I learned this recipe from some friends from the Island of Reunion. It is always a hit with friends, and it's delicious. It is at its best when it has a day to meld the flavors in the fridge. Serve with ice cubes and garnish with lemon or lime slices if desired.

Ingredients

1 cup water
1 chai tea bag
3 tablespoons brown sugar
8 cups pineapple juice
2 cups rum, or as needed
1 cup dry vermouth (such as Martini®)
3 tablespoons vanilla-flavored syrup

Steps:

Bring water to a boil in a saucepan; pour into a mug and brew chai tea for 5 minutes. Remove tea bag and mix brown sugar into the hot tea until dissolved. Allow tea to cool for about 10 minutes.
Mix tea, pineapple juice, rum, vermouth, and vanilla-flavored syrup together in a large punch bowl; stir well. Chill for at least 2 hours before serving.

2 cups Jamaican white rum
1 cup light rum
2 cups fresh pineapple juice
2 cups fresh orange juice
Pinch freshly grated nutmeg, optional

Pineapple slices, for garnish

Steps:

Mix all ingredients together in a pitcher or punch bowl. Chill in the refrigerator for at least 1 hour before serving. Garnish with orange or pineapple slices.

2/3 cup fresh lime juice
1/3 cup superfine sugar
1 cup golden rum
1/4 cup orange liqueur
1/4 cup grenadine
1 (750 ml) bottle champagne or 1 (750 ml) bottle sparkling wine, like spanish cava
fresh pineapple chunk, for garnish

Steps:

In a large pitcher, combine the lime juice and sugar and stir briskly until the sugar is dissolved.
Add the rum, orange liqueur and grenadine and chill the rum mixture for about 1 hour.
Just before serving, add the sparkling wine and pineapple chunks and serve in punch glasses.
