- In a salad bowl, combine the lettuce, oranges, cheese and peppers. , In a small bowl, whisk the oil, honey, vinegar, mustard and salt. Stir in onion. Pour over salad and toss to coat. Sprinkle with almonds. Serve immediately.

- Arrange spinach leaves on a large platter or individual salad plates. Top with mandarin sections and chopped red onion. Whisk together marmalade and vinegar. Stream oil into dressing while continuing to whisk.

- In a small skillet, melt 3 tablespoons sugar over low heat. Add almonds; stir until coated. Cool; break into small pieces and set aside. Steps:
- Shake first 6 dressing ingredients in a jar and refrigerate.
- Stir almonds and sugar in a small pan over medium heat until sugar melts and starts to caramelize and almonds are very lightly toasted.
- Scrape into metal bowl and cool to room temperature.
- Break up and store covered at room temperature.
- Just before serving, put chopped lettuces in a large bowl.
- Add celery, oranges, onions and almonds.
- Shake dressing well and pour over salad.
- Toss to mix and coat.

- In a jar with a tight fitting lid, combine the oil, vinegar, sugar, parsley, salt and pepper. Cover and shake well. Refrigerate until use.
