 medium onion (diced finely)
2 large stalks celery (sliced thinly)
1 cup long grain white rice
10.5 oz can cream of chicken soup (or 1 ¼ cup homemade)
2 cups chicken broth
4 large boneless skinless chicken breasts

Steps:

  • Move oven rack to the middle position and preheat oven to 350 degrees F.
  • Lightly spray a 13x9 baking dish with nonstick cooking spray.
  • In a medium pan over medium heat, melt butter.
  • Add diced onions and celery and cook until soft, about 4-5 minutes. Remove from heat.
  • In a large bowl combine rice, broth, and soup.
  • Add cooked onions and celery.
  • Pour the mixture into the prepared baking dish.
  • Lay the chicken breaste on top of rice mixture.
  • Bake for 45-60 minutes or until rice is tender and chicken is cooked through.
  • Serve immediately
