GLAZED BABY CARROTS WITH BOURBON AND MAPLE SYRUP



Glazed Baby Carrots with Bourbon and Maple Syrup image

Number Of Ingredients 6

1 pound baby carrots, rinsed and tops removed
Sea salt
1 tablespoon butter
3 tablespoons bourbon whiskey
1/4 cup maple syrup
Pinch freshly cracked black pepper

Steps:

  • Bring a medium pot of water to a boil over medium heat. Add the baby carrots along with some salt and cook until just tender, about 5 minutes. Drain and set aside.
  • In a small saute pan, add the butter, whisky and maple syrup and bring to a boil over medium heat. Lower the heat to a strong simmer and let the mixture reduce until thick and syrupy, about 6 to 8 minutes. Add the carrots and saute them until well glazed and just starting to color, about 4 to 5 minutes. Transfer the carrots to a serving bowl and sprinkle with the salt and pepper, to taste. Serve immediately.

5 medium carrots, peeled
1/4 cup coconut oil
2 teaspoons honey
1/4 teaspoon togarashi or cayenne if desired (See Cook's Note)
Kosher salt and freshly ground black pepper
1/8 cup chopped parsley

Steps:

  • Cut the carrots in thirds crosswise. Then cut each piece lengthwise into halves or fourths, depending on the width of the carrots. This should create spears that have at least one flat side.
  • Add the oil to a cast-iron skillet and heat over medium heat. When the oil is hot, place the carrots in the oil cut-sides down and cook without turning until tender, about 6 minutes. The cut sides will be very, very dark. Some may even call it burnt. Don't worry, it'll taste great!
  • Add the honey, togarashi and 1/4 cup of water to the skillet and stir up all the carrots. Cook, stirring constantly, until most of the water has cooked off and the carrots are coated. Season with salt and pepper. Top with the chopped parsley. (This will add a fresh flavor and it looks really pretty.)
  • Serve right away to your impressed and amazed friends!

Add the carrots, 3 tablespoons maple syrup, 4 strips lemon zest, 2 thyme sprigs, 3/4 teaspoon kosher salt, a pinch of cayenne and 1/2 cup water; stir. Bring to a boil, then cover and simmer until tender but still saucy, 15 minutes. Discard the thyme; top with chopped chives.

1.3kg carrots
50g butter
1 tbsp maple syrup
1 rounded tbsp wholegrain mustard

Steps:

  • Peel and cut the carrots into batons. (You can do this up to 24 hours ahead and keep them in a polythene bag in the fridge.) Tip them into a pan, pour in enough boiling water just to cover, bring back to the boil, then put a lid on the pan and cook for 4-5 minutes until the carrots are just tender.
  • Meanwhile, put the butter and maple syrup in a small pan. Heat until the butter is melted then stir in the mustard. Take off the heat. Drain the carrots and tip into a warmed serving dish.
  • Pour the warm maple glaze over the carrots. Taste and adjust seasoning to suit.

4 large carrots , cut into thick batons
3 parsnips , cut into thick batons
40g butter
1 star anise
few thyme sprigs
3 tbsp maple syrup

Steps:

  • Tip the carrots and parsnips into a large pan with the butter, star anise, thyme, maple syrup and 250ml water. Season with salt, then cover and boil for 10-15 mins until the water has evaporated and the vegetables are tender. Turn down the heat and cook until the carrots and parsnips are starting to caramelise and turn a light golden brown.
  • Shake the pan gently to cover the veg in the sticky syrup, then season with cracked black pepper and serve.

  • Preheat oven to 475 degrees.
  • In shallow baking dish, toss carrots with oil and salt to coat.
  • Roast in oven for 10 minutes.

2 teaspoons cider vinegar

Steps:

  • Heat butter in a 12-inch heavy skillet over moderate heat until foam subsides, then cook shallots, stirring occasionally, until softened, about 4 minutes.
  • Add chili powder, salt, and pepper and cook, stirring, until chili powder is very fragrant, about 1 minute.
  • Add carrots, maple syrup, and wine and simmer, covered, stirring occasionally, until carrots are tender, about 20 minutes.
