12 oz. lasagna noodles
2 tbsp. extra-virgin olive oil
1 lb. fresh baby spinach
Freshly ground black pepper
3 c. ricotta cheese
2/3 c. Parmesan cheese, plus more shaved for serving
1 (24 oz.) jar marinara sauce
2 (12-oz.) jars roasted red peppers, roughly chopped
10 oz. shredded low-moisture mozzarella
Fresh basil leaves, torn, for serving

Steps:

  • Preheat the oven to 350. In a large pot of boiling salted water, cook the noodles, stirring a few times to prevent sticking, until very al dente, about 6 minutes. Drain.
  • Preheat a large (12-inch) nonstick T-fal skillet over medium until the Thermo-Spot turns solid red. Add the oil, swirl to coat. Add the spinach, by the handful, tossing in between to wilt before adding the next addition, as necessary. Continue to cook, tossing, until spinach is wilted, about 5 minutes. Season with salt and pepper.
  • Scrape spinach into a colander and let cool slightly. Wipe out skillet with paper towels and reserve. Using a towel, wring out as much moisture as possible from the spinach and then transfer into a medium bowl.
  • In another medium bowl, stir together the ricotta and parmesan; season with salt and pepper.
  • In the reserved skillet, spread ¾ cups of the marinara in the bottom of the skillet.
  • Arrange a third of the noodles over the sauce, breaking the noodles up to fit if necessary. Spread 3/4 cups of the marinara over the noodles and scatter ⅓ of the roasted pepper on top. Dollop with half of the ricotta mixture and sprinkle with half of the spinach and ⅓ of the mozzarella. Repeat layering one time with another third of the noodles, 3/4 cups of the marinara, third of the roasted pepper, the remaining half of the ricotta mixture, the remaining half of the spinach and another third of the shredded mozzarella.
  • Top lasagna with the remaining third of the noodles and spread with the remaining marinara. Scatter remaining roasted pepper and mozzarella over top. Cover with foil and bake for 30 minutes. Remove the foil and bake until cheese is melted and edges are golden and crispy, about 20 minutes more.
  • Let sit 10 minutes before serving. Top with shaved Parmesan and basil.

2 tablespoons butter
2 cloves garlic, chopped
Two 28-ounce cans San Marzano tomatoes
2 cups passata or tomato sauce
A handful of fresh basil leaves, torn
1 small onion, peeled and halved
Salt and freshly ground black pepper
Salt and freshly ground black pepper
2 boxes or bags frozen chopped organic spinach, defrosted and wrung dry
1 1/2 pounds mozzarella, thinly sliced, thickly shredded or diced
3 cups fresh ricotta (cow or sheep's milk), drained
2 cups grated Parmigiano-Reggiano (cow's milk) or pecorino (tangy sheep's milk)
2 egg yolks, lightly beaten
Freshly grated nutmeg, as needed
1 box no-boil flat lasagna noodles, such as Barilla, or 12 curly regular dried lasagna noodles

Steps:

  • Heat the EVOO in a saucepot and add the butter. Add the garlic and cook, stirring, for 2 minutes. Add the tomatoes and crush them up a bit. Add the passata, a fat handful of torn basil leaves, the onion and some salt and pepper. Bring to a simmer and simmer for 40 to 45 minutes. Remove the onion and set the sauce aside.
  • Separate the spinach while adding it to a mixing bowl. Add half of the mozzarella, the ricotta, 1 1/2 cups of the Parmigiano-Reggiano and the eggs yolks and mix to combine. Season with grated nutmeg, salt and pepper.
  • Layer a little sauce into a lasagna pan and top with three flat lasagna sheets or four curly. Top with a little more sauce, and then half of the spinach and cheese mixture. Repeat with another layer, and end on top with lasagna sheets. Top with some sauce and the remaining mozzarella and Parmigiano-Reggiano.
  • The lasagna can be stored before or after baking for a make-ahead meal, or baked to serve immediately. When baking the first time, bake at 375 degrees F, uncovered, from room temperature until cooked through and brown and bubbling on top, 60 to 70 minutes. If reheating, bake at 375 degrees F, covered, for 40 to 45 minutes.
  • Let the lasagna rest 20 minutes before cutting. Serve with extra sauce on the side.

9 lasagna noodles
4 garlic cloves, minced

Immediately place peppers in a bowl; cover and let stand for 15-20 minutes. Peel off and discard skin. Cut peppers into 1/4-in. strips., Cook lasagna noodles according to package directions; drain. In a saucepan, cook red peppers and garlic in oil for 1 minute; add the tomatoes, parsley, sugar, basil and pepper. Simmer, uncovered, for 20 minutes. In a saucepan, melt butter. Top with three noodles, 1-1/2 cups pepper sauce, 1 cup white sauce and 1/3 cup Parmesan cheese. Repeat layers. Top with remaining noodles, white sauce and pepper sauce. 1/2 pound baby spinach
2 large cloves garlic, finely chopped
1 large yellow bell pepper, chopped
1 large orange bell pepper, chopped
1 (42.0-ounce) can tomato sauce
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon crushed red chile flakes
1/4 teaspoon fine sea salt
1/4 teaspoon ground black pepper
Olive spray oil
3 cups low-fat cottage cheese
1 cup shredded part-skim mozzarella cheese, divided
1/4 cup grated Parmesan cheese
8 large fresh or cooked lasagna noodles

Steps:

  • Preheat oven to 375°F. Lightly coat a 9x13-inch baking dish with spray oil and set aside.
  • In a large skillet, heat oil over medium high heat.
  • Add bell peppers and garlic and cook until tender and fragrant, about 3 minutes.
  • Add spinach and cook until wilted, about 2 minutes.

2 tablespoons balsamic vinegar

  • Preheat the oven to 350°F Place the peppers in a roasting tin and drizzle with the oil and balsamic vinegar. Roast for 20 minutes, add the garlic and roast for a further 10 minutes until the peppers are softened and charred.

1 (10 ounce) package fresh spinach, trimmed and washed
1 tablespoon olive oil
1 large onion, chopped
4 cloves garlic, minced
2 carrots, diced
3 cups sliced mushrooms
1 1/2 teaspoons dried oregano
1 teaspoon dried thyme
12 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon hot pepper flakes
2 (19 ounce) cans tomatoes, chopped
1 (10 ounce) jar roasted red peppers
1/4 cup tomato paste
2 tablespoons white wine vinegar
1/4 cup butter
1/2 cup all-purpose flour
4 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper and nutmeg
1 cup shredded asiago cheese or 1 cup Fontina cheese
1/2 cup freshly grated parmesan cheese

Steps:

  • To make Tomato Sauce: In medium saucepan, heat oil over medium heat.
  • Cook onion and garlic for about 3 minutes.
  • Add next 7 ingredients (up to, but not including, tomatoes) and cook for about 8 minutes or until liquid has evaporated.
  • Stir in tomatoes, peppers, paste and vinegar.
  • Heat to boiling, reduce temperature and, stirring often, simmer for about 1 hour or until thick enough to mound on a wooden spoon.
  • In large pot of boiling water, cook lasagna noodles for about 8 minutes or until tender.
  • Drain (reserving hot water) and rinse under cold water.
  • Set aside.
  • Stir spinach into hot water and cook for 1 minute.

  • To make White Sauce: Melt butter in medium saucepan, gradually whisk in flour and over medium heat cook, stirring constantly, for about 3 minutes.
  • Remove pan from heat and whisk in milk, salt, pepper and nutmeg.
  • Cook over medium heat, stirring constantly, until thickened (10-15 minutes).
  • Whisk in 1/2 cup Asiago and 1/3 cup Parmesan cheeses until melted.
  • To Assemble: Spread 1/4 of the tomato sauce in a 9 by 11 inch baking dish.
  • Top with single layer of noodles, trimming to fit dish.
  • Repeat layering (tomato sauce/noodles).
  • Spread with 1/3 white sauce, and a single layer of noodles.
  • Top with all of the spinach and the remaining Asiago cheese.

1 (16 ounce) jar prepared alfredo sauce
3 ounces freshly grated parmesan cheese
1/2 teaspoon red pepper flakes
4 cups finely chopped cooked chicken
2 (8 ounce) containers chive and onion cream cheese
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
3/4 teaspoon garlic salt
black pepper, to taste
9 no-boil lasagna noodles
2 cups shredded italian three-cheese blend

Steps:

  • Make the sauce: Process all ingredients in a food processor until smooth, stopping to scrape down sides.
  • Preheat oven to 350°F.
  • Stir together the chicken, cream cheese, spinach, garlic salt, and pepper.
  • Layer a lightly greased 11x7 inch baking pan with one-third of the Red Bell Pepper sauce, 3 noodles, one-third chicken mixture, and one-third cheese. Repeat layers twice. Place baking dish on a baking sheet.
  • Bake, covered, for 50 to 55 minutes. Uncover and bake 15 minutes longer.
