RESTAURANT-STYLE FRIED CHICKEN FINGERS (OVEN-BAKED OPTION)
Make these as spicy as desired by adjusting the cayenne peppe, you may use your own favorite seasoning for the breading mixture --- plan ahead the chicken needs to marinate for 3-4 hours, I have listed oven-baking instructions on the bottom of the recipe -- if you are making these for a small crowd I strongly suggest to double the recipe these will be gone in a flash they are so good, serve with honey mustard dipping sauce :)

SMOKED FRIED CHICKEN
Steps:
- For the BBQ Seasoning: Stir together granulated garlic, salt, pepper, paprika and granulated sugar in a bowl.
- For Arnold's Alabama white sauce: Combine mayonnaise, buttermilk, Parmesan, vinegar, granulated garlic, horseradish, lemon juice, mustard, hot sauce, Worcestershire, granulated sugar, pepper, garlic and 1 tablespoon BBQ seasoning in a food processor. Blend until fully combined, about 30 seconds. Let sit overnight, refrigerated, for best flavor.
- For the BBQ smoked fried chicken: Preheat a smoker for cooking with cherry wood.
- Rub 1/2 chicken with some of the BBQ seasoning on both sides. Smoke with cherry wood until internal temperature reaches 130 degrees F. Cover with margarine and rub both sides with more BBQ seasoning and wrap in aluminum foil. Place back on smoker until temperature reaches 165 degrees F. Remove from smoker and leave in foil to confit in fat overnight.
- For Arnold's hot sauce: Bring hot sauce, corn syrup, honey, granulated sugar, granulated garlic, sriracha, paprika, brown sugar, cayenne, white pepper and 1/4 cup BBQ seasoning to a slow simmer in a saucepan, and simmer, stirring, for 10 minutes. Let cool.
- For the Spanish rice: Melt margarine in a saucepan and add onions. Saute until onions are translucent. Add rice and cook, stirring, until rice gets a little brown. Add tomatoes and celery and cook until soft. Add chicken broth and stir once. Bring to a boil, then reduce heat to a simmer. Cook until liquid has almost disappeared, then stir once and cook, covered, for about 5 more minutes. Add salt to taste.
- For the BBQ smoked fried chicken: Bring oil to 350 degrees F in a deep-fryer or Dutch oven.
- Fry chicken for 7 minutes. Serve on Spanish rice, covered in Alabama white sauce and Arnold's hot sauce.
CHICKEN FRIED RICE - RESTAURANT STYLE
I was working in a great little chinese restaurant in Acworth, GA for over a year. Here's the recipe. You can substitute the meat for shrimp, beef flank steak, pork loin or add all three for "House Special" fried rice. For Hawaiian Fried Rice, use good quality ham and diced pineapple!

Steps:
- Wash rice and cook with a couple pinches of salt. Then, put it on a plate and cover with saran wrap and allow to cool in fridge for at least 1 hour.
- Slice the chicken to the size of 3 quarter dollars put together, or cut to your preference. Partially freeze the meat to make meat easier to cut small.
- Put the chicken in a small bowl. Add the cornstarch, garlic powder, 1/2 the salt, 1/2 the sugar, 1/2 the white pepper, 1/2 the MSG and 2 teaspoons of water. Mix by hand to coat the meat. This step keeps the meat juicy while cooking in hot oil.
- Heat 3 tablespoons oil in your wok at 80% heat. Add the chicken and cook until white. Drain off the oil and set meat aside.
- Add the remaining tablespoon of oil to the wok. Heat to 60% heat and add the beaten egg. Allow the egg to cook before stirring it. Stirring the egg while it is setting will make the egg more fluffy, like scrambled eggs.
- Turn the heat up to 80% and add the onion. Cook for 30 seconds and then add the cooled rice. Keep flipping or turning the rice over to heat it evenly in the pan for 1 minute.
- Add the remaining salt, sugar, white pepper, and MSG. Continue turning the rice for another minute.
- Add the chicken, oyster sauce, soy sauce, and peas and carrots. Continue turning and flipping for 3 minutes.

FRIED CHICKEN
Steps:
- Mix parsley, lemon pepper, garlic salt, rosemary, seasoning salt and chili powder in a bowl. Mix them into the flour thoroughly. Place half the seasoned flour in a bowl and mix the eggs and milk together in another bowl.
- Dip the chicken into the flour, coating it entirely, then shake off the excess seasoning and put it into the egg mixture. Coat completely, then dip it into the flour again (adding more flour in 1-cup increments, if needed). Place the chicken on a plastic wrap lined 13-by-9-inch pan, putting more plastic wrap between the layers. Cover with plastic wrap and refrigerate for 6 hours; store the remaining seasoned flour in an airtight container.
- Heat the oil in a medium to large pot to 350 degrees F.
- Dip the chicken in the seasoned flour one more time. Fry the chicken, in batches, until it reaches an internal temperature of 165 degrees F, about 8 minutes.

- Lula's Louisiana Cookhouse (Owosso, Michigan) You might be surprised to hear that some of the best fried chicken in the country can be found in Owosso, Michigan, but Lula's chef John Beilfuss put the time in to perfect the craft.
- The Lady & Sons (Savannah, Georgia) There is no argument that Paula Deen has one of the most popular recipes for fried chicken on the internet. The simple, salty instructions yield delicious pieces in less than 30 minutes, making it a delight despite all the mess that naturally comes with frying.
- Willie Mae's Scotch House (New Orleans, Louisiana) In business since 1957, this bastion of good Southern food in Nola's 6th ward survived devastating damage from Hurricane Katrina.
- Ad Hoc + Addendum (Yountville, California) This restaurant has a rotating selection of family-style, four-course meals, but one standout is a customer favorite: the fried chicken.
- Maxine's Chicken & Waffles (Indianapolis, Indiana) Chicken and sweet potato waffles with peach butter? Yes, please. At Maxine's, the prices are very affordable, and the generous helpings of food are exceptionally high quality.
- Arnold's Country Kitchen (Nashville, Tennessee) Offering food for over 30 years, Arnold's is still owned and staffed by family. Co-owner Jack Arnold worked his way through Vanderbilt in the campus cafeteria.
- Gus's World Famous Hot & Spicy Fried Chicken (Memphis, Tennessee) The original location of Gus's chicken was the place where it all started in 1973. Now, the restaurant can be found serving the same delicious family recipe in 29 locations around the United States.

- Handsome Biscuit (Norfolk, Virginia) Known for their fluffy, layered biscuits, the fried chicken at Handsome Biscuit is just as legendary. Try a Hella Fitzgerald, a giant sweet potato biscuit with bacon, cheddar cheese, and redeye sausage gravy, or The Blue Blazer, a biscuit with fried chicken, spicy pickled red cabbage, and bleu cheese dressing inside.
- Pies n Thighs (Brooklyn, New York) Pies n Thighs embraces the simplicity of their chicken that's brined, seasoned, and salted and allowed to sit overnight.

- Cut the chicken into 8 similar size pieces. Cut the breast pieces in half and separate the legs from the thighs.
- Place the chicken pieces in the freezer bag and seal well. Massage the buttermilk mix well into the chicken.
- Place the freezer bag in the fridge for at least 4 hours to tenderize. I prepared the chicken and marinade in the morning before leaving for work. This way the chicken is extra tender and flavourful by the time I get home.
