OATMEAL PECAN BARS
These chewy bars took first place in the bar cookie division at our country fair in 2001. Topping them with a coconut-pecan frosting is a tasty twist.

Steps:
- In a large bowl, combine the flour, oats, brown sugar and baking soda. Cut in butter until mixture resembles coarse crumbs. Set aside 2 cups for topping. Press remaining crumb mixture into a greased 15x10x1-in. baking pan. Bake at 350° for 8-10 minutes or until set., In a microwave-safe bowl, heat frosting for 30-45 seconds or until softened; stir well. Spread over crust. Sprinkle with chocolate chips and pecans. Top with reserved crumb mixture. , Bake for 14-18 minutes or until frosting is bubbly and top is golden brown. Cool completely on a wire rack; cut into squares.

REDUCED-FAT PECAN-OAT BARS

Steps:
- Heat oven 350F lightly grease bottom and sides of 13X9 pan.
- In large bowl, mix granulated sugar, butter, applesauce, and vanilla. Stir in flour; mix well.
- Press dough in bottom and 1/2" up sides of pan.
- Bake 15-17 minutes or until edges are light brown.
- For filling: In a small bowl, sprinkle powdered milk over egg whites, then beat them with fork until smooth. Add food color, and beat until blended.
- Beat brown sugar, corn syrup, vanilla, the salt, egg and egg white mixture with a spoon.
- Stir in pecans and oats.
- Pour over crust.
- Bake 25-30 minutes or until set.
- Loosen edges from sides of pan while warm; cool completely.

- In a large saucepan, combine the rhubarb, 1/2 cup brown sugar, 3 tablespoons water and lemon juice. Bring to a boil. Reduce heat to medium; cook and stir for 4-5 minutes or until rhubarb is tender. , Combine the cornstarch and remaining water until smooth; gradually stir into rhubarb mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; set aside., In a large bowl, combine the oats, flour, coconut, salt and remaining brown sugar. Stir in butter until mixture is crumbly. , Press half of the oats mixture into a greased 8-in. square baking dish. Spread with rhubarb mixture. Sprinkle with remaining oat mixture and press down lightly., Bake at 350° for 25-30 minutes or until golden brown. Cool on a wire rack. Cut into squares.

HEALTHY OAT BARS
Healthy refined sugar free, low fat oat bars. Cheap and easy.

Steps:
- mix dry ingredients and add a glug of hot water (maybe a couple of tbs)
- add in honey and nut butter, mix all together really well
- mixture should be sticky but quite lumpy, stiff and fairly dry, not like a cake batter but like a solid lumpy and flakey ball, almost more like a dough
- press down hard into silicon baking tin
- cook for 20-30 mins in 200 degree oven (preheat or not is fine). Take out and press down hard ten mins in with back of a plastic ladle or similar. press down again on removal. To ensure it all holds. When it comes out of oven it should all hold together fairly well but can still be softish, or can be left in longer or left in switched off oven for crispy Cool in tin but cut before it completely cools
COCONUT OAT BARS
This is currently quite popular in my wee town and the recipe is being circulated. Thought I'd share it here. One of the ladies brought it back from her vacation and now everyone seems to be making it. I've not tried it because of the sugar but it must be good. I'm guessing at the times as none were given.

- Lightly grease a 12 x 9 inch pan with pam. Heat the butter, raw sugar, and light corn syrup in a large pan over low heat until just melted. Stir in the oats, shredded coconut, and candied cherries and mix well until evenly combined.
- Place the mixture on the prepared pan. Spread evenly across the pan and level the surface by pressing with a spatula. Bake in a preheated oven 325F for about 30 minutes, or until golden.
- Remove from oven and let cool for 10 minutes. Cut the mixture into 16 pieces using a sharp knife. Carefully transfer the squares to wire rack and cool completely.
- TIP: Best stored in an airtight container and eaten within 1 week. They can also be frozen for up to 1 month.
CRANBERRY PECAN BARS
I have been making these bars for almost 40 years. I got the recipe from my mother who is 90 years old! They are great with vanilla ice cream (low fat, of course). Sandra Bunte, Covina, California

- In a small bowl, combine the flour, oats and brown sugar. Stir in butter until blended. Set aside 2/3 cup. Pat remaining mixture onto the bottom of a 9-in. square baking pan coated with cooking spray; set aside., In a small saucepan, combine the cranberries, 7 tablespoons cranberry juice, raisins, honey, sugar substitute, cinnamon and cloves. Cook and stir over medium heat for 10-12 minutes or until berries pop. , Combine the cornstarch and remaining cranberry juice until smooth; stir into berry mixture. Bring to a boil; cook and stir for 1-2 minutes or until thickened. , Pour filling over crust. Sprinkle with pecans and reserved oat mixture. Bake at 350° for 30-35 minutes or until lightly browned. Cool on a wire rack. Cut into squares. Store in the refrigerator.

LOW FAT APPLE-PECAN OATMEAL COOKIES
This recipe is the result of my tinkering with other lowfat oatmeal cookie recipes in an effort to make them moister. The addition of milk results in a softer, cakier cookie. Great for snacks or even breakfast!

- Mix together oats, milk, chopped apple, and pecans in a bowl and set aside.
- Mix together brown sugar, egg whites, applesauce, and vanilla in a large mixing bowl.
- Add flour, baking soda, salt, and apple pie spice and stir well to combine.
- Add oat mixture and stir well (the cookie dough will look like lumpy oatmeal).
- Drop batter by tablespoonfuls onto cookie sheets sprayed with non-stick spray or lined with parchment paper. Flatten each cookie slightly with a fork or spatula.
- Bake at 350 degrees for 12 minutes.

- In a large bowl stir together the peanut butter, the butter or margarine, the brown sugar, the syrup and the vanilla until smooth.
