3 Tbsp vegetable oil
12 cloves garlic, minced
4 c cooked rice, cooled and dry
¼ tsp salt
Dash fresh ground pepper
1 scallion, thinly sliced (for garnish)
4 eggs (optional, for serving)

Steps:

  • In a large wok or skillet, heat the oil over medium high heat. Reduce the heat to medium and add the minced garlic. Stir fry the garlic for 2-3 minutes, until it turns a light golden color. Carefully remove the garlic from the pan, leaving the garlic-infused oil behind. Drain the fried garlic on paper towels until cool.
  • Add the cooked rice to the garlic oil in the wok, stirring to coat all the grains with oil. Spread the rice out in the wok, covering as much surface area of the hot pan as possible. Let the rice cook, undisturbed, for 3-5 min. Stir the rice well, then spread it out again and cook, undisturbed for 3-5 min more. Continue this process until the rice is cooked to your liking.
  • Once the rice is golden and starting to get crispy, return the fried garlic to the pan (saving some for garnish, if desired).
  • Season the rice with salt and pepper and transfer it to a serving dish.
  • Garnish with extra fried garlic and sliced scallions.
  • If desired, serve the rice topped with fried eggs.

A staple ingredient in Filipino style breakfast plates, also known as "silogs". There are many varieties of silogs, but one thing is always certain. You MUST have garlic fried rice to pair with your eggs and choice of breakfast meat!!! NOTE: This is a good base to start from when making fried rice; you can always add more ingredients to your preference.

Number Of Ingredients 6

2 tablespoons vegetable oil
3 tablespoons butter, divided
6 garlic cloves, finely diced
4 cups cooked white rice
garlic salt, to taste
ground black pepper, to taste

Steps:

  • Heat the oil in a large skillet over medium-high heat.
  • Saute garlic until lightly browned, being careful not to burn it. Remove with slotted spoon and set aside.
  • Stir in the cooked white rice, and season with garlic salt and pepper, adding to taste.
  • Cook and stir until heated through and well blended, about 3 minutes. If it looks like it needs more moisture, add another tablespoon of butter to "help it along".
  • Serve and enjoy. You can return the browned bits of garlic to the cooked rice, if preferred.

I love rice. I also love garlic and cook with it a lot. It took a few tries to get the correct measurements for this recipe in order to submit it. I don't always use measurements when I cook. This is very easy to make. This is a very moist and buttery rice with a good, but not overpowering garlic flavor. For rice with less moisture, use less water and for a less garlicky flavor, use less garlic. I read in an article on an internet medical site, that if garlic is cooked too long, it loses some of its healthful benefits. They said not to cook garlic any longer than 3-6 minutes. I have also noticed that it loses some of its flavor if it's cooked too long. Therefore, I add the garlic towards the end of the cooking time to get more of a garlic flavor and more healthful benefits from the garlic. I will sometimes have this for breakfast with a fried egg. I just put some of the rice on a plate and put a fried egg on it and mix it together. It is really good that way. I also serve the rice with gravy over it as a side dish with some meat. It is also good just by itself. The chicken bouillon is optional but it adds to the flavor of the rice. If you have to or are watching your sodium intake, you might want to omit the bouillon or use less of it. I have found that jasmine rice gives the best results for this recipe but you can also use white rice. Prep and cooking times are estimates. NOTE: Due to the first review, I have edited this recipe. 1/3 cup margarine (or soft margarine) or 1/3 cup butter (or soft margarine)
1/2 cup white rice (or jasmine)
1 -2 chicken bouillon cubes (depending on size) (optional) or 3 teaspoons chicken bouillon granules (or kind of powdery)
1 1/2 cups water or 1 1/2 cups chicken broth
2 -3 tablespoons chopped garlic (or minced)

Steps:

  • Melt the butter or margarine in a 10" skillet over med-high heat.
  • Add the rice and stir.
  • Add the bouillon cube(s) and stir until softened or dissolved.
  • I use a spoon and break the bouillon cube(s) apart while it is dissolving so that it dissolves faster.
  • Watch closely so that the rice does not start to brown.
  • You might need to lower the heat if the rice starts to brown or appears to be cooking too fast.
  • Add the water and stir.
  • Cover with a lid and bring it to a boil.
  • Lower the heat to med to med-low and cook for 10 minutes or until rice is almost tender and a lot, but not all, of the water/butter mixture has been absorbed.
  • This comes out better if it is "slow cooked".
  • Add the garlic and stir.
  • Put the lid back on the skillet and continue cooking for 5 more minutes or until the rice is tender and all of the water has been absorbed.
  • There may still be some melted butter at the bottom of the skillet, but that is okay.
  • Stir well and turn the burner off.
  • Let the skillet sit on the burner until you are ready to serve the rice.

6 tablespoons butter, divided use
6 garlic cloves, minced
1 teaspoon lemon juice
1 medium onion, finely chopped
1 cup frozen peas and carrot
1/2 cup diced ham (or cooked chicken)
3 eggs, beaten
3 cups cooked rice, chilled
2 tablespoons soy sauce (to taste)
salt and pepper
2 scallions, diced

Steps:

  • Melt 2 tablespoons of butter in a small glass dish in the microwave. Add the minced garlic and lemon juice to the melted butter and stir to combine. Set aside to allow the flavors to mingle.
  • This dish comes together so fast that EVERYTHING needs to be chopped, measured, and ready to add. Chop the onions and scallions then measure out the peas/carrots, ham, rice, and soy sauce. Finally, you should beat the eggs in a small bowl.
  • In a large, non-stick skillet, melt the remaining 4 tablespoons of butter over medium heat. Add the onions and sauté until soft - about 4 to 5 minutes. Add the peas and carrots and cook about 3 minutes then add the diced ham or chicken. Cook 1 minute. Push all of the contents of the skillet to one side to keep them from cooking too much. On the empty side of the skillet, add the beaten eggs. Season with a little salt and pepper and scramble until just set. Integrate the eggs with the veggies and move everything back to the edge of the skillet. Quickly add the garlic mixture to the pan and use a spatula to break it up. Cook it about 1 minute or so (longer if you do not want an intense, in-your-face garlic bite). If you are worried about the strong flavor of garlic, you can add the same amount of garlic but add it with the peas and carrots. This will give the garlic ample time to mellow and sweeten by the name everything is cooked.
  • Add the cold, cooked rice and mix it in with the other ingredients. Add the soy sauce and stir to combine. Stir it every 30 seconds for about 2 minutes. Add the scallions and stir. Taste for seasoning and add salt, pepper, and/or additional soy sauce, if desired. Stir one last time and transfer everything to a serving bowl.
