MY FAVOURITE RIBOLLITA (LA MIA RIBOLLITA PREFERITA)
There's often confusion as to what ribollita should actually be like. It's not like minestrone, as it isn't brothy and it has no pasta in it. It's actually more like pappa al pomodoro, as it's thick and based on bread. It's very much Italian 'peasant food' and would have been eaten a lot in the days of no central heating and lots of hard manual labour. I think this recipe embraces the heart and soul of what peasant cooking is all about - cheap, tasty power food.

- Add your fresh or dried and soaked beans to a pan of water with the bay leaf - this will help to flavour the beans and soften their skins. Squash the tomato, peel the potato and add both to the pan. Cook until the beans are tender - taste one to check they're nice and soft. Dried beans can take up to an hour, but check fresh ones after 25 minutes. Drain (reserving about half a glass of the cooking water), and discard the bay leaf, tomato and potato.
- Peel and finely chop your onions, carrots and garlic. Trim and finely chop the celery.
- Heat a saucepan with a splash of olive oil and add the vegetables to the pan with the ground fennel seeds and chilli. Sweat very slowly on a low heat with the lid just ajar for around 15 to 20 minutes until soft, but not brown.
- Add the tomatoes and bring to a gentle simmer for a few minutes.
- Add the cooked and drained beans with a little of the water they were cooked in, and bring back to the boil.
- Finely slice the cavolo nero (stalks and all) and add to the pan - it will look like loads, but don't worry as it will cook down.
- Tear the bread into chunks, then moisten with a little of the cooking water and stir it in too. The soup should be thick but not dry, so add a little more cooking water if you need to loosen it. Continue cooking for about 30 minutes - you want to achieve a silky, thick soup.
- Season the ribollita with sea salt and black pepper, and stir in 4 good lugs of good-quality Tuscan extra virgin olive oil before serving to give it a glossy velvety texture.
- Delicious served on a cold winter's day with lots and lots of Chianti!

- Place the olive oil in a deep pan and heat over medium-high heat. Stir in the onion, and cook until transparent, about 5 minutes. Mix in the carrots, celery, potatoes, zucchini, and leek. Stir and cook 5 minutes more. Pour in the hot water to cover the vegetables. Stir in the Swiss chard, Savoy cabbage, and kale. Cover, reduce heat to medium, and simmer for 1 hour.
- Place 1 can of beans in a blender or food processor bowl. Blend until smooth. Stir pureed beans into the vegetable mixture along with the second can of beans. Season to taste with salt and pepper. Reduce heat to low, and simmer for 20 minutes, stirring occasionally. Stir in the tomato puree.
- Prepare the soup by layering slices of bread with the vegetable mixture in a casserole or soup dish. Cover, and refrigerate for at least 8 hours, or overnight.
- To serve the soup, place in a pot, and reheat over medium heat. Serve hot.

RIBOLLITA WITH CABBAGE
In Tuscany region of Italy, the way to transform leftover bean and vegetable soup into the ultimate comfort food is to reheat the soup with dry or toasted bread, then blend it into a thick, comforting pap. This is called ribollita, which means "reboiled."

- Place the beans in a medium saucepan, and add 4 cups water, the unchopped onion half and the crushed garlic clove. Bring to a boil. Reduce the heat, add salt to taste, cover and simmer 1 hour. Remove the onion halves. Taste and adjust seasonings.
- Heat 2 tablespoons of the oil in a heavy soup pot, and add the chopped onion, carrots and celery. Cook, stirring often, until the onion is tender, about five minutes. Add the garlic and chili flakes, and stir together for 30 seconds to a minute until fragrant. Add the cabbage. Cook, stirring, until the cabbage wilts, three to five minutes. Add the tomatoes. Cook, stirring, until the tomatoes cook down and smell fragrant, five to 10 minutes. Season to taste with salt.
- Stir in the beans and their liquid, add the bouquet garni and another 2 cups of water, and bring to a boil. Reduce the heat, cover and simmer 30 minutes or until the beans are tender. Taste and adjust seasonings. Add the greens, raise the heat and simmer covered for another 15 minutes. The greens should be falling apart in the soup. Remove the bouquet garni.
- Meanwhile, preheat the oven to 300 degrees. Place the bread on the rack, and toast until dry but not browned, about 15 to 20 minutes. Break up into pieces. Remove about 1 cup of the beans and vegetables from the soup. Bring the remaining soup to a simmer, and add the bread. Submerge in the soup, and remove the soup from the heat. Let stand for 20 minutes until the bread is soft. Blend, using a hand immersion blender or the pulse action of a food processor. Return to the pot, add the beans and vegetables you set aside, and heat through. The ribollita should have the consistency of oatmeal. Dilute with water as necessary. Taste and adjust salt and pepper. Spoon the ribollita into bowls or onto soup plates, drizzle olive oil over each bowl and serve.

- In a large bowl, cover the beans with cold water by 1-inch and cover with plastic wrap. Allow to soak overnight in the refrigerator.
- Drain the beans and place them in a large pot with 8 cups of water, and bring to a boil. Lower the heat and simmer uncovered for 45 minutes. Add 1 teaspoon of salt and continue to simmer for about 15 minutes, until the beans are tender. Set the beans aside to cool in their liquid.
- Meanwhile, heat the oil in a large stockpot. Add the pancetta and onions and cook over medium-low heat for 7 to 10 minutes, until the onions are translucent. Add the carrots, celery, garlic, 1 tablespoon of salt, the pepper, and red pepper flakes. Cook over medium-low heat for 7 to 10 minutes, until the vegetables are tender. Add the tomatoes with their puree, the cabbage, if using, the kale, and basil and cook over medium-low heat, stirring occasionally, for another 7 to 10 minutes.
- Drain the beans, reserving their cooking liquid. In the bowl of a food processor fitted with a steel blade, puree half of the beans with a little of their liquid. Add to the stockpot, along with the remaining whole beans. Pour the bean cooking liquid into a large measuring cup and add enough chicken stock to make 8 cups. Add to the soup and bring to a boil. Reduce the heat and simmer over low heat for 20 minutes.
- Add the bread to the soup and simmer for 10 more minutes. Taste for seasoning and serve hot in large bowls sprinkled with Parmesan and drizzled with olive oil.
RIBOLLITA (VEGETABLE, BEAN AND STALE BREAD SOUP)

- Variations: For a sweeter soup, add chopped fennel to your mix. For autumn, add zucchini or butternut squash to your blend.
- Drain the beans and place in a pot with 4 cups chicken stock, 1 clove garlic, half an onion and some salt and pepper. Bring to a low boil, reduce the heat and simmer until tender, 30 minutes.
- Meanwhile, preheat the oven to 350 degrees F. Bake the bread until deeply golden and toasted. Store in foil.
- Heat 1/4 cup EVOO, 4 turns of the pan, over medium-high heat in a large Dutch oven. Add the chopped onions, carrots, celery, remaining 3 cloves garlic, chile flakes, bay leaf and herb bundle. Season with salt and pepper. Cook, partially covered, to soften, about 5 minutes. Add the wine, kale, cabbage and a little nutmeg. Stir. Wilt the greens, partially covered, 5 to 6 minutes more. Add the beans and their liquids and the tomato puree. Stir. Add 2 cups more stock (reserve 2 cups for the night you serve). Add the cheese rind to the soup. Simmer to combine flavors, 15 minutes. Remove 3 cups of the beans and vegetables, about half the soup, to food processor and puree. Then add back to pot. Cool and store the soup for a make-ahead meal.
- To serve, heat the soup over medium heat, add the bread to the soup and let it absorb the liquid. Thin the soup with the remaining 2 cups of stock. Taste to adjust seasoning. Remove the herb bundle, rind and bay leaf. The ribollita is done when a wooden spoon can stand straight up in the soup. Ladle into shallow bowls and garnish with a generous drizzle of EVOO, finely chopped raw onion and cheese. Leftover soup can be fried in olive oil in a skillet like potato pancakes or hash, and topped with over easy or fried eggs.
RIBOLLITA (TUSCAN WINTER SOUP) RECIPE
Steps:
- Gather the ingredients.
- Boil the beans in water to cover by about 2 inches (4 centimeters), adding more boiling water if need be to keep them submerged, and lightly salting them when they're almost done.
- At this point, sauté the onion, carrot, celery, and parsley in the oil in a heavy-bottomed pot.
- When the onion has become translucent, about 5 to 8 minutes, add the tomato paste and the cooking liquid from the beans.
- Add the kale, beet greens or chard, and potatoes.
- Stir in the cooked beans and season to taste with salt, pepper, and a sprig of thyme.
- Simmer until the potatoes are tender and can be pierced easily with the tines of a fork, about 10 to 15 minutes.
- Remove the thyme and discard.
- Take a serving dish that can be heated and fill it with alternating layers of thinly sliced bread and soup, making sure the bread is damp-until the soup is used up.
- Serve and enjoy!

- Chop all the produce.
- Set a large 7-8 quart saucepot over medium heat. Add 2 tablespoons olive oil to the pot. Add in the onions, carrots, celery, and garlic. Generously season with salt and pepper. Sauté the veggies for 10 minutes, stirring regularly.
- Meanwhile, preheat the oven to 400 degrees F. Set out a rimmed baking sheet. Tear the bread (sliced or unsliced) into chunks and place on the baking sheet. Drizzle with 2 tablespoon olive oil and toss well. Then spread the bread chunks out in an even layer. Toast in the oven for 8-10 minutes, flipping once. Set aside.
- To the soup pot, add in the vegetable broth, tomatoes, cannellini beans, parmesan, anchovy paste, oregano, bay leaf, and crushed red pepper.
- Partially cover the pot and simmer for 25-30 minutes, stirring every 5 minutes. Turn the heat down to medium-low if needed. (If the soup base starts to thicken too much, feel free to add in 1-3 cups of water.)
- Add in the chopped kale and toasted bread pieces. Stir well and simmer another 5 minutes, until the bread disintegrates into the broth. The texture should be thick like a stew. Taste, then salt and pepper as needed. Serve warm.

Ribollita is a hearty and healthy Tuscan soup made by adding bread to vegetable soup. It's an irresistibly delicious recipe that has been around for centuries. Ribollita has a long history in Tuscany, some people believe that the soup goes back to the Middle Ages. The soup gets it name from the Italian word for "reboiled", since the soup was originally made by taking day old vegetable soup and adding bread to thicken it. It was a meal made of very common and inexpensive ingredients, while also being hearty enough to fill you up. The combination of these factors is likely why the soup has been made for centuries.

- First take one of your onions, and chop it so that you have one cup of chopped onions.
- Heat 2 tablespoons in a large oven-safe pot or dutch oven over medium heat. Once heated, add the chopped onions, carrots, celery, and garlic. Season generously with salt and pepper, and let the vegetables sauté for about 10 minutes, until soft and just starting to gain a little color. You may want to reduce the heat a little once the veggies get going.
- Keep an eye on the sautéing vegetables while you slice the remaining two onions. You want to have round slices that will hold their shape and not fall apart. You can probably get 8-9 slices out of a large onion. Set aside.
- Drain and rinse one can of the beans, then place in a food processor to puree. If you don't have a food processor you can mash with a fork or potato masher. Pureeing the beans helps to give the soup its distinctive texture. Drain the rinse the second can of beans, but leave those beans whole.
- By now your vegetables should be nicely sautéed. Stir in the oregano, tomatoes, beans, and tomato paste, and let simmer for 2-3 minutes.
- Add 5 cups of vegetable broth to the pot, and bring the soup to a steady simmer. Add the parmesan rind, and let simmer for 20 minutes.
- Arrange your oven racks so that your pot will fit in your oven. Heat your oven to 500 degrees.
- Stir in the swiss chard or kale, then place the slices of bread on top of the soup, arranging them in a single flat layer so they do not overlap. I like to cut the slices of bread in half to make this easy.
- Next, arrange the onions on top the bread, letting them overlap slightly. You want the liquid of the soup to be just reaching the onions, if it isn't, go ahead an add more broth to the soup. Now take that 1/4 cup of olive oil, and brush half of it over the onions.
- Sprinkle half of the Parmesan on top.
- Bake uncovered for 20 minutes, then remove from the oven. Check the amount of liquid in the pot, adding more if necessary. You want the liquid to be just reaching those onions - it is better to have extra liquid than to have your soup dry out or overcook. Next brush the remaining olive oil over onions, and sprinkle with the remaining cheese. Return the soup to the oven for another 20-25 minutes, until the onions are golden brown.
- Remove the soup from the oven, and stir it up. It is meant to be very thick, but you can always add more broth if you find it to be too thick. Sometimes I just top off each bowl of soup with a few tablespoons of extra broth.
- Traditionally Ribollita is served with olive oil poured in the shape of the letter "C" on top, and no cheese. I however, I do like to sprinkle Parmesan over the soup. Please don't tell the Italians. I also garnish with some fresh basil with adds a burst of fresh flavor to the soup.
SAUSAGE RIBOLLITA SOUP
This is an adapted recipe from the March/April Eating Well Magazine. I added a pound of spicy Italian sausage and replaced the water with chicken broth for added richness. Quote from Eating Well: "Ribollita, a traditional hearty Tuscan soup, typically uses day-old bread to add body and thicken the broth. This ribollita recipe uses a bean mash, which keeps the soup gluten-free and adds fiber. Garnish with extra-virgin olive oil or pepper and grated Parmesan." This is a beautiful, healthy and fulfilling soup.

- Crumble sausage and fry in a pan until no longer pink. Drain on paper towels.
- Drain canned tomatoes, reserving the liquid. Dice the tomatoes. Using a potato masher, mash half the beans into a paste (add a bit of broth, if desired, to make mashing the beans easier). Set the tomatoes and beans aside.
- Heat 2 tablespoons oil in a Dutch oven over medium heat. Add leek and garlic; cook, stirring, until translucent and tender, 2 to 3 minutes. Do not brown. Season with 1/8 teaspoon pepper. Stir in carrots, celery and zucchini and the remaining 1 tablespoon oil; cook, stirring, until nearly tender, 3 to 5 minutes. Season with 1/8 teaspoon each salt and pepper.
- When the carrots and celery are nearly tender, stir in kale (or chard) and cabbage. Cover and cook, stirring occasionally, until wilted, 4 to 6 minutes. Add cooked sausage, potatoes, broth, water, the diced tomatoes and juice, the bean puree and whole beans, thyme and bay leaf. Bring to a simmer over medium heat. Season with celery seed, crushed red pepper and the remaining 1/4 teaspoon pepper and 1/8 teaspoon salt. Cover and cook, stirring occasionally and reducing the heat as necessary to maintain a gentle simmer, until all the vegetables are tender, 15 to 20 minutes.

- In a large Dutch oven or soup pot, heat olive oil over medium heat with garlic. Cook, stirring, until garlic is fragrant and very lightly golden. Add onion, leek, carrots, squash, turnip, and celery and cook, stirring, until slightly softened but not browned, about 5 minutes.

- Start the day before by soaking the beans in plenty of water.
- Drain the beans, cook them in water until soft, about 1 1/2 hour.
- In the meantime, chop all the vegetables and saute the onions, carrots, celery and garlic in the oil.
- Gently fry for about 30 minutes.
- Add broth from the beans + water to make a total of 10 cups.
- Add tomatoes, jalapeno pepper and spinach.
- Add salt and cook on low fire for about 20 minutes.
- Put the beans in the soup and cook on low fire for 40 minutes.
- I does not matter if the soup cooks longer, in fact you can start in the morning and have the soup on the stove the whole day.

- 1. In a large soup pot, heat 1/2 cup of the olive oil on medium. Add the onions, garlic, red pepper flakes and half of the carrots, celery and fennel. Cook until softened, about 10 minutes. Add the tomato paste cook and for 5 more minutes.
- 2. Add the chicken stock along with the remaining carrots, celery, fennel, 1 teaspoon kosher salt and 1/2 teaspoon black pepper. Cook for another 10 minutes.

Season with about 1 teaspoon more salt, or to taste, and a generous amount of black pepper.
