HONEY-MUSTARD GLAZED RIBS IN OVEN AND BROILER



Honey-Mustard Glazed Ribs in Oven and Broiler image

1/2 cup apple cider vinegar
2 tablespoons light brown sugar
1/3 cup clover honey
3 heaping tablespoons Dijon mustard
Salt and freshly ground black pepper
2 racks St. Louis Style/Country Style pork ribs (12 ribs each)
4 tablespoons canola oil
Salt and freshly ground black pepper
1 cup soy sauce
4 cups water
2 to 3-inch piece ginger, skin on and sliced

Steps:

  • Combine the vinegar and brown sugar in a small saucepan over high heat and cook, stirring occasionally, until the sugar is completely dissolved and mixture reduces slightly, about 5 minutes. Remove from the heat and whisk in the honey and mustard and season with salt and pepper, to taste. Let cool to room temperature.
  • Preheat the oven to 500 degrees F.
  • Brush the pork racks on both sides with canola oil and season with salt and pepper, to taste.
  • In a saucepan over medium-high heat, combine the soy sauce, 4 cups of water and the ginger and bring to a boil. Pour the mixture into the bottom of a roasting pan, fitted with a rack, and arrange the ribs on the rack. Wrap the pan with foil and roast until the ribs are tender, about 1 1/2 hours.
  • Remove the ribs from the oven and transfer to baking sheets lined with foil or parchment paper. Turn on the broiler and let heat for 3 to 5 minutes. Brush the ribs heavily on the top side with some of the glaze, put under the broiler and broil until golden brown and a crust has formed. Remove from the oven to a cutting board and brush with more of the glaze. Let rest 10 minutes before slicing. Arrange the ribs on a serving platter and serve.

Pure maple syrup, to coat (recommended: Parker's Maple Barn Pure Maple Syrup)

Steps:

  • Preheat oven to 350 degrees F.
  • Place ribs in a roasting pan and sprinkle with salt. Bake for approximately 25 minutes. After the ribs are golden brown, remove from the oven and baste with pure maple syrup.
  • Lower the oven temperature to 250 degrees F. Tightly wrap the ribs with a foil tent, making sure not to put any holes in the foil in order to maintain moisture and flavor. Return to the oven for approximately 10 hours. When you open the foil to check the ribs (carefully avoiding the steam), you should be able to place a fork into the meat and it should immediately break off the bone. If there is any resistance or hardness, continue cooking in the oven for up to 2 hours longer.
  • After cooking is complete, coat with another layer of maple syrup. If not serving immediately, wrap in plastic to keep moist until ready to use. To serve, cut each rack in half.

1 cup maple syrup
3 tablespoons orange juice concentrate
3 tablespoons ketchup
2 tablespoons soy sauce

1 clove garlic, minced
2 green onions, minced
1 tablespoon sesame seeds, toasted

Steps:

  • Place ribs, meaty side up, on a rack in a greased 9x13 baking pan.
  • Cover pan tightly with foil.
  • Bake at 350 for 75 minutes.
  • Meanwhile, combine the next nine ingredients in a saucepan; bring to a boil over medium heat.

3/4 cup maple syrup
3/4 cup coarse grain mustard
1/2 cup dark brown sugar
2 teaspoons hot pepper sauce
2 teaspoons soy sauce
4 1/2 lbs spareribs
salt
fresh coarse ground black pepper

Steps:

  • Mix maple syrup, mustard, brown sugar, hot sauce and soy sauce. In separate dish, save 1/2 cup mixture for basting ribs right before serving.
  • Brush ribs with mixture.
  • Place ribs in shallow pan; cover with foil.
  • Bake in 350 oven for 1 1/2 - 2 hours or until meat reaches 160.
  • Remove foil, brush ribs with reserved sauce.
  • Season with salt and pepper, and serve.

STICKY MAPLE RIBS

For a filling supper, cook some large baking potatoes in the oven at the same time as you cook the ribs. I found this in a parenting magazine called Family.

1 medium red onion
3 tablespoons maple syrup
3 tablespoons soy sauce
3 tablespoons ketchup
1 1/2 tablespoons mild mustard
1 1/2 tablespoons Worcestershire sauce
fresh ground black pepper
3 lbs spareribs

Steps:

  • Preheat the oven to 375°F.
  • Add a little oil to the roasting pan and rub it around the inside with a piece of paper towel.
  • Peel the skin away from the onion and throw it away. Grate the onion into a large mixing bowl using the coarse or large-hole side of a grater.
  • Add the maple syrup, soy sauce, ketchup, mustard, Worcestershire sauce, and 4 grinds of black pepper.
  • Mix together well.
  • Add the ribs to the bowl one at a time and use a metal spoon to thoroughly cover the ribs with the sticky glaze.
  • Carefully lift the ribs into the prepared pan.
  • Put the roasting pan in the preheated oven. Bake for 30 minutes and then remove the pan from the oven.
  • Using kitchen tongs, carefully turn over the ribs so they brown evenly.
  • Put the pan back in the oven and bake for another 30 minutes.
  • The ribs should be a dark golden brown and crispy around the edges. Lift the pan out of the oven.
  • Carefully transfer the ribs to a serving plate and eat!

2 lbs pork back ribs, cut into serving size
1/2 cup maple syrup (real)
1/4 cup apple jelly
1 tablespoon soy sauce
1/4 cup fresh chives, chopped
1/2 teaspoon dry mustard

Steps:

  • Heat oven to 450 F degrees.
  • Place ribs, meaty side down, on large shallow pan and cover tightly with foil.
  • Bake for 30 minutes.
  • Meanwhile, combine syrup, jelly, soy sauce, chives, and dry mustard in a small saucepan and cook over low heat about 10 minutes until hot, stirring occasionally.
  • Remove sauce from heat.
  • Reduce oven temp to 350 F degrees and remove ribs from oven.
  • Drain liquid from ribs, turn them meaty side up, and brush syrup mixture onto them.
  • Continue baking uncovered for about 30 minutes.
  • Brush the ribs with more syrup mixture, and bake an additional 15 to 20 minutes until ribs are tender and glaze is set.

1/2 cup stone-ground mustard
1/4 cup maple syrup
3 tablespoons cider vinegar
2 tablespoons bourbon
2 tablespoons ketchup
1 1/2 tablespoons Worcestershire sauce
3 garlic cloves, minced or pushed through a press
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
1/8 teaspoon ground cayenne pepper
2 racks St. Louis-style spareribs, each 3 to 3 1/2 pounds

Steps:

  • Prepare the grill for direct cooking over medium heat (350° to 450°F). In a medium bowl mix the glaze ingredients. Transfer ½ cup to a small bowl. Remove the membrane from the back of each rack of ribs and cut each rack crosswise in the middle to create two smaller racks. Season the half racks all over with the remaining glaze in the medium bowl, about 2 tablespoons per half rack, putting more of it on the meaty sides. Using eight 18-by-24-inch sheets of heavy-duty aluminum foil, double wrap each half rack in its own packet and seal tightly. Allow the racks to stand at room temperature for 30 minutes before grilling. Place the foil-wrapped racks over direct medium heat, close the lid, and cook for 50 minutes to 1 hour (the smaller half racks will be done first), turning the packets over once or twice, making sure not to pierce the foil. Remove the packets from the grill and let rest for about 10 minutes. Carefully open the foil packets, remove the racks, and discard the rendered fat and foil. Grill the racks over direct medium heat, with the lid closed, until sizzling and lightly charred, 6 to 8 minutes, turning once or twice and basting with the reserved ½ cup glaze. Remove from the grill and let rest for about 5 minutes. Cut the racks between the bones into individual ribs and serve warm.

This has been my most favorite rib recipe for the longest time. My DS and DD have always requested this dish when they come home during the summer.(BBQ time!!) I hope you will enjoy this dish. It is from a cook book called "HOT & SPICY" by Better Homes Gardens that I picked up at the store. I have a couple of excellent recipes out of this book. ENJOY!!! Cooking time includes chill time.

1 teaspoon pepper
2 teaspoons paprika
1 teaspoon curry powder
1/3 teaspoon salt
3 1/2-4 lbs country-style pork ribs
1 cup packed brown sugar
2/3 cup white vinegar or 2/3 cup cider vinegar
1/2 cup onion, chopped
1/3 cup spicy brown mustard
2 garlic cloves, minced
2 tablespoons honey
2 teaspoons liquid smoke
1/3 teaspoon celery seed

Steps:

  • Combine: sugar, pepper, paprika, curry powder, and salt in a bowl.
  • Rub spice mixture over ribs, coating well.
  • Place ribs in shallow pan.
  • Cover and chill for 2 to 6 hours.
  • Arrange medium coals around a drip pan in a covered grill.
  • Test for medium-low heat above pan.
  • Place ribs, fat side up, on grill rack over drip pan but not over coals.
  • Lower grill hood.
  • Grill about 1-1/4 hours or until tender, turning once, and adding more coals as needed.
  • Meanwhile, for the sauce, combine brown sugar, vinegar, onion, mustard, garlic, honey, liquid smoke, and celery seed in a medium saucepan.
  • Bring to a boil.
  • Reduce heat and cook, uncovered, for 40 to 60 minutes or until slightly thickened, stirring occasionally.
  • Brush sauce over ribs occasionally during last 10 to 15 minutes of grilling.
  • Heat any remaining sauce until bubbly and pass around with ribs.
  • (I cook these ribs on my propane gas grill and they come out just fine.).

These are SOOOO good; fall of the bone tender and a spicy sweet homemade BBQ sauce. The low temperature cooking aspect is easily changed based on how long you have (I've baked for 5 hours before at a lower temp) but this is the basic cooking time/temp required. If you extend the cooking time, just drop the temperature a bit. I have to admit that I never measure the maple syrup, I just pour over until coated.

seasoning salt (or rib rub)
1 cup maple syrup
1/2 cup ketchup
3 tablespoons firmly packed brown sugar
