Spoon up some goodness with our Asian twist on a classic dessert, made with rhubarb, plums and Honey Clusters cereal.

2 cups frozen chopped rhubarb
2 cups sliced pitted peeled fresh purple plums
2/3 cup granulated sugar
2 cups Original Bisquick™ mix
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
Juice and grated peel of 1 lime
1 1/2 cups crushed Fiber One™ Honey Clusters® cereal
1/2 cup butter, melted
1/2 cup turbinado sugar (raw sugar) or sparkling sugar
Ice cream or whipped cream, if desired

Steps:

  • Heat oven to 400°F.
  • In large bowl, stir together rhubarb, plums, granulated sugar, 1/2 cup of the Bisquick mix, the ginger, cinnamon and lime juice. Pour into ungreased 9-inch square (2-quart) glass baking dish.
  • In medium bowl, stir together remaining 1 1/2 cups Bisquick mix, the cereal, melted butter, turbinado sugar and grated lime peel until crumbly. Sprinkle over rhubarb-plum mixture.
  • Bake 25 to 30 minutes or until topping is golden brown and rhubarb-plum mixture is bubbly. Serve warm with ice cream.

85 g (1/3 cup plus 1 Tbsp) sugar
85 g (3/4 stick) butter, if using unsalted, add a pinch of salt to the flour
1 egg, beaten
115 g (1 cup minus 2 Tbsp) all-purpose flour
1 1/2 tsp baking powder
about 1 lb (500 g) stalks of rhubarb (about 2 1/12 to 3 cups)
1 tsp fresh lemon juice
⅔ cup (135 g) sugar, add a little more if you like a sweeter flavor
2 tsp cornstarch

Steps:

  • Wash the rhubarb stalks and chop into 1" pieces.
  • Stir the cornstarch into the sugar, then add it to the rhubarb along with the lemon juice, and toss gently
  • Place the sugared rhubarb into the buttered pie dish.
  • Sift the flour and baking powder into a bowl so that they are evenly mixed.
  • Cream the sugar and butter until light and fluffy. Beat in the egg, then gently fold in the flour and baking powder until well combined, without over mixing.
  • Drop large spoonfuls of the dough onto the rhubarb in the pie dish.
  • Bake for 35 to 45 minutes (depending on your oven) or until the topping is baked through, and golden brown. Remove from the oven. Allow the easy rhubarb cobbler to cool slightly before serving.

¾ cup white sugar
2 tablespoons cornstarch
4 cups chopped rhubarb
1 tablespoon water
1 tablespoon butter, diced
1 teaspoon ground cinnamon
1 cup all-purpose flour
1 tablespoon white sugar
1 ½ teaspoons baking powder
¼ teaspoon salt
¼ cup butter
¼ cup milk
1 egg, beaten
2 tablespoons white sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9 inch square baking dish.
  • In a saucepan, mix sugar and cornstarch for filling. Stir in the rhubarb and water. Bring to a boil. Cook and stir for 1 minute. Transfer to the prepared baking dish. Dot with butter, and sprinkle with cinnamon.
  • In a medium bowl, sift together flour, sugar, baking powder, and salt for topping. Cut in the butter until the mixture resembles coarse crumbs.
  • In a small bowl, mix together milk and egg. Add all at once to dry ingredients, stirring just to moisten. Drop by teaspoonfuls on top of the rhubarb mixture. Sprinkle with sugar.
  • Bake for 20 minutes in the preheated oven, until crisp and lightly browned.

BISCUIT TOPPING:
6 cups plums, sliced
1 cup rhubarb, chopped
2 teaspoons lemon juice
1 vanilla bean, split
1/2 cup granulated sugar
2 tablespoons cornstarch or sugar
1 pinch salt
1 pinch ground cloves
1 1/2 cups AP flour
3 tablespoons granulated sugar
1 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup cold unsalted butter, cubed
3/4 cup buttermilk

Steps:

  • In large bowl, toss together plums, rhubarb and lemon juice; set aside. In small bowl, scrape seeds from vanilla bean into sugar; rub together until fragrant. Stir in flour, salt and cloves. Add to fruit mixture and toss to coat. Transfer to 8-inch square baking dish. BISCUIT TOPPING: In bowl, whisk together flour, sugar, baking powder, baking soda and salt. Using pastry blender or 2 knives, cut in butter until in coarse crumbs. Using fork, stir in buttermilk to make soft, sticky dough. With spoon, drop in 9 evenly spaced mounds over fruit mixture. Bake on baking sheet in bottom third of 375°F oven until bubbly and topping is light golden and no longer doughy underneath, 55 to 60 minutes. VARIATION: PLUM AND RHUBARB COBBLER WITH TOASTED OAT BISCUIT TOPPING BISCUIT TOPPING: In skillet, toast 1/2 cup large-flake rolled oats over medium-low heat, stirring often, until lightly toasted, 5 to 7 minutes. Let oats cool. Replace 1/2 cup of the all-purpose flour with toasted oats. Substitute 1/4 cup packed brown sugar for the granulated sugar. Add 1/4 teaspoon ground nutmeg. PLUM AND RHUBARB COBBLER WITH CORNMEAL BISCUIT TOPPING BISCUIT TOPPING: Replace 1/2 cup of the flour with cornmeal. Rub 1 teaspoon finely grated lemon zest with sugar before combining.

This is an easy cobbler to put together and one I have been making for years, I find that one cup of sugar is the perfect amount for my taste if you prefer a less sweeter and more tart taste then reduce the sugar by a couple of tablespoons.

4 1/2 cups rhubarb, cut into 1/2-inch pieces
1 cup sugar
1 1/4 cups flour
3 tablespoons sugar
1 tablespoon baking powder

1/3 cup cold butter, cut into pieces (no subs please!)
1 egg, beaten
1/2 cup half-and-half cream or 1/2 cup full-fat milk

Steps:

  • Set oven to 375 degrees F.
  • Grease a 9-inch baking dish.
  • Mix the rhubarb and 1 cup sugar, and place in the baking dish.
  • To make the cobbler batter: combine flour, 3 tablespoons sugar, baking powder and salt.
  • Cut in the cold butter to make a crumbly mixture.
  • In a small bowl, whisk/combine the egg and half and half cream.
  • Add to the dry ingredients; stir with a fork to create a stiff batter.
  • Drop by spoonfuls on top the rhubarb/sugar mixture in the baking dish (does not have to cover completely).
  • Bake for 35-40 minutes.
  • Serve warm topped with ice cream.
  • Delicious!

A traditional creamy pudding with delicious fruit compote stirred through - a quick and indulgent dessert

400g rhubarb , cut into small cubes
thumb-sized piece piece ginger , peeled and finely chopped
75g caster sugar
100ml white wine
100g light mascarpone
300ml double cream
50g icing sugar
2 pieces crystallised ginger , finely chopped

Steps:

  • Put the rhubarb, root ginger, sugar and white wine in a pan, bring to the boil and simmer on a low heat for 4-5 mins until the rhubarb has softened. Remove from the heat and set aside to cool.
  • In another bowl, whisk the mascarpone, double cream and icing sugar to soft peaks. Remove 4 tbsp cooled rhubarb and mash with a fork, then fold into the cream mixture.
  • Divide the rest of the poached rhubarb between 4 glasses, reserving a bit. Spoon over the cream mixture, then top with a few pieces of crystallised ginger and the rest of the rhubarb. Can be chilled for several hours before serving.

This recipe is from the Colorado Cache cookbook. I was given some rhubarb by a friend several years ago, and when I looked for a recipe to use it, this is the one I came up with. It has since become one of our favorites and is a recipe that I like to fix for Easter dinner.

1 cup flour
1 cup brown sugar
3/4 cup oatmeal
1/2 cup butter, melted
1 teaspoon cinnamon
1 cup sugar
1 cup water
3 tablespoons cornstarch
4 cups rhubarb, sliced
1 teaspoon vanilla

Steps:

  • Preheat oven to 350°.
  • Combine flour, brown sugar, oatmeal, butter and cinnamon.
  • Press half the mixture into a greased 8 inch square baking dish. Set remainder aside.
  • Combine sugar, water and cornstarch in a saucepan and cook until very thick.
  • Stir in rhubarb and vanilla, then pour over the oatmeal mixture in the baking dish.
  • Top with remaining oatmeal mixture.
  • Bake for one hour.
  • This is very good served warm with a scoop of vanilla ice cream.

vanilla ice cream

Steps:

  • In medium bowl, combine sugar and salt.
  • Cut in butter til mixture is crumbly.
  • Add flour, cinnamon and baking powder and mix til coarse crumbs.
  • Remove and reserve 1 cup of this mixture.
  • Combine 1 beaten egg and almond extract.
  • Stir into remaining flour mixture to form a soft dough.
  • Pat dough evenly into a 9" square baking dish.
  • (*Dough may be sticky, flour hands if needed.).
  • Bake at 350º for 10 minutes.
  • Arrange plums over baked mixture.
  • Combine whipping cream, 1/4 cup sugar 1 beaten egg, vanilla and 1/2 teaspoons almond extract, beat well.
  • Pour cream mixture over plums.
  • Sprinkle with reserved crumb mixture.
  • Mix sugar and cinnamon, sprinkle over crumb mixture.
  • Bake at 350º for 45 minutes or until browned and bubbly.
  • Serve warm with ice cream!
  • 8 servings, 4 at our house!
