EASY WATERMELON MARGARITAS
There's nothing better than a frosty cocktail on a hot day and these easy Watermelon Margaritas are the ultimate refreshing drink.

Steps:
- Combine water and sugar in a small saucepan and bring to a simmer.
- Cook until the sugar has dissolved then remove from the heat and allow to cool completely. The simple syrup can be kept in the fridge for up to a month in a sealed jar.
- Combine the cubed watermelon, tequila, Cointreau, lime juice and simple syrup in a blender then blend until smooth.
- Dip the rims of serving glasses into lime juice and then into salt. Fill the glasses with ice then pour over the Margarita mix.
- Garnish with a lime wedge and serve.

- Place watermelon in a blender; blend until smooth. Pour through a fine mesh strainer to remove seeds and pulp.
- Pour watermelon juice into ice cube tray; place in freezer until frozen, about 3 hours.
- Place 4 cups of frozen watermelon cubes, tequila, lime juice, and sugar into a blender; pulse until smooth.

FRESH WATERMELON MARGARITA
Steps:
- Gather the ingredients.
- If desired, rim two double old-fashioned glasses : Mix the salt and chili powder in a shallow dish, wet the rim by wiping it with a lime wedge, then dip or roll it into the chili salt.
- In a cocktail shaker, muddle the watermelon cubes into a juicy pulp.
- Fill the shaker with ice and add the tequila, triple sec, and lime juice.
- Shake well .
- Use both a cocktail strainer and a mesh strainer to fine-strain the drink over fresh ice into the prepared glasses.
- Garnish with watermelon and lime wedges and a sprig of mint. Serve and enjoy.

- Note: Advance preparation requires that you pre-freeze your watermelon; be sure to remove all seeds!
- Rub rim of margarita glass with some sweet and sour mix and dip in granulated sugar.

- In a small saucepan, bring sugar, water, and orange zest to a boil over high. Reduce to a simmer and cook until sugar dissolves, 3 minutes. Let syrup cool in a bowl. In a blender, puree watermelon cubes until smooth. Strain through a fine-mesh sieve, pressing on solids, into a pitcher (you should have about 1 cup juice). Stir in syrup, lime juice, and tequila. Fill salt-rimmed glasses with ice, then pour margarita mixture over top. Garnish with lime wedges.

- Cut 1 lime into 12 wedges; reserve for garnishes. If desired, coat the rim of each glass with sugar: Cut remaining lime into wedges. Using these wedges, moisten the rims of 12 margarita or cocktail glasses. Sprinkle sugar on a plate; hold each glass upside down and dip rim into sugar. Top Secret Recipe Version, from Todd Wilbur. You will need to puree fresh watermelon in a blender for this recipe. First, cut some ripe seedless watermelon from the rind, and then coarsely smash it in a bowl with a potato masher or large fork (this gives the blender something to grab on to). Pour the melon from the bowl into a blender and blend on high speed for 10 seconds or until it is pureed.

Mixing cocktails may seem intimidating, but it's actually quite intuitive once you understand how to balance the alcohol, sweetness and acidity. In "3-Ingredient Cocktails" (Ten Speed Press, 2017), Robert Simonson presents the formula for a perfect margarita: 1½ ounces tequila, 1 ounce Cointreau and 3/4 ounce lime juice, shaken and served. Even easier to memorize, this version uses 6 ounces fresh watermelon juice - a sweet but subtle nod to summer - and 2 ounces each tequila, Cointreau and lime juice. Be sure to taste and add more watermelon juice if your margarita is too boozy, and extra lime juice or even a pinch of salt if it's too sweet.

- Prepare the salted rim, if using: In a small shallow bowl or plate, combine the sea salt and Tajín. Set aside.
- In a shaker filled with ice, combine the watermelon juice, tequila, Cointreau (if using), lime juice and jalapeño (if using). Shake to combine.
