These vivid, rich tasting red velvet brownies are covered in a smooth mocha frosting. These brownies are pure decadence!

1 4oz bittersweet baking bar, chopped
3/4 cup butter
2 cup sugar
1 bottle red food coloring (1 oz)
4 eggs
2 teaspoons vanilla extract
1 1/2 cups flour
1/8 teaspoon salt
1 stick butter softened
4 oz cream cheese softened
⅓ cup cocoa powder
3-4 cups powdered sugar
1 teaspoon vanilla
2 tablespoons cooled coffee

Steps:

  • Preheat the oven to 350 degrees. Spray a 9 x 13 inch baking pan with non stick spray and set aside.
  • Melt chocolate and butter in a microwave safe bowl and heat until chocolate and butter has melted, whisk until smooth. Whisk in the sugar, eggs, and food coloring. Add in the vanilla.
  • Stir in the flour and salt until blended.
  • Pour batter into prepared pan and bake brownies for 33-35 minutes or until brownies begin to pull away from the edge of the pan and a toothpick inserted in the center comes out clean.
  • Allow the brownies to cool completely.
  • In a bowl, cream together the butter and the cream cheese until smooth. Beat in the cocoa powder. Add powdered sugar 1 cup at a time until blended. Beat in the vanilla and the coffee until the frosting is a spreadable consistency. Spread frosting over the cooled brownies.

1 cup white sugar
½ cup unsalted butter, melted
1 teaspoon vanilla extract
¼ cup cocoa powder
1 pinch salt
1 tablespoon red food coloring
1 teaspoon cider vinegar
2 eggs, lightly beaten
¾ cup all-purpose flour
1 (8 ounce) package cream cheese, softened
¼ cup white sugar
1 egg
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 baking dish with 1 teaspoon butter.
  • Whisk 1 cup sugar and melted butter together in a bowl. Add vanilla, cocoa powder, salt, food coloring, vinegar, and eggs to sugar mixture, blending well after each addition.
  • Stir flour into sugar mixture until batter is just combined. Pour batter into prepared baking dish, reserving 1/3 cup batter for cream cheese layer.
  • Blend cream cheese, 1/4 cup sugar, egg, and vanilla extract together in a bowl. Spread cream cheese mixture over brownie batter in the prepared baking dish. Pour reserved 1/3 cup brownie batter in 2 rows over cream cheese layer. Pull a knife through the batter rows into cream cheese layer to form swirls.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Cool completely before slicing.

Steps:

  • Preheat oven to 350°. Line bottom and sides of a 13- x 9-inch pan with aluminum foil, allowing 2 to 3 inches to extend over sides; lightly grease foil.
  • Microwave chocolate and butter in a large microwave-safe bowl at HIGH 1 1/2 to 2 minutes or until melted and smooth, stirring at 30-second intervals. Whisk in 2 cups sugar. Add eggs, 1 at a time, whisking just until blended after each addition. Add food coloring, peppermint extract, and 1 tsp. vanilla. Gently stir in 1 1/2 cups flour and 1/8 tsp. salt. Pour batter into prepared pan.
  • Beat cream cheese and remaining 1/4 cup sugar at medium speed with an electric mixer until fluffy. Add egg whites and remaining 1 tsp. vanilla, and beat until blended. Stir in 2 Tbsp. flour until smooth. Drop cream cheese mixture by heaping tablespoonfuls over batter in pan; gently swirl with a knife.
  • Bake at 350° for 30 to 32 minutes or until a wooden pick inserted in center comes out with a few moist crumbs. Cool completely in pan on a wire rack (about 1 hour). Lift brownies from pan, using foil sides as handles. Gently remove foil; cut brownies into squares.
