Grilled Rhubarb and Strawberry Compote with Grilled Pound Cake image

We start to see giant leaves and shoots of rhubarb in spring. What better way to celebrate the vibrant ruby colored stalks than to grill them in a foil pack? Paired with strawberries and a few other ingredients, the rhubarb cooks down into the perfect sweet and tangy compote for grilled pound cake.

Number Of Ingredients 9

1 pound rhubarb stalks (about 4 large), sliced into 1/2-inch pieces
1 pound strawberries, hulled and halved (quartered if large)
1 teaspoon vanilla extract
2/3 cup plus 2 tablespoons sugar
Zest of 2 oranges
Kosher salt
1/2 cup heavy cream
1/2 cup sour cream
8 slices pound cake

Steps:

  • Preheat a grill for cooking over medium-high heat.
  • Combine the rhubarb, strawberries, vanilla extract, 2/3 cup sugar, zest of 1 orange and 1/8 teaspoon salt in a large bowl. Lay out 2 large sheets of heavy-duty foil (or doubled layers of regular foil). Divide the rhubarb-strawberry mixture evenly between the 2 sheets of foil. Bring the long ends together and fold twice to seal; fold in the short sides to seal, leaving room for steam. Place the 2 foil packs on the grill. Cook, uncovered, 15 minutes. Remove from the grill and lower the grill temperature to medium. Carefully open the foil packs, making sure to avoid contact with the hot steam. Let cool long enough so the packets are not steaming before serving.
  • Meanwhile, using an electric mixer, beat together the heavy cream, sour cream, remaining orange zest and 2 tablespoons sugar in a large bowl until thick and fluffy. Keep refrigerated until ready to serve.
  • Grill both sides of each pound cake slice, 1 to 2 minutes per side, using a metal spatula to flip and remove them.
  • Serve each grilled pound cake slice with some compote and a dollop of the cream.

3/4 pound rhubarb, cubed (about 3 to 4 cups)
3/4 cup granulated sugar

Steps:

  • In a saucepan, combine rhubarb with sugar over low heat. When the rhubarb starts to soften, but before it falls apart, about 5 minutes, use a slotted spoon to transfer it to a bowl.
  • Cook down the remaining liquid in the pan until it thickens and turns syrupy, about 5 minutes longer. (This condenses and intensifies the rhubarb flavor.) Add the syrup to the bowl with the rhubarb and let cool. Compote will keep for at least a week in the fridge.

8 stalks rhubarb, cut into 1/2-inch pieces
3 apples - peeled, cored, and diced
½ cup white sugar
¼ cup water
⅔ cup white sugar
¼ cup margarine
1 egg
1 teaspoon vanilla extract
¾ cup milk
1 ½ cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
1 ½ cups rolled oats
½ cup margarine
½ cup white sugar
1 teaspoon ground cinnamon

Steps:

  • Combine rhubarb, apples, 1/2 cup white sugar, and water together in a saucepan; bring to a boil. Cook and stir rhubarb mixture until rhubarb is tender and compote is thickened, about 10 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
  • Mix 2/3 cup white sugar, 1/4 cup margarine, egg, and vanilla extract together in a bowl. Stir milk and stir into the sugar mixture. Whisk flour, baking powder, and salt together in a separate bowl. Mix flour mixture into wet mixture until batter is just moistened; pour into the prepared baking dish. Spoon enough compote over cake to make about 1/2-inch-thick layer, reserving any leftover compote for another use.
  • Stir oats, 1/2 cup margarine, 1/2 cup white sugar, and cinnamon together in a bowl until crumbly; sprinkle over compote layer.
  • Bake in the preheated oven until a toothpick inserted in the middle of the cake comes out clean, 30 to 40 minutes.

It is also good used in a trifle or make individual desserts in a wide-mouth wine glass; cut pieces of pound cake or angel cake, add some sauce, scoop of ice cream and more sauce on top. Add a dollop of whipped cream and some crushed nuts on top to make it decadent. From a magazine clipping a long time ago.

Sometimes the simplest recipe can be a star if it's done properly. Rhubarb suffers from being over-boiled and smashed to a pulp, but if you cook it gently in the oven with just sugar and no water, it will slowly release its juice, keep its chunky shape - and taste wonderful.

1 pint strawberries, sliced
1 cup coarsely chopped rhubarb
1/2 cup sugar
2 teaspoons cornstarch
2 Tablespoons water
1 teaspoon vanilla extract
Squeeze of lemon juice
1/2 teaspoon ginger
Pinch salt
1/2 store bought angel food cake, cut in 5 slices
3 Tablespoons butter,
meltedIce cream, if desired

Steps:

  • 1. Add strawberries, rhubarb, and sugar to a small sauce pan set over medium heat. Cook until rhubarb and strawberries begin to break down and soften, stirring often, about 5 minutes. In a small bowl whisk together cornstarch and water then add to berry mixture. Continue to cook until mixture is thickened and coats the back of a spoon. Stir in vanilla, ginger, lemon juice, and salt and cook for an additional 1 to 2 minutes. If desired, smash berries and rhubarb or puree in a blender for a completely smooth texture. I like to leave some chunks of strawberries, but feel free to do what you need to do! Keep warm until ready to serve. 2. Meanwhile, use a pastry brush to coat both sides of angel food slices with butter. Place on grill over prepared coals. Do not cover. Grill for about 1 minute on each side, or until slightly charred all the way around. 3. To serve, place slices of angel food cake on a plate. Top with warm strawberry rhubarb compote and a scoop of ice cream. Enjoy!

1 kg rhubarb stalks (stalks only, washed and trimmed at each end)
1 cup sugar
1/2 lemon
1 tsp vanilla paste (or extract, or 1-2 vanilla pods)
3/4 cup water

Steps:

  • Chop the rhubarb stalks into small pieces (see photo).
  • In a large heavy based pot, add the chopped rhubarb stalks along with all the other ingredients, and cook over a medium heat, stirring until the sugar is dissolved. Increase the heat to medium-high and cook, stirring occasionally, until rhubarb is completely softened and has broken down with some small pieces still intact (but soft)- approximately 20-25 minutes. Once it starts to thicken, keep an eye on it so it doesn't catch on the bottom of the pot. Reduce the heat to low and taste. Add more sugar if required (1-3 more tablespoons) as each batch is slightly different depending on the rhubarb. Cook a few more minutes until compote has thickened and there are only very small pieces left and most of the rhubarb is stewed.
  • Remove from the heat and discard the lemon and vanilla pod (if using). Allow compote to cool to room temperature before putting into sterilised jars or clean containers and placing in the fridge. Makes approximately 4 cups.

1 cup white sugar (add more or less depending on your taste)
1/4 cup water
6 cups fresh rhubarb, chopped in 1-inch pieces
1 strip orange rind, 1 inch wide x 3 inches long

Steps:

  • This is prepared in a double boiler. Put a few inches of water in the bottom part of the pot and bring to gentle boil.
  • In top of double boiler over direct heat, bring sugar and water to boil. When the mixture is boiling, place the pot over the gently simmering water in bottom of double boiler.
  • Add the chopped rhubarb and orange rind to the sugar water mixture, stir.
  • Cover and cook, without stirring, for 15 to 20 minutes or until rhubarb is tender. The pieces will remain whole!
  • Turn off heat; allow the rhubarb to cool in the pan over hot water. Discard orange rind.
  • Enjoy!
  • I like to serve this warm or cold, either way it is delicious!
  • Serve as is or, just before serving, stir in 1 cup (250 mL) sliced strawberries, cubed mango or pineapple tidbits, good to serve over ice cream, frozen yogurt or a slice of plain cake.
