SAUSAGE, RED PEPPER AND FETA FRITTATA



Sausage, Red Pepper and Feta Frittata image

4 tablespoons extra-virgin olive oil
1 cup chopped onion
1 pound hot Italian sausage, casings removed
1 tablespoon chopped garlic
1 tablespoon chopped fresh oregano
1 cup chopped roasted red peppers
8 large eggs
1/4 cup heavy whipping cream
1 cup crumbled feta cheese
Pinch of smoked salt
Freshly ground black pepper
1 bunch fresh chives, chopped
1 lemon, zested and juiced
1 cup sour cream
1/4 cup extra-virgin olive oil
Salt and freshly ground black pepper

Steps:

  • For the frittata: Preheat the oven to 325 degrees F.
  • In a large ovenproof saute pan over high heat, add the olive oil, onions, sausage, garlic and oregano, stirring frequently to break up the clumps. Add the roasted peppers and cook about 10 minutes.
  • In a large bowl, whisk together the eggs, cream, feta cheese, smoked salt and pepper. Pour the mixture into the saute pan and bake until the eggs are set and golden brown and the frittata pulls away from the sides slightly, about 35 minutes. Remove the frittata from the oven and let cool about 10 minutes.
  • For the sauce: In a small bowl, combine the chives, lemon zest and juice, sour cream and olive oil. Season with salt and pepper.
  • Cut the frittata into pieces and serve with dollop of the sour cream sauce.

1 pinch white sugar

Steps:

  • Combine bell peppers, feta cheese, and onion in a large bowl.
  • Combine olive oil, balsamic vinegar, mustard, honey, garlic, salt, pepper, and sugar in a small lidded jar and shake vigorously to combine. Pour over salad and toss to combine.

1 (13.75 ounce) can low-sodium chicken broth
1 teaspoon minced garlic
¾ teaspoon dried oregano
⅛ teaspoon dried basil
1 cup heavy cream
½ cup crumbled feta cheese

Steps:

  • In a food processor or blender, process undrained peppers with chicken broth, garlic, oregano, and basil until smooth.
  • Transfer liquid to a saucepan, and heat over medium-low heat. Simmer for 5 minutes. Slowly whisk in cream, and heat through.
  • Serve in soup bowls over crumbled feta cheese. Sprinkle additional feta cheese and oregano on top for garnish.

  • Char peppers directly over gas flame or in broiler until blackened on all sides. Enclose in paper bag 10 minutes. Peel, seed, and quarter peppers. Puree peppers, oil, garlic, and cheese in processor. Season with salt and pepper. Chill at least 3 hours or overnight.

3 Tbsp. store-bought or homemade pesto
2 medium roasted peppers, patted dry and finely diced (see Note)
125 grams feta cheese, crumbled
Splash or 2 hot pepper sauce, such as Tobasco

Steps:

  • Combine the yogurt, mayonnaise and pesto in a medium bowl. Mix in remaining ingredients. Cover and refrigerate until needed. Can be made a day in advance of serving. When needed, transfer to a decorative bowl, set on a platter and surround with things such as sliced, toasted baguette, crackers or wedges of pita. Note: Roasted red peppers are sold in jars in the pickle aisle. Recipe Options: Instead of store-bought, you could make this spread with homemade roasted red peppers. To prepare them, place two medium red bell peppers in a small baking pan lined with parchment paper.
