This recipe says spring. It is easy to prepare and even easier to eat. My family devours it and we are not dessert people. It is from the Company's Coming cookbook series.

Steps:
- Preheat oven to 350°F.
- Cream butter and sugar together in mixing bowl.
- Beat in eggs one at a time.
- Stir in sour cream and vanilla.
- Mix flour and baking soda together and fold into batter.
- Stir in rhubarb.
- Turn into greased 9x13-inch pan.
- Topping: Mix all ingredients together until crumbly.
- Sprinkle over top.
- Bake 30-40 minutes until done.

RHUBARB CRUMB COFFEE CAKE
Since rhubarb grows well in our frigid climate, I freeze a lot of it. I have plenty on hand to make this old-fashioned coffee cake and other rhubarb treats.

- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the dry ingredients; add to creamed mixture alternately with buttermilk. Stir in rhubarb. Pour into a greased 13x9-in. baking dish., In a small bowl, combine the flour, brown sugar and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle over batter. , Bake at 350° for 45-55 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

RHUBARB & LEMON CURD CAKE
A lemon sponge cake dotted with tender pink pieces of rhubarb and topped with decadent cream frosting

- Heat oven to 180C/160C fan/gas 4. Lightly butter a deep, round 20cm cake tin and line the base with a circle of non-stick baking parchment.
- Place the butter in a large bowl and beat with an electric whisk until light and fluffy, then add the caster sugar and lemon zest and beat again. Gradually add the eggs to the mixture, beating well with each addition, until fully combined. The mixture will begin to look glossy - if at any stage the mixture curdles, beat in a spoonful of ground almonds and continue to add the egg until it is all amalgamated.
- Stir in the ground almonds, then the flour, and fold everything carefully together using a large spoon. Fold through half the rhubarb, then transfer the mixture into the prepared cake tin and scatter with the remaining rhubarb. Finish with the demerara sugar sprinkled on top. Bake the cake for 45 mins, or until a skewer inserted into the middle comes out clean. (This may take up to 30 mins longer depending on how much liquid the rhubarb releases.) Transfer to a wire rack to cool slightly in the tin, then remove from the tin. When the cake is cold, make the topping.
- Whip the cream in a large bowl until it forms soft peaks. In a small bowl, loosen the lemon curd with about 1 tbsp water and carefully fold it through the cream, without overworking. Spread over the cake, drizzle with a little more lemon curd and serve immediately.

- Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan. Finely grate enough zest from lemons to measure 2 tablespoons. Cut lemons crosswise in half; squeeze juice from lemons to measure 1/4 cup. Save remaining juice for another use. , In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add 1 egg at a time, beating well after each addition. Beat in lemon juice and zest. In another bowl, whisk flour, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition., Transfer batter to prepared pan. Bake until a toothpick inserted near the center comes out clean, 50-60 minutes. Cool in pan 10 minutes before removing to a wire rack., Meanwhile, for topping, combine sugar and rhubarb in a small saucepan. Bring to a boil; reduce heat. Simmer until rhubarb is almost tender, 8-10 minutes. Add halved strawberries; cook until strawberries and rhubarb are softened. Serve with cake. If desired, dust with confectioners' sugar.

RHUBARB CREAM CHEESE COFFEE CAKE
I clipped this recipe out of Homemakers' Magazine years ago, always meaning to try it and never getting around to it. Well, I finally did try it and am sorry I didn't do so earlier. It is a delicious, moist cake with two scrumptious fillings - the bottom one is lemon-flavoured cream cheese, topped by fresh rhubarb, cooked to a jam-like consistency. They are then covered by a delicious streusel topping. I have adapted the instructions for the food processor, since that is what is used to put the cake together.

- In a small, heavy saucepan, combine the rhubarb, 1/2 cup of the sugar, and 1 slice cut from the lemon.
- Bring to a boil over high heat, stirring until the sugar melts.
- Reduce the heat to medium and simmer 12 to 13 minutes or until thickened and reduced to about 1/2 cup.
- Let cool.
- In the bowl of a food processor, combine the flour and 3/4 cup of the sugar.
- Add the butter and pulse until the mixture resembles coarse crumbs.
- Measure 1 cup of the mixture into a small bowl and add the walnuts and cinnamon.
- Set aside.
- Add the baking powder, baking soda, salt, sour cream, vanilla and one egg to the remaining flour/butter mixture in the food processor.
- Pulse until a soft, sticky dough is formed.
- With floured fingers, press the dough evenly over the bottom and 2 inches up the sides of a greased 10" springform pan.
- Wipe out the bowl of the food processor and add 1 teaspoons grated lemon rind, the cream cheese, 1/4 cup sugar and the remaining egg.
- Pulse until well blended.
- Spread the cream cheese mixture over the dough in the cake pan.
- Top with the rhubarb mixture.
- Sprinkle the walnut mixture evenly over the top.
- Bake in a 350 degree F oven for about 1 hour or until a knife inserted in the centre of the cake comes out clean.
- Place the pan on a wire rack and let cool for 15 minutes.
- Remove from the pan.
- Serve warm, cut into wedges and refrigerate any leftovers.

I found this recipe in an old Martha Stewart Magazine and it is wonderful. The crust is like that of a biscuit. The filling is then topped with a scrumptious crumb mixture. It does require many steps, but it is worth the work!

- Preheat oven to 350 degrees. Brush a 9x12x3 inch baking pan with butter and set aside.
- Make fruit sauce: Combine lemon juice, cornstarch, and 1 cup sugar in a medium saucepan. Add strawberries and rhubarb, cook stirring frequently, over medium heat, until liquid has thickened, 15 to 20 minutes. Transfer to a medium bowl and allow to cool.
- Make the crumb topping: Combine 3/4 cup sugar and 3/4 cup flour in a medium bowl. Melt 1/4 cup butter in a small saucepan over low heat. Drizzle butter over flour mixture, using your hands, mix until crumbly. Set aside.
- Make the cake batter: Whisk together remaining 3 cups flour and 1 cup sugar, baking powder, baking soda, and salt in a large bowl. Using a pastry knife or two forks, cut butter into flour mixture until it resembles coarse meal. In a separate bowl, mix eggs, buttermilk, and vanilla. Pour into flour mixture; stir to combine.
- Spread half the cake batter evenly into the prepared pan. Top with half the fruit sauce. Carefully spread the remaining batter over the fruit, and top with the remaining fruit sauce. Sprinkle with the crumb topping.
- Bake until cake is golden brown and springs back when touched in the center about 1 hour. Transfer pan to a wire rack to cool slightly. Serve warm or at room temperature, cut into squares.

- Combine rhubarb, strawberries and lemon juice in saucepan.
- Cover and cook for about 5 minutes on medium heat.
- Combine sugar and cornstarch.
- Stir into strawberry mixture.
- Bring to boil, stir constantly until thickened, remove from heat.
- CAKE.
- In large bowl, combine flour, sugar, baking powder, baking soda and salt.

- 1. In a saucepan, mix sugar and corn starch. Add the rhubarb, lemon juice and sugar; stir well to combine. Cook until thickened, about 3 minutes; Cool.
- 2. In a large mixing bowl; mix flour, sugar, baking soda, baking powder and salt.
- 3. Cut in butter.
- 4. Add eggs, buttermilk and vanilla; stir well. Spread half of batter into a greased 9x13 inch pan.
- 5. Spread rhubarb filling on top of cake batter.
- 6. Spoon the remaining cake batter over the rhubarb filling. Making sure to cover the filling. For topping, combine sugar and flour; cut in the butter till forms a crumb. Sprinkle evenly on top of cake.
- 7. Bake at 350 degree F for 45-50 minutes or until a toothpick inserted near the center comes out clean and the cake is golden brown. Cool on a wire rack.
