I saw Emeril prepare this on The Rosie O'Donnel Show as a kid friendly recipe. I think it is grown-up friendly too!

1 lb boneless skinless chicken breast, cut into nuggets
1/2 cup bottled barbecue sauce
1 cup corn flakes, coarsely crushed
1 dash garlic powder

Steps:

  • Combine chicken and BBQ sauce in bowl.
  • Crush corn flakes in zipper bag.
  • Season with garlic powder.
  • Shake sauce coated chicken a couple of pieces at a time in zipper bag with crushed corn flakes Bake on baking sheet at 350 for 25 minutes or until done.
  • Serve with BBQ sauce for dipping.

1 1/4 lbs chicken tenders, skinless chicken breasts or 1 1/4 lbs boneless skinless chicken breasts
3 tablespoons ranch dressing
2 tablespoons melted butter
1/4 teaspoon garlic salt
1/4 teaspoon pepper
2 1/2 cups finely crushed potato chips (Cooler Ranch Doritos, can use baked)

Steps:

  • Preheat oven to 400°F. Rinse chicken and pat dry. Stir together dressing, butter, garlic salt and pepper in a medium bowl. Add chicken and toss well to coat with mixture.
  • Roll each piece in crushed chips and place on a shallow baking sheet; sprinkle with any remaining chips. Bake for 30 minutes or until crispy and lightly browned.

This is a variation of a recipe I had found. This is my ALL time favorite way to eat baked chicken. I can not say enough good things about this!!! Make sure to use chicken that is NOT frozen for best results. This turns out so nice and crispy. My picky daughter even eats it all up !!! We have even made chicken strips from it instead to make it more kid friendly. I serve it with white pepperd gravy to dip it in on put on top- YUM YUM..... LET ME STRESS AGAIN HOW IMPORTANT IT IS TO NOT USE FROZEN CHICKEN BREAST- IT WILL MAKE THE CRUST SOGGY ESPECIALLY ON THE BOTTOMS AS EXPEIENCED BY SOME MEMBERS

3 cups corn flakes
2 tablespoons melted butter
1 large egg
1 teaspoon water
salt
pepper
chicken poultry seasoning

Steps:

  • preheat oven to 400 degrees.
  • salt, pepper and put chicken poultry seasoning on breast front and back.
  • mix egg and water in a bowl.
  • crush cornflakes and mix in butter ( i use land of lakes) and more chicken poultry seasoning to taste.
  • dip breast into egg/water mixture and roll in the cornflake crust to coat. Mixture will be moist so you may have to pat it on there.
  • I also make extra crust if needed and pat it onto tops of breast once I place them onto my baking sheet.
  • bake at 400 for about 30 mins or untill done.
  • I serve with a veggie on side and mashed potatoes with white peppered gravy. I always serve extra gravy to dip chicken inches.

1/4 cup prepared Ranch salad dressing

inch cubes
Additional Ranch dressing, or dipping sauce of your choice

Steps:

  • 1.In a shallow bowl, combine the first five ingredients. Place dressing in another bowl. Toss chicken cubes in dressing, then roll in the cornflake mixture. Place in a greased 11-in. x 7-in. x 2-in. baking pan. I used Pam spray. 2.Bake, uncovered, at 400 degrees for 12-15 minutes or until juices run clear. Serve with additional dressing, or your favorite dipping sauce.

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Combine corn flakes, Parmesan cheese, and ranch dressing mix in a bowl. Dip chicken in melted butter; roll each chicken breast in corn flake mixture until evenly coated. Place coated chicken in the prepared baking dish.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 45 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1 cup crushed cornflakes
1 cup all-purpose flour
1-1/2 teaspoons seasoned salt
4 chicken drumsticks (4 ounces each), skin removed
4 bone-in chicken thighs (about 1-1/2 pounds), skin removed
3/4 cup egg substitute

Steps:

  • Preheat oven to 425°. Drizzle butter in a 13x9-in. baking dish. In a shallow bowl, combine the cornflakes, flour and seasoned salt. Place egg substitute in another shallow bowl. Dip chicken in egg substitute, then roll in cornflake mixture. Repeat., Arrange chicken in prepared dish, meatier side down. Bake, uncovered, for 20 minutes.
