Steps:
- Heat oil in a saute pan; add the onions and cook until lightly browned around the edges, about 5 minutes.
- Add ginger + garlic paste and cook for another minute. Turn off the heat and set aside to cool slightly.
- In a large mixing bowl, combine the refried beans, chickpea flour, oat flour, bread crumbs, chole masala, red chili powder and salt. Mix well.
- Add the onion mixture and mix well to form a mixture that holds together when squeezed. If the mixture is too wet, add more oat flour or bread crumbs to absorb the moisture.
- Divide the mixture into 6 equal size patties, about 1/3 cup each.
- Heat 2tbsp oil in a non-stick pan on medium heat, gently place the burgers and cook them undisturbed for about 3~4 minutes lightly browned on the bottom. Flip and cook on the other side until golden brown crust forms on both the sides.
- Enjoy on your favorite bun with your favorite burger accouterments.

REFRIED BEANS
Try making this dish to serve at a party - it works well as a dip served with nachos. It's also a great accompaniment to a larger Tex-Mex-style meal

Steps:
- Lightly drain the beans, reserving the juice from the tin, but do not rinse (you want the beans in about half the liquid from the can). Depending on the texture you prefer, either mash them roughly in a bowl or blitz them using a blender until smooth. Set aside.
- Heat the oil in a large frying pan or casserole and cook the onions for 8-10 mins until soft and golden. Scatter in the garlic, chilli and cumin seeds, and sizzle everything for 2 mins more. Tip in the beans, oregano, paprika and a pinch of salt. Cook everything together for 5 mins until the beans have heated through adding more reserved bean juice if it's too thick. Serve straightaway with a sprinkling of coriander, if you like, or leave to cool and keep chilled. Will keep chilled for up to three days or frozen for a month. Reheat with a splash of water mixed in.

SPICY MEXICAN BEAN BURGER
This is an inexpensive vegetarian burger and my husband loves them. He ate one and he said they are filling, delicious and he said he wants more made when these are gone and he even said that they are better than store bought. They don't fall apart like most veggie burgers and all the ingredients are available at any grocery store.

Steps:
- Heat oil in skillet over medium heat.
- Add onions, carrots, corn and chopped green pepper.
- In the meantime, place beans in a large bowl.
- Sauté until vegetables are bright in color.
- Add vegetables to beans, blend with hand mixer.
- Add remaining ingredients, adding more flour to create a firmer mixture, or more salsa if mixture is too stiff.
- Form into balls and smash into patties.
- Place on pieces of waxed paper and stack in Tupperware.
- Place about 5 sliced olives in middle of patty, smash to seal them inside.
- To heat, spray each burger with cooking spray.
- Heat over medium heat and cook until browned on one side.
- Flip and drop a few drops of hot sauce on burger if desired.
- I serve these with salsa, chopped onions and a cheese slice on a toasted burger bun (toast the face in the same skillet used for the burger).

REFRIED BEAN BURRITOS
These are quick and fairly healthy if made with low fat ingredients, add some rice if you want to stretch them farther or just go with basic bean and cheese.

Steps:
- Place beans in microwave safe dish.
- Stir in next 5 ingredients.
- Heat on medium power for about 3 minutes or until hot, stirring once halfway through.
- Alternatively, heat over low heat on stovetop until warmed through.
- If mixture becomes too thick, add water.
- Mix in rice, if using.
- Meanwhile, heat the tortillas.
- Use the method you like best.
- I usually just heat them one at a time in a dry skillet over medium heat, about 20-30 secs per side, or just until pliable.
- Place about 1/3 cup bean mixture in each tortilla, add cheese, salsa and toppings, and roll.
- You can bake them in a 350 degree oven for 10-15 minutes if you want them firmer/crisper.
- I like to skip this step.
- That's it!
- These refrigerate well for a few days.
- I can't speak for the freezer.
- I end up with 5 medium sized burritos; if you use the rice or more veggies, you will get more.
- Since I usually reheat one or two at a time, I add sour cream after reheating.
- No one would call these authentic Mexican food; they taste more like a fresher and better version of Taco Bell, but they are very good.
