ADEL'S RED WINE STEAK MARINADE

Adel's Red Wine Steak Marinade image

Granddaddy's favorite steak marinade. Can be used with all cuts of beef. I usually reserve 1/2 cup of the marinade, then simmer it down to a syrup, and use it as a sauce for the steaks.

PAN-SEARED STEAK WITH RED WINE SAUCE

Pan-Seared Steak With Red Wine Sauce image

You can use any cut of steak, either bone-in or boneless, to make this classic French bistro dish. Steaks cut from the tenderloin, such as filet mignon, are the most tender pieces of beef, though they lack the assertively beefy chew of sirloins and rib steaks. Adding brandy to the pan sauce not only contributes flavor; its high alcohol content and acidity help extract flavor from the pan drippings. However, if setting it on fire makes you nervous, skip that step and let the brandy simmer down for an extra few minutes to cook off most of the alcohol. Make sure to open a good bottle of red wine to use in the sauce here, preferably one that you're happy to finish off with dinner. This recipe is part of The New Essentials of French Cooking, a guide to definitive dishes every modern cook should master. Buy the book.

Categories     dinner, steaks and chops, main course

Time 35m

Yield 4 servings

Number Of Ingredients 11

Kosher salt, as needed
Freshly ground black pepper, as needed
1 1/2 pounds boneless steak, or 1 3/4 pounds bone-in steak (1 1/2 inches thick)
2 shallots
2 1/2 tablespoons unsalted butter
1/2 teaspoon neutral oil, such as grapeseed
2 tablespoons good brandy, preferably Cognac
1/3 cup dry red wine
1/3 cup beef or chicken stock, preferably homemade
1 tablespoon chopped chives
Watercress, for serving

Steps:

  • Generously sprinkle salt and pepper all over steaks, then let steaks rest uncovered for 15 minutes at room temperature. Meanwhile, mince the shallots.
  • Melt 1/2 tablespoon butter and the oil in a large skillet over medium-high heat until almost smoking. Add steaks and cook until done to taste, about 3 to 4 minutes per side for rare and a little longer for medium-rare or medium. (Bone-in steaks take a few minutes longer to cook through than boneless.) If the pan begins to smoke or burn, lower the heat. Transfer steaks to a plate to rest while you prepare the sauce.
  • Add shallots to the skillet and cook over medium heat until lightly browned, about 1 minute. Add brandy to the skillet and use a long-handled match or igniter to set the brandy on fire. (Stand back when you do this.) Let flames die out, then add red wine and cook until reduced and syrupy, 2 to 4 minutes. Add stock and boil until reduced and thickened, 3 to 4 minutes longer.
  • Remove pan from heat and whisk in remaining 2 tablespoons butter and the chives. Serve steaks and sauce immediately with watercress.

DAD'S SIMPLE STEAK MARINADE

Dad's Simple Steak Marinade image

This recipe is one my father taught me. It is the simplest homemade marinade! Just 5 common ingredients! When used overnight, the soy sauce, Worcestershire sauce, and garlic make flank, skirt and sirloin steaks flavorful and, most importantly, tender for the grill! For more flavor, add Kosher salt and cracked black pepper to your steak while it cooks. Red wine vinegar or balsamic vinegar may be substituted for the red wine.

Provided by Julie Evink

Categories     Main Course

Time 2h22m

Number Of Ingredients 8

1 c. red wine
1 Tbsp soy sauce
¼ c. olive oil
1 tsp kosher salt
1 tsp ground black pepper
2 tsp minced garlic
1 tsp onion powder
1 ½ lb steaks ((I love Sirloin, Ribeye or New York Cut Steaks!))

Steps:

  • In a small bowl whisk all the ingredients except the steak.
  • Add steaks to a resealable zip lock bag or large bowl and pour the marinade over the top of the steak. Squeeze as much air out of bag as possible and seal.
  • Marinate for at least 2 hours or overnight.
  • To make steaks in skillet: Turn heat to high and let preheat a few minutes until skillet is hot. Place steaks in skillet. Cook each side for 3 minutes. Reduce heat to medium-high. Cook steaks to the desired doneness, flipping as needed. It will take about 10 minutes depending on thickness of steaks. I prefer mine to be about 145 degrees which is medium.
  • To make steaks on the grill. Preheat grill to medium-high. Place steaks on grill. Cook 4-6 minutes per side or until the internal temperature reaches at least 145 degrees F for medium.
  • Let steaks rest 3 minutes before serving.

RED WINE VINEGAR MARINADE

Red Wine Vinegar Marinade image

Always marinate food in refrigerator; never at room temperature. Allow 1/4 to 1/2 cup of marinade for each 1 to 2 lbs. of meat. For tenderization to take place, beef must be marinated at least 6 hour or longer. Marinating longer than 24 hours causes the meat fibers on the surface to break down, resulting in a "mushy" texture. Remaining marinade may also be served as a sauce with the grilled meat or poultry. It should be heated to the boiling point before serving, if not using as a sauce it should be discarded.

Provided by Catnip46

Categories     Weeknight

Time 30m

Yield 1/4 cup

Number Of Ingredients 6

1/4 cup red wine vinegar
2 tablespoons vegetable oil
1 tablespoon Dijon mustard
1 minced garlic clove
1/2 teaspoon dried Italian seasoning
1/8 teaspoon fresh coarse ground black pepper

Steps:

  • Mix marinade ingredients.
  • Pour marinade in a heavy-duty seal-able plastic bag or a glass dish. Select dishes in which the foods will fit snugly but lie flat.
  • Turn food occasionally during marinating so that all sides are equally exposed to the marinade. Marinate at least 30 minute but remember the longer time marinading the more tender and favorable the meat.
  • Grill or cook food.

RED WINE MARINATED RIBEYE STEAK

Red Wine Marinated Ribeye Steak image

I made this marinade to get rid of a partial bottle of wine and some fresh herbs that needed using. It turned out to be the best steak I've ever made. Cooking time is marinating time.

Provided by under12parsecs

Categories     Steak

Time 8h5m

Yield 2 serving(s)

Number Of Ingredients 12

1/2 cup red wine (cabernet sauvignon)
1/4 cup soy sauce
2 tablespoons honey
2 tablespoons Dijon mustard
1/4 cup brown sugar
2 tablespoons Worcestershire sauce
2 teaspoons salt
1 teaspoon pepper
1 tablespoon rosemary, chopped
1 tablespoon thyme, chopped
3 garlic cloves, minced
2 rib eye steaks (we used THICK cut, like 2 inches!)

Steps:

  • Whisk together all ingredients but the steak. Pour into a large ziplock bag. Add steaks and smoosh them around to coat. Allow the steak to marinate in the fridge for several hours. Mine went about 8, but I think you could do overnight.
  • Allow steak to come back to room temperature so the meat cooks evenly. Grill on a charcoal grill to your desired doneness.

If possible, allow the steak to marinade in the red wine for at least 2 hours. This will give it time to absorb the aromas of the red wine while also beginning to break down the protein, resulting in a soft piece of meat. If you’re in a hurry, 30 minutes will enough. You may marinate it for up to 8 hours without risking spoilage.
