Another addition selected for the 2005 'Zaar World Tour. This is a remarkably easy one pot meal that takes less than 30 minute to prepare. Though the recipe calls for a combination of carrots and green beans, other vegetables such as mushrooms, asparagus, peppers or scallions would also work well.

1/2 lb lean pork loin, shaved or thinly sliced
6 -8 lettuce leaves
1 carrot
1/4 lb green beans
4 tablespoons vinegar
2 tablespoons soy sauce
2 tablespoons mirin
1/2 teaspoon gingerroot, finely minced
4 tablespoons vinegar
2 tablespoons soy sauce
2 tablespoons mirin
2 tablespoons sesame paste

Steps:

  • Before preparing entree, prepare one or both of the dipping sauces. This gives them a few minutes for the seasonings to meld.
  • Wash lettuce leaves and tear into bite-sized pieces. (Though more Korean than Japanese, I like to leave my lettuce leaves whole and use them as wraps. A little more messy, but a lot more fun.)
  • Cut carrot into julliene strips and trim green beans to 1 1/2 to 2 inch pieces. Boil water in a pan. Add green beans and cook for 2 or 3 minutes. Remove beans and plunge into cold water to stop cooking. Drain. Repeat same process with carrots, cooking for one minute.
  • Slice/shave the pork into very thin pieces. This is sometimes easier if the pork is placed in the freezer for a half hour beforehand. Cook thinly sliced pork in the water for a couple of minutes. Drain the water and cool the pork in a strainer.
  • Place lettuce, carrot, breen beans in a plate. Put boiled pork on the top.
  • Serve with dipping sauce.

Delicious on a hot summer night. You can make it super simple and quick by using just shredded lettuce with the quickly boiled pork slices on top and adding sesame or ponzu dipping sauce. That's delicious, too, but taking just a little more time with the salad and maybe even the sauce makes it even better. This is what I did. 250 g thinly sliced pork loin or 1/2 lb pork loin
1/4 head lettuce, thinly shredded
1/2 medium onion, sliced into rings and halved soaked in ice water 30 mins to make them less overpowering
1 -2 bunch mizuna, chopped
1 (70 g) package radish sprouts (kaiware, but you can use broccoli sprouts)
1 japanese cucumbers, cut into matchsticks or 1/2 regular cucumber
5 -10 shiso leaves, thinly sliced (optional but so refreshing!)
3 tablespoons plain yogurt
2 tablespoons blended miso
1 tablespoon japanese mayonnaise
1 teaspoon sesame oil
1/3 teaspoon salt
1/2 garlic clove

Steps:

  • Starting with the onions (and then soaking in ice water while working on the others), carefully cut and prepare the salad ingredients and mix together in a bowl.
  • Bring a pot of water to a gentle boil and add the meat slices until cooked (it happens fast if they are thin) and then put them in a bowl of ice water and drain.
  • In individual bowls, arrange the salad and place a few slices of cold boiled pork on top.
  • Top with sesame dressing, sesame sauce or ponzu sauce made for shabu shabu, or try the delicious homemade sauce in this recipe (just mix the sauce ingredients together, and there you have it!).
  • Serve with rice and miso soup as the main dish or with other dishes as a side.

1 lb beef, very thinly sliced
3 slices konbu
8 shiitake mushrooms
1/2 lb enoki mushrooms
1/2 lb mushroom (shimeji)
1/2 lb pasta (shirataki)
1 lb Chinese cabbage
1/2 lb watercress
1 lb tofu, cut in 1 in. cubes, pressed and drained

Steps:

  • Place in a medium-sized pot a couple of slices of kombu (kelp) and cover with cold water.
  • Gently bring the water to a boil and remove the kombu just before it starts to boil.
  • Let the water boil very gently.
  • Take one of the items, swish it around in the hot water for a few seconds (for beef) to a few minutes (for vegetables).
  • Combine 2 parts soy sauce with 1 part lemon juice for dipping sauce.
  • Serve with hot steamed rice.

Have you ever had a shabu shabu? It's thinly sliced beef, pork, fish, tofu, veggies, and noodles sloshed around in broth to cook quickly and dipped in sauces. It is much like fondue without the cheese. The traditional sauces are Ponzu Sauce (I have two posted here) and Sesame Sauce. There are more sauces people use, but these are the original ones.

6 tablespoons white sesame seeds
7/8 cup dashi
1/3 cup sake
1 tablespoon mirin
1 teaspoon sugar
3 tablespoons soy sauce
1 -2 garlic clove, minced

Steps:

  • Toast sesame seeds in a frying pan until you hear 4-5 pops. Remove from heat. Grind sesame seeds in a mortor or a coffee grinder. You do not need to to grind completely smooth.
  • Add all the seasonings with ground sesame seeds. If you want to make this without the alcohol content, cook off alcohol from sake for about 10-15 seconds in the microwave.
  • Use the sauce for dipping shabu shabu pieces.

Who says a fondue has to be high fat? This is a great flavour-infused, broth-based fondue for those who are health conscious. The key to hot-pot cooking is in the broth. Use homemade or a good quality packaged broth. Remember to always arrange raw meats, poultry and seafood on separate platters from the vegetables and other ingredients.

8 cups chicken broth
3 lbs sirloin steaks, thinly sliced
1 lb tofu, firm (or extra firm)
2 cups napa cabbage, shredded
2 bell peppers, thinly sliced (red or yellow)
1 cup carrot, thinly sliced
1 cup shiitake mushroom, stems discarded
1 bunch green onion, root trimmed
prepared steamed rice (preferably Japanese rice)
2 tablespoons coriander, freshly chopped (cilantro)
teriyaki sauce
sesame and ginger marinade
ponzu sauce, a citrus-flavoured soy sauce (Bottled dips and marinades are fine)

Steps:

  • Bring the broth to a boil in a large pot on the stove.
  • Arrange the beef on a platter.
  • Arrange the tofu, cabbage, peppers, carrots, mushrooms and green onions on a separate platter.
  • Transfer the broth to an electric fondue pot, electric wok or traditional hot pot set on the dining table. Add the coriander (cilantro) and simmer for 5 minutes before you start to dip. Use fondue forks to dip the food into the simmering broth.
  • Cook the beef to desired doneness, the tofu until heated through and the vegetables until tender-crisp.
  • Serve with rice and dips.

Shabu shabu is an Asian version of fondue. Instead of cooking the food in boiling oil, it's cooked in boiling broth. At the end of the shabu shabu meal, noodles are added to the broth and what results is a wonderful soup that has been flavored by all of the foods that went before. Ideally, you should have a Mongolian hotpot or a Chinese firepot for this dish, but you can use a regular fondue pot or chafing dish using canned heat. It's wise to heat the broth on the kitchen stove, then transfer it to the tabletop cooker. From an old newspaper clipping.

10 cups chicken broth (either store bought or home made)
1 lb lean beef, cut bite sized
1 1/2 lbs boneless skinless chicken breasts, cut bite sized
6 chicken livers, cut in half
1/2 lb firm white fish, cut bite sized (your choice of fish)
1/2 lb mushroom
Chinese cabbage, cut up
fresh spinach, cut up
10 green onions, cut into 2-inch lengths
8 ounces chinese noodles, soaked and drained (saifun)
dipping sauce (Shabu Chili Sauce or Sesame Seed Sauce)

Steps:

  • Heat broth to boiling on stove; transfer to fondue or other tabletop cooking unit; keep flame high enough to continue boiling.
  • Let each guest cook the pieces of beef, chicken, fish, liver and mushrooms to their liking, dipping each piece into shabu sauce or sesame seed sauce before eating.
  • When meat is almost gone, place the spinach, Chinese cabbage and onions into broth; stir for three minutes.
  • Guests help themselves to the vegetables.
  • When the vegetables are finished, add the noodles to broth; cook for five minutes and ladle into individual bowls.
