- Puree two 14-ounce cans black beans (drained and rinsed), 2 minced garlic cloves, 1/4 cup each olive oil and lemon juice, 1 tablespoon white wine vinegar, 1 teaspoon ground cumin and a pinch each of salt and pepper in a food processor until almost smooth. Let sit 15 minutes before serving.

Steps:
- Brown ground beef and drain.
- Combine meat with taco seasoning according to package directions.
- Evenly spread beans in a 9" microwave safe dish.
- Spread meat on top of beans.
- Spread sour cream on top of meat.
- Pour salsa onto sour cream.
- Sprinkle with grated cheddar cheese.
- Garnish with black olives if desired.
- Microwave for 20 to 30 seconds or long enough to melt cheese.
- Serve with tortilla chips.

- This dip is a little picky- if you get too much liquid it is hard to reduce on the stove. If you don't get enough liquid then the ingredients get stuck when blending.
- I just have a bit of liquid nearby when I blend. The final result should be the consistency of refried beans. If you do get too much liquid and the beans are runny, add a teaspoon of cornstarch to the beans once they are warm.
