1 cup panko (Japanese breadcrumbs)
1/4 cup plus 2 tablespoons packed light brown sugar
2/3 cup plus 1/4 cup granulated sugar
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground ginger
Pinch of ground cloves
5 stalks rhubarb, cut into 1-inch pieces (about 4 cups)
1 teaspoon fresh lemon juice
1/2 cup roughly chopped almonds with skins
4 tablespoons cold unsalted butter, cut into small pieces, plus more for the skillet
Strawberry ice cream, for serving

Steps:

  • Preheat a grill to medium low. Whisk the panko, brown sugar, 1/4 cup granulated sugar, the cinnamon, allspice, ginger and cloves in a medium bowl until combined. In another bowl, toss the rhubarb with the remaining 2/3 cup granulated sugar and the lemon juice to coat.
  • Butter a shallow 8-inch ovenproof skillet or flameproof baking dish. Sprinkle 3 tablespoons of the breadcrumb mixture in the bottom of the skillet. Top with the rhubarb, then sprinkle with the remaining crumbs and the almonds. Dot with the cut-up butter.
  • Put the skillet on the center of the grill; close the lid or place a disposable roasting pan over the skillet. Grill until the filling is bubbly and the topping is golden brown and crisp, 15 to 20 minutes. Let cool slightly, about 10 minutes. Serve warm and top with strawberry ice cream.

8 ounces light brown sugar
1/2 teaspoon ground mixed spice
1/2 teaspoon ground ginger
3 1/2 ounces stale plain cake or 3 1/2 ounces brioche bread, crumbs
3 ounces butter, melted
18 ounces rhubarb
2 cooking apples
4 tablespoons orange juice

Steps:

  • Mix the sugar and spices.
  • Add 3 tbsp of this into the crumbs and pour over the butter.
  • Trim the rhubarb and cut into chunks.
  • Peel, core and slice the applies thinly and add to the rhubarb and the rest of the sugar and spice.
  • Butter a shallow pie dish and put half the crumbs in the bottom.
  • Add the fruit and pour over the juice.
  • Put the rest of the crumbs on top.
  • Bake for 20 minutes, loosely covered with foil, in an oven preheated to 108 deg Celsius 350 deg fahrenheit.
  • Remove the foil and bake for 20 minutes more until the fruit is tender and top golden.
  • Serve with whipped cream or vanilla ice cream.

1 1/2 to 2 sticks salted butter, cut into pieces, plus more for greasing
8 slices hearty wheat bread, diced
3 apples, preferably Granny Smith, peeled, cored and diced
1 1/2 packed cups brown sugar, plus more if needed

Steps:

  • Preheat the oven to 375 degrees F. Generously butter a 9-by-13-inch rectangular baking dish.
  • Place half the diced bread in the baking dish, and then sprinkle on half the diced apples, half the brown sugar and half the butter. Repeat with another layer of bread, apples, brown sugar and butter. End by sprinkling 1/2 cup water all over the surface, a spoonful at a time.
  • Bake, covered in foil, until the apples are tender, about 45 minutes. Remove the foil and bake for an additional 10 to 15 minutes to brown.

12 ounces rhubarb (2 to 3 stalks), trimmed
1 loaf brioche or other soft bread (6 ounces), crusts removed
8 tablespoons unsalted butter (1 stick), melted, plus more for pan and topping
1 Granny Smith apple, peeled, cored, and sliced into quarter-inch-thick wedges
1/2 cup plus 2 tablespoons dark-brown sugar
1/4 teaspoon ground cinnamon
Pinch ground nutmeg
Juice and zest of 1/2 lemon

Steps:

  • Heat oven to 375 degrees. Cut rhubarb into 1/4-inch-thick cubes, yielding about 3 cups. Tear brioche into 1/2-inch pieces, yielding 3 to 3 1/2 cups.
  • Butter a shallow 1-quart baking dish. In medium bowl, combine melted butter and brioche; cover bottom of dish with 1 to 1 1/2 cups brioche. In another bowl, combine rhubarb, apple, brown sugar, cinnamon, nutmeg, and lemon juice. Grate zest; add to mixture. Let sit until juices begin to run, about 5 minutes. Spread half of rhubarb mixture over brioche. Sprinkle with 1 cup brioche. Add remaining rhubarb mixture and juices; cover with remaining 1 cup brioche. Dot with 1 tablespoon butter. Spoon 6 tablespoons warm water over top.
  • Cover; bake 25 to 35 minutes on the middle rack, until rhubarb is tender. Increase heat to 400 degrees; uncover, and bake 10 to 15 minutes more, until rhubarb is soft, top is crusty, and juices begin to bubble at edges of baking dish. Serve warm with vanilla ice cream.

My mother made this all through my childhood. It's lighter and crunchier than a cobbler. She made her own bread crumbs by drying the bread in a low oven until crispy and running it through the food processor. They could also be broken into small pieces and cut up smaller with a knife. More simply, store-bought unseasoned bread crumbs are a fine substitution.

6 apples, Granny Smith or Braeburn, peeled and cored
3 lemons, zested and juiced
1 1/2 cups unseasoned bread crumbs
1/2 teaspoon kosher salt
1 1/4 cups dark brown sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmet
1/8 teaspoon ground allspice
1/4 teaspoon ground cloves

Steps:

  • Preheat the oven to 350 degrees F with a rack in the center of the oven.
  • Place the apples on a flat surface, cut them in half, and then into thin slices. Put them in a medium bowl and coat them with a light layer of zest from 1 of the lemons and all of the lemon juice.
  • In a separate bowl, mix together the butter and bread crumbs. Season with salt. Set aside.
  • In a third bowl, combine the brown sugar, cinnamon, nutmeg, allspice and cloves. Mix to blend and add the apple slices.
  • Grease each baking dish with the remaining butter. Layer the bottom with the apples and cover with the bread crumb mixture.
  • Cover the dishes tightly with aluminum foil and place in the center of the oven. Bake until the apples are tender when pierced with the tip of a knife, 30 to 45 minutes. Remove the foil, raise the oven temperature to 425 degrees F and bake until the top browns. Serve immediately.

1 1/2 teaspoons freshly grated nutmeg
1/2 cup sugar
3 cups 1/4-inch bread cubes
2 tablespoons melted butter
Grated rind of 1 lemon
2 pounds large apples
2 to 4 tablespoons cold water (optional)

Steps:

  • Preheat the oven to 375°F.
  • Combine the nutmeg and the sugar and set aside 2 tablespoons. Put the bread cubes in a bowl and toss with the rest of the sugar mixture, the melted butter, and the lemon rind.
  • Peel, core, and slice the apples into fairly thick wedges. Line the bottom of a heavy 1 1/2-quart casserole with 1 cup of the bread cubes. Layer half of the apples over the bread and top with 1/2 cup of the bread cubes. Layer the rest of the apples in the casserole and sprinkle with water. Cover with the rest of the bread cubes and evenly sprinkle the reserved 2 tablespoons of sugar over the top. Put the lid on the casserole or cover tightly with foil. Bake in the center of the preheated oven for 40 minutes. Take the lid off the betty, and bake for 10 to 15 minutes longer, or until apples are tender and the topping is brown.
