Don't let the fact that there is only 1 tablespoon of sugar fool you! This banana bread is super moist and has just the right amount of sweetness. Use very very ripe bananas for best results.

3 -4 mashed bananas
1 tablespoon sugar
2 eggs
1 3/4 cups flour
3 teaspoons baking powder
1/4 teaspoon salt
1/4 cup chopped nuts (optional)
1/2 cup chocolate chips (optional)

Steps:

  • Mix mashed bananas and sugar until the sugar has dissolved.
  • Beat eggs and add to bananas, blending well.
  • Sift dry ingredients and mix in with banana mixture.
  • If desired fold in nuts or chocolate chips.
  • Pour into greased 9x5 loaf pan and bake at 325 degrees for ~50 minute.

1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
3 ripe bananas, mashed
1 tablespoon milk
1 teaspoon ground cinnamon, or to taste
½ cup butter, softened
1 cup white sugar
2 eggs
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5-inch loaf pan, preferably glass.
  • Mix flour, baking powder, baking soda, and salt in a bowl. Stir bananas, milk, and cinnamon in another bowl. Beat butter and sugar in a third bowl until light and fluffy. Add eggs to butter mixture, one at a time, beating well after each addition. Stir banana mixture into butter mixture. Stir in dry mixture until blended. Fold in chocolate chips until just combined. Pour batter into prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 70 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack before slicing.

When my 10-year-old son was diagnosed with Type I (insulin-dependent) Diabetes, I had to alter some of our often-used recipes to reduce the carbs counts. Banana bread tops his list of treats, so I adapted our family's favorite banana bread recipe by decreasing the overall amount of sweetener and using half Splenda. This recipe makes the moistest, yummiest banana bread without being able to tell that the sugar is reduced.

1/3 cup buttermilk
1/2 cup canola oil
1 teaspoon vanilla extract
3 bananas, mashed
1/2 cup Splenda granular
1/2 cup brown sugar
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 cup mini chocolate chip

Steps:

  • Preheat oven to 325 degrees.
  • Blend together eggs, buttermilk, oil, vanilla, and bananas.
  • In a separate bowl, mix Splenda, brown sugar, flour, baking soda, salt, and cinnamon. Add chocolate chips. Gradually stir dry ingredients into banana mixture until mixed well.

1 1/2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
3/4 cup sugar to 1 c sugar
1/2 cup unsalted butter, softened
4 medium very ripe bananas, lightly mashed
2 large eggs, beaten
1 cup dark chocolate chips

Steps:

  • Preheat oven to 350. Lightly grease a 4.5 x 8.5 inch loaf pan. Line the bottom with parchment paper or lightly flour the bottom. (I skipped the parchment paper and the flour--I used the butter wrapper to moisten the bottom and it worked great).
  • Whisk together flour, salt, baking soda, and cinnamon together in a bowl and set aside.
  • Cream together sugar and butter in a stand mixer until light and fluffy. Add bananas and mix until bananas are well blended (no longer in big chunks).
  • Stir in eggs and blend just until combined. Add reserved flour mixture into banana mixture and blend just until combined. Be careful not to overmix.
  • Stir in chocolate chips. Pour batter into prepared loaf pan and bake 50 to 60 minutes and until a tester inserted in pan comes out mostly clean. Some melted chocolate might stick and that's ok.
  • Let cool in pan about 10 minutes before removing in pan. Loosen edges. If needed, with a knife. Turn pan over and bread should pop out. Remove parchment (I didn't use). Serve warm at room temperature.

1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 large egg
2 large egg whites
1 1/3 cups sugar
2 tablespoons vegetable oil
1/3 cup plain nonfat yogurt
1 1/4 cups bananas, ripe and mashed, about 3
3/4 cup semi-sweet chocolate chips

Steps:

  • Mix flour, baking powder, baking soda and salt in bowl. Set aside.
  • Beat egg and 2 egg whites with sugar and oil with an electric mixer until smooth.
  • Add the yogurt and bananas and beat again.
  • Stir in the flour mixture and chocolate chips by hand until just combined.
  • Pour into a 9x5 loaf pan that's been sprayed with cooking spray.
  • Bake for about 1 hour and 15-20 minutes at 350 degrees or until a toothpick inserted in the center of the loaf comes out clean. The crust may crack.
  • Cool in the pan on a wire rack for 10 minutes.
  • Remove from pan and cool completely.
  • This can be frozen after it cools completely.

  • Mix the flour, cacao powder, baking powder, bicarbonate of soda and salt in a large mixing bowl. Whizz the peeled ripe bananas in a food processor until mashed and add the remaining ingredients, except the chocolate, before blitzing again until smooth(ish). If you prefer, you can mash the bananas and mix with the other ingredients by hand in a second mixing bowl. Add the wet ingredients to the dry and fold in gently until just combined (don't overmix). Add about 2/3 of the chocolate chunks and stir them through the batter gently, then pour into the prepare loaf tin and dot with the remaining chocolate.
  • Bake in the preheated oven for 45 mins - 1 hour, or until a skewer inserted into the centre of the loaf comes out clean. If the chocolate starts to burn or the top of the loaf is getting dark, cover the loaf with some tin foil for the remaining baking time.
  • Allow to cool slightly or completely before serving. Best served warm (shortly after baking or reheated for a few seconds in the microwave, in thick slices, ideally with a spread of butter or sugar free nut butter.
