3/4 cup pearl tapioca (OR 1/2 cup minute tapioca)
cold water
2 1/2 cups boiling water
1/2 teaspoon salt
7 sour apples
1/2 cup white sugar

Steps:

  • Soak pearl tapioca for one hour in enough cold water to cover; drain; add boiling water and salt.
  • Note that minute tapioca requires no soaking.
  • Cook in double boiler until transparent.
  • Core and pare apples; arrange in a buttered pudding-dish; fill cavities with sugar.
  • Pour over the tapioca and bake in a moderate oven till apples are soft.
  • Serve with sugar and cream or a custard sauce.
  • Recipe note: Rhubarb or pineapple may be substituted for apple, and sugar added to taste.

½ cup brown sugar
¾ teaspoon ground cinnamon
½ teaspoon salt
2 tablespoons small pearl tapioca
1 lemon, juiced
1 cup boiling water
½ cup raisins

Steps:

  • Place the apples, brown sugar, cinnamon, salt, and tapioca into a bowl, and toss to coat apple slices.
  • Place the apple mixture into a slow cooker. Pour lemon juice and boiling water over the apples.
  • Set the cooker to High and cook until apples are tender and thickened, 3 to 4 hours.
  • Mix in raisins if desired; serve warm.

3/4 cup honey
3 tablespoons butter
1 tablespoon lemon juice
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2-1/2 cups water
1/3 cup quick-cooking tapioca
Cream, ice cream or whipped cream

Steps:

  • In a Dutch oven, combine the first 6 ingredients. Cover and simmer just until apples are tender. , Using a slotted spoon, transfer apples to a bowl. Add water and tapioca to pan. Cook and stir until thickened and clear. Pour over apples. Serve warm with cream, ice cream or whipped cream.

This recipe comes from a magazine from Quebec. It's healthy. In the cooking time, I included the 2 hours in the fridge. I tried it last week and liked it a lot. I used homemade applesauce (unsweetened). I used more cinnamon and omitted the nutmeg. I guess splenda would be great instead of brown sugar to make it healthier. And I used 1% fat milk.

1/4 cup quick-cooking tapioca
1/4 cup brown sugar
1 pinch salt
2 cups milk
1 pinch cinnamon
1 pinch nutmeg
1 cup applesauce

Steps:

  • Put the 6 first ingredients in a casserole.
  • Cook at medium heat, stirring constantly, about 15 minutes or until it thickens.
  • Let cool to room temperature.
  • Add the applesauce and whisk.
  • Put in indivudual dessert dishes and put in the fridge at least 2 hours.
  • Serve cold, with a slice of apple as a garnish.
  • It's important to stir constantly if you don't want your tapioca to stick together.

This is an old family recipe. Mom's cousin, Mae, was known to be an excellent cook and baker. Everyone was thrilled to be invited to her home for a meal. This is one of her signature desserts!

3 c tart apples, sliced
2 Tbsp butter, cut in cubes
1/4 tsp cinnamon
1/8 tsp nutmeg (my addition)
1/3 c quick cooking tapioca
1 c light brown sugar
1 tsp salt
2 1/2 c water
lemon juice, 1-2 tbsp.

Steps:

  • 1. Arrange apples in greased 9 x 13-inch baking dish. Dot with butter and sprinkle with cinnamon and nutmeg.
  • 2. Combine remaining ingredients in medium saucepan. Cook and stir over medium heat until mixture comes to a boil.
  • 3. Pour hot mixture over apples in baking dish. Cover and bake in moderate oven (375 degrees) for 25 minutes or until apples are tender.
  • 4. Remove from oven and stir. Serve warm with cream poured over or ice cream by the side.

1 pkg. (15 oz.) ready-to-use refrigerated pie crust s (2 crusts)
1 Tbsp. butter, cut up

Steps:

  • Preheat oven to 400°F. Toss apples with sugar, tapioca and spices. Let stand 15 min.
  • Line 9-inch pie plate with 1 of the crusts as directed on package for two-crust pie; fill with fruit mixture. Dot with butter. Cover with remaining crust; seal and flute edge. Cut several slits in top crust to permit steam to escape.
  • Bake 45 to 50 min. or until juice begins to bubble through slits in crust. Cool.

This is in response to a post on the boards. It is our favorite Tapioca Pudding. It is time consuming, so DH doesn't get it very often...and when he does, it doesn't last long at all. In fact, if it's been a really long time, he'll eat it himself in one sitting...thank goodness the Chef has the opportunity to "taste test"! ;-)) Prep time does not include soaking pearls overnight.

1/2 cup pearl tapioca
2 1/2 cups milk
1/4 teaspoon salt
1/2 cup sugar
2 eggs, separated
1 teaspoon vanilla

Steps:

  • In a bowl, soak tapioca in 2 cups of room temperature water overnight.
  • Drain water.
  • In double boiler, heat milk just until no longer cold.
  • Add salt and tapioca.
  • Continue heating until small bubbles appear at sides of pan.
  • Cover, turn heat to very low and cook for one hour.
  • Make sure that milk mixture does not simmer or boil.
  • Separate egg whites from yolks.
  • Beat egg yolks and sugar toether until light yellow in color.
  • Add a little of the hot mixture to the egg yolks and blend thoroughly.
  • Then add the egg yolk mixture to the hot milk mixture, stirring constantly.
  • Place the double boiler over medium heat and cook until tapioca mixture is very thick, about 15 minutes.
  • Beat egg whites until stiff.
  • Slowly fold the hot tapioca mixture into the egg whites.
  • Stir in vanilla.
  • Serve warm or chilled.

This is comfort food at its finest. I love it hot, I love it warm, but I absolutely adore it ice-cold from the refrigerator. Personally, I think it belongs in it's own food group. But perhaps I'm biased. :D Hmmm, I think I might need to go make some tapioca pudding after posting this recipe... DH loves it when I make this, and I like that I don't have to fuss with soaking the tapioca overnight. I never remember to do that... (P.S. Decisions, decisions...they want to know how many servings?
