German Salad Dressing for Lettuce Salad (Salatsauce) image

Try this simple German salad dressing made with heavy cream, lemon juice, and sugar on sweet butter lettuce for a continental taste treat.

For the Dressing:
1/4 cup cream (heavy, or half-and-half )
2 teaspoons lemon juice (fresh)
2 teaspoons sugar
Milk, if necessary
For the Salad:
6 to 8 cups salad greens (crisp, washed and dried, torn into bite-size pieces)
Optional: sliced or chopped tomatoes, or other ingredients you like

Steps:

  • Gather the ingredients.
  • In a large bowl, whisk together 1/4 cup heavy cream or half-and-half, 2 teaspoons fresh lemon juice and 2 teaspoons sugar until the sugar dissolves.
  • Add a little milk to thin, if necessary.
  • Add salad greens and tomatoes and any other ingredients shortly before serving and toss to coat.
  • Enjoy!

A wonderful dressing that goes well with almost anything. A nice balance of sweet, sour, and spice. It comes from a 55 year old German cookbook that my father gave me many years ago.

1 tablespoon powdered sugar
2 teaspoons Worcestershire sauce
2 teaspoons ketchup (try organic, much better)
1 1/2 tablespoons vinegar
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon prepared mustard
1 dash pepper
1/4 teaspoon Tabasco sauce
1 1/2 tablespoons lemon juice

Steps:

  • Mix ingredients one at a time and in the order given.

Thanksgiving Dressing image

My now 79 year old father always makes the dressing for Thanksgiving every year and has never used a written recipe. He says he just makes it the way his mother did! I finally sat down with him one Thanksgiving and wrote down what he did, and this is the result. It makes a baked, moist bread-like dressing that freezes well and is absolutely out of this world!

6 cups cornbread, crumbled (not sweet cornbread)
1 (8 ounce) package cornbread stuffing mix
2 (10 1/2 ounce) cans cream of chicken soup
2 (10 1/2 ounce) cans cream of celery soup
2 (10 1/2 ounce) cans chicken broth
2 cups celery, chopped
1 large onion, chopped
1/2 cup butter
1 teaspoon italian seasoning
1/2 teaspoon oregano
1 tablespoon parsley
1/2 teaspoon basil
1/2 teaspoon sage
pepper

Steps:

  • Note that the 6 cups of cornbread is a guess. The recipe format wouldn't let me enter one large (10-12 inch) skillet of baked cornbread, crumbled.
  • Cook celery and drain.
  • Heat soups and broth, adding the cup of butter to the broth.
  • Note: If you wish, you can cook the giblets from the turkey and use that broth in place of the 2 cans of chicken broth.
  • Mix all ingredients together.
  • If too dry, may add small amounts of water at a time. Should have a meatloaf-like consistency.
  • Put into 13x9 inch pans and bake at 350 degrees until browned.
  • (Can also be used to stuff the turkey.).

1/4 cup lemon juice
1 small garlic clove, minced
2 tablespoons fish sauce
3 tablespoons unsalted dry roasted peanuts, ground
1/4 cup sugar
1/4 cup water
1 dash cayenne pepper
1 teaspoon cilantro, chopped finely
1 -2 Thai red chili pepper, sliced
2 -3 tablespoons white onions, very finely chopped

Steps:

  • Cook sugar in water until light syrup forms, about 5 min over med-low heat. Add all other ingredients. Stir well. Let cool.
  • Serve over salad.

GERMAN PICKLED BEET SALAD (VEGAN)

Posting this for ZWT - it's from an old German cookbook. I look forward to trying this with beets fresh from the garden. You can use fresh horseradish if you dare....in which case just use 1 tsp grated. Note that this needs to sit for a day before serving, not included in the prep time.

2 lbs fresh beets, choose firm beets
2 teaspoons sea salt
1/2 cup red wine, dry is best
1/2 cup apple cider vinegar
1 medium onion, thinly sliced
4 whole cloves
1/2 teaspoon coriander powder
6 whole black peppercorns
3 tablespoons olive oil
1 tablespoon prepared horseradish

Steps:

  • Cut the tops off the beets, leaving about 1" of the stem intact. Scrub the beets well then add them to a large pot with enough cold water to cover them by about 2". Add 1 tsp of the salt and bring to a boil. Once the boiling point is reached, reduce heat to low and cover the pot. Simmer until the beets show little resistance when pierced with the tip of a sharp knife. This may only take 30 minutes for young beets, much longer for more mature ones. Keep them consistently covered with water.
  • Once cooked, drain the beets, reserving a small amount of the cooking liquid (about 1/4 cup). (You may or may not need this later on, so don't worry if you forget).
  • When the beets are cool enough to handle, slip off the skins and then cut them crosswise into 1/8" slices. Place them in a deep glass or ceramic bowl.
  • In a medium saucepan bring the red wine, vinegar, onion, cloves, coriander, peppercorns and remaining 1 tsp of salt to a boil. Immediately pour over the beets. It should cover them, if not, add more wine.
  • Cool to room temperature then cover well and refrigerate for at least 24 hours.
  • Before serving discard the whole cloves and peppercorns. Beat the olive oil and horseradish together in a small bowl and add to the beets. Mix gently but thoroughly. If you think the sauce is going to be too thick, you can now use that reserved cooking liquid to thin things down (beat in with the olive oil and horseradish), or use a bit of plain water.
