Steps:
- Soak pearl tapioca for one hour in enough cold water to cover; drain; add boiling water and salt.
- Note that minute tapioca requires no soaking.
- Cook in double boiler until transparent.
- Core and pare apples; arrange in a buttered pudding-dish; fill cavities with sugar.
- Pour over the tapioca and bake in a moderate oven till apples are soft.
- Serve with sugar and cream or a custard sauce.
- Recipe note: Rhubarb or pineapple may be substituted for apple, and sugar added to taste.

- Place the apple mixture into a slow cooker. Pour lemon juice and boiling water over the apples.

REFRESHING APPLE TAPIOCA PUDDING
This recipe comes from a magazine from Quebec. It's healthy. In the cooking time, I included the 2 hours in the fridge. I tried it last week and liked it a lot. I used homemade applesauce (unsweetened). I used more cinnamon and omitted the nutmeg. I guess splenda would be great instead of brown sugar to make it healthier. And I used 1% fat milk.

- Put the 6 first ingredients in a casserole.
- Cook at medium heat, stirring constantly, about 15 minutes or until it thickens.
- Let cool to room temperature.
- Add the applesauce and whisk.
- Put in indivudual dessert dishes and put in the fridge at least 2 hours.
- Serve cold, with a slice of apple as a garnish.
- It's important to stir constantly if you don't want your tapioca to stick together.

- 1. Arrange apples in greased 9 x 13-inch baking dish. Dot with butter and sprinkle with cinnamon and nutmeg.
- 2. Combine remaining ingredients in medium saucepan. Cook and stir over medium heat until mixture comes to a boil.
- 3. Pour hot mixture over apples in baking dish. Cover and bake in moderate oven (375 degrees) for 25 minutes or until apples are tender.

CREAMY TAPIOCA PUDDING
This is in response to a post on the boards. It is our favorite Tapioca Pudding. It is time consuming, so DH doesn't get it very often...and when he does, it doesn't last long at all. In fact, if it's been a really long time, he'll eat it himself in one sitting...thank goodness the Chef has the opportunity to "taste test"! ;-)) Prep time does not include soaking pearls overnight.

Steps:
- In a bowl, soak tapioca in 2 cups of room temperature water overnight.
- Drain water.
- In double boiler, heat milk just until no longer cold.
- Add salt and tapioca.
- Continue heating until small bubbles appear at sides of pan.
- Cover, turn heat to very low and cook for one hour.
- Make sure that milk mixture does not simmer or boil.
- Separate egg whites from yolks.
- Beat egg yolks and sugar toether until light yellow in color.
- Add a little of the hot mixture to the egg yolks and blend thoroughly.
- Then add the egg yolk mixture to the hot milk mixture, stirring constantly.
- Place the double boiler over medium heat and cook until tapioca mixture is very thick, about 15 minutes.
- Beat egg whites until stiff.
- Slowly fold the hot tapioca mixture into the egg whites.
- Stir in vanilla.
- Serve warm or chilled.
FRUIT JUICE TAPIOCA PUDDING

This is comfort food at its finest. I love it hot, I love it warm, but I absolutely adore it ice-cold from the refrigerator. Personally, I think it belongs in it's own food group. But perhaps I'm biased. :D Hmmm, I think I might need to go make some tapioca pudding after posting this recipe... DH loves it when I make this, and I like that I don't have to fuss with soaking the tapioca overnight. I never remember to do that... (P.S. Decisions, decisions...they want to know how many servings? I suppose I should say something other than one, huh? LOL)
