CLASSIC RED SAUCE

1 28-ounce can whole peeled tomatoes
2 tablespoons extra-virgin olive oil
1/3 red onion, medium-diced
3 cloves garlic, cut into chunks
Pinch of red pepper flakes (optional)
Kosher salt and freshly ground pepper
2 tablespoons torn fresh basil
1 pound penne or spaghetti, cooked until al dente

Steps:

  • Puree the tomatoes to a smooth, creamy consistency in a food processor or with an immersion blender. (If you like a more country feel, you can wait and break them up in the pan later with a wooden spoon.)
  • Heat the olive oil over medium-high heat in a large saucepan. When hot, add the onion and saute 5 to 6 minutes, or until soft. Add the garlic and cook 2 to 3 minutes, until you see the color start changing. If you'd like to make the sauce spicy, add the red pepper flakes.
  • Add the tomatoes and season with salt and pepper to taste. Reduce the heat to medium low and simmer about 30 minutes. (If you did not puree the tomatoes, use a wooden spoon to break them into pieces while they cook.) Strive for balance in the consistency of the sauce: It has to be fluid, but it should not look overly wet. Add the basil and remove from the heat. Toss with just-cooked pasta.

Plain, simple, no frills, basic red sauce that tastes great on a variety of pasta and is not watered down. For making a good sauce, use canned tomatoes. Except for the summer months, the 'fresh' tomatoes are usually harvested when green and left a long time to ripen. Add more red pepper flakes if you like your sauce spicy!

4 tablespoons olive oil
2 cloves garlic
¼ cup chopped onion
2 tablespoons dried parsley
1 tablespoon dried basil
ground black pepper to taste
1 (29 ounce) can Italian-style stewed tomatoes, drained
1 pinch crushed red pepper flakes
12 ounces angel hair pasta

Steps:

  • In a medium saucepan over low heat, warm oil and saute garlic; heat through until the garlic turns translucent, not brown. Add onion and cook over low heat until translucent; 5 to 10 minutes.
  • Add parsley, basil and ground black pepper; stir. Add tomatoes and cover; raise heat to medium and bring to a strong simmer. Lower heat and add red pepper flakes. Cover saucepan and cook for 25 to 35 minutes.
  • The sauce can be run in the food processor for 2 to 3 seconds to achieve a more uniform sauce or let the sauce cook over medium-low heat uncovered for 10 minutes or until it thickens.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 6 to 8 minutes or until al dente; drain and serve with sauce.

1 (16 ounce) package penne pasta
6 slices bacon
½ teaspoon chopped garlic
1 red onion, chopped
2 tablespoons olive oil
3 tomatoes, chopped
1 green chile peppers, diced
½ cup grated Parmesan cheese
4 leaves fresh basil
2 tablespoons grated Parmesan cheese

Steps:

  • In a large pot with boiling salted water cook penne pasta until al dente. Drain well.
  • Meanwhile, in a medium skillet cook the bacon strips until mostly cooked, but not crisp. Remove from pan, break into bite size pieces. Drain bacon grease from pan. Return cooked bacon to pan, add minced garlic, chopped red onion, olive oil and chili pepper. Saute until onion is soft, about 5 minutes. Add chopped tomatoes, 1/2 cup of grated Parmesan cheese and fresh basil. Simmer for 10 minutes.
  • Pour ingredients into a large bowl. Add additional grated Parmesan cheese to top and serve immediately over cooked and drained pasta.

1 (28-ounce) can pelati tomatoes*
2 tablespoons extra-virgin olive oil, plus more for serving
1/3 red onion, medium diced
3 cloves garlic, sliced into chunks
Pinch red pepper flakes, optional
2 handful fresh basil, torn, plus more for serving
Salt and freshly ground black pepper
1 pound spaghetti, for serving
Freshly grated Parmesan cheese, for serving

Steps:

  • In a food processor, puree the tomatoes to a smooth creamy consistency.
  • Add olive oil to a large pan over medium heat. Once hot, add the onions and saute until they are soft, and before it actually starts browning a bit, add the garlic. If you'd like to make the sauce spicier, add a pinch red pepper, optional.
  • Add the tomatoes and season with salt and pepper.
  • Simmer on a medium-low flame for about a half hour. Thrive for balance in the consistency of the sauce, it has to be fluid but it should not look overly wet. A few minutes before taking the sauce off the fire, add half the basil and season with salt and pepper.
  • To serve: Cook a nice al dente pasta, dress with red sauce and finish with some freshly grated Parmesan, a couple of leaves of basil and sprinkle with extra-virgin olive oil.

I don't know if it was created out of necessity because it was 'cheap' to make or if it was passed down in the family, but I still love it and love making and eating it. (it's also a good way to 'sneak' cauliflower into your kids diet)

1 large head cauliflower (trimmed to just florets)
1 onion, chopped
3 garlic cloves, chopped
2 tablespoons olive oil
1 teaspoon dried basil (or Italian Seasoning)
28 ounces crushed tomatoes
water
1 lb dry pasta (I like a short cut pasta like rotini or rigatoni)
salt
1/4 cup parmesan cheese, grated (plus more for serving)
1/4 cup fresh basil, chopped

Steps:

  • Bring a large pot of salted water to a boil and cook according to package directions, make sure that your pasta is a little undercooked as you will finish it with the 'sauce'
  • While the pasta is cooking, trim medium sized florets from large head of cauliflower.
  • Sautee onion, garlic and dried basil in olive oil till translucent and soft.
  • add cauliflower florets and continue sauteeing another 2-3 minutes.
  • Add crushed tomato, cover and simmer until cauliflower is tender.
  • Drain pasta, return to large pot, pour tomato/cauliflower mixture over the pasta and return to heat. Allow the pasta to soak up some of the sauce while it finishes cooking.
  • Remove from heat, stir in 1/4 grated parmesean or locatelli and fresh basil.
  • serve with additional gated cheese if desired.

Known in Italian as arrabiata sauce, this is an amazing homemade red sauce. The ingredients are frugal but the end result is delicious. My fiance and I use this often when we are having friends over. Add some chicken sausage and fresh basil if you want to make it extra special.

  • Heat oil in a five to six quart pot over moderately high heat.
  • Add garlic and pepper flake, saute until golden. Be careful not to burn the garlic.
  • Stir in tomatoes and salt.
  • Simmer uncovered for 35 minutes.
  • Serve with pasta.

  • Heat oil in a pan over medium flame and add minced garlic along with chopped red chilli and red chilli flakes. Stir and saute for 2 minutes. Take another pan, pour the water and bring it to a boil. Then, add pasta to the boiling water along with some salt and 1/2 tbsp oil. Cook the pasta for a few minutes. When it is cooked through, drain the extra water and transfer the pasta to another bowl.
  • Now, heat the olive oil and add the peeled (or pureed) tomatoes, basil and parsley to the pan. Mix all the ingredients well and let it simmer for 10 minutes until the sauce starts to thicken. When the sauce starts gaining consistency, put off the burner and add salt and black pepper powder to the sauce. Keep the sauce warm. Add the pasta over the warm sauce and toss carefully so that each piece is coated with the sauce.
  • Cook for 2-3 minutes more and then serve the Red Sauce Pasta immediately. To make it more aromatic, you can dry roast a few basil leaves, crush them with some chilli flakes, oregano and add it to the dish. This herb fusion will make your pasta even more delectable. Serve it with garlic bread and relish this delicious pasta.
