Steps:

  • Mix the flour, sugar, baking powder, and salt in a stand mixer or by hand until well blended.
  • Add vegetable shortening and mix until completely incorporated.
  • Store in refrigerator or freezer for best results.

This is based on minor modifications made to recipe #55564, including use of King Arthur's White Whole Wheat Flour, which is a great-tasting whole wheat flour. Using this new version, along with a simple Bisquick pancake recipe, I made a great batch of 'non-healthy-tasting' pancakes. I can't wait to test out other Bisquick recipes! Nutritionally, this is higher in everything you want it to be higher in (fiber, protein, etc.) and lower in everything you want it to be lower in (calories, fat, sugar, sodium, etc.) than the Bisquick Reduced Fat mix.

Steps:

  • Stir baking mix and milk together until soft dough forms. Sprinkle hard surface with baking mix. Put dough on this surface and knead it 10 times.
  • Roll dough 1/2 inch thick. Cut with 2 1/2 inch cutter dipped in baking mix. Place biscuits on foil-lined cookie sheet sprayed with nonstick cooking spray.

This uses my Reduced Fat Bisquick Mix (Whole Wheat) mix (#350552), which is sugar free, low fat and has 3 times the fiber and fewer calories than the Bisquick version. The key is the King Arthur's White Whole Wheat flour, which bumps up the fiber and protein without compromising taste or texture! The pancakes are surprisingly fluffy! IMPORTANT NOTE: Because I can't figure out a way to include MY Bisquick Mix as an ingredient, I will be repeating the proportional amounts of the ingredients of that recipe at the beginning of this one in order to accurately calculate the nutrition info (which differs from the REAL Bisquick Mix). However, the amounts won't convert precisely. So ... please mix a batch of #350552, and use 1 cup of the mix instead of the first 7 ingredients below (flour through salt).

Steps:

  • Substitute first 7 ingredients with 1 cup of my Reduced Fat Bisquick Mix (#350552) and set aside.
  • Whisk all remaining ingredients together except banana (2 packets Splenda through vanilla extract) until frothy. (This will help make the pancakes fluffier!).
  • Add homemade "Bisquick Mix" and gently stir until well-blended, but still lumpy. (Over-mixing will make flatter/denser pancakes.).
  • Heat a skillet on medium-high setting for several minutes. (After you have experience with the recipe, you will be able to begin heating the skillet before preparing the pancake batter.).
  • Spray skillet with cooking spray.
  • Drop 1/4 to 1/3 cup of batter onto skillet for each pancake.
  • When batter begins to bubble, carefully drop about 4 or 5 banana slices onto each pancake.
  • Carefully flip the pancakes and cook until lightly browned (approximately 30 to 60 seconds).
  • Remove from pan.
  • Tip: I top these with Smucker's Sugar Free Breakfast Syrup. A great-tasting sugar free syrup that isn't runny!

2 tablespoons sugar
1 teaspoon lemon zest, if available
1/2 cup blueberries
1 egg
3 tablespoons milk
1 -2 teaspoon lemon juice
1/2 cup confectioners' sugar

Steps:

  • NOTE: I make these scones using the "Bisquick Heart Healthy" lower fat product, but the nutrition content stated is for Standard Bisquick.
  • In a large bowl, gently toss Bisquick Mix, sugar and blueberries. If you have a fresh lemon, you can also add 1 t. lemon ZEST for a great flavor boost. Set aside dry mixture.
  • In a 1 cup measure, whisk milk and egg together.
  • Pour liquids into Bisquick bowl and use a fork to mix things together gently. Use a large cookie scoop to portion out 8 dollops of dough onto parchment paper.
  • Use wet fingers to flatten each scone slightly.
  • Bake 400 degrees for 10 minutes or until edges are browning.
  • Glaze: Mix lemon juice with Confectioners Sugar to achieve a thin consistency. Drizzle over cooled scones.
  • NOTE: Due to low fat content, these probably won't freeze very well, so make them and eat them!
