5 cloves garlic, roughly chopped
1/4 teaspoon crushed red pepper
2 teaspoons kosher salt
2 teaspoons roughly chopped fresh thyme leaves

Steps:

  • Preheat the oven to 450 degrees F.
  • Toss the cauliflower with the olive oil, garlic, and red pepper on a baking sheet; sprinkle with the salt and thyme and toss again. Roast until golden and tender, about 20 minutes. Transfer to a serving bowl and serve.

This is a recipe from Epicurious by Dale Talde, Thistle Hill Tavern, Brooklyn, NY that we made for dinner. DH loves cauliflower and me, not so much. But this is awesome, spicy and delicious. I will now eat cauliflower.

1 head cauliflower, leaves trimmed
2 tablespoons canola oil, plus
1 tablespoon canola oil
kosher salt and black pepper, freshly ground
1/2 cup hot pepper sauce, I use Frank's Red Hot Sauce
1/2 cup Asian chili sauce
1/2 cup unsalted butter, cut into small pieces
1 tablespoon blue cheese, crumbled (or more)

Steps:

  • Arrange a rack in the middle of the oven and preheat to 375 degrees Fahrenheit.
  • Cut the stalk end of the cauliflower off so the the head sits flat.
  • Place cauliflower a large baking sheet, I sprayed mine with cooking spray.
  • Rub 2 tablespoons of canola oil all over cauliflower.
  • Season with salt and pepper to taste.
  • Roast until the outside starts to brown about 30 minutes.
  • Transfer cauliflower to a cutting board and let cool.
  • Once the cauliflower is cool, cut into florets.
  • In a medium saucepan over moderate heat bring the hot sauce, Sriacha to a boil.
  • Reduce the heat to a simmer and slowly whisk the butter until fully incorporated about 5 minutes.
  • Remove from heat and let cool.
  • In a large, deep sauté pan over moderate heat warm the remaining 1 teaspoon canola oil.
  • Add the cauliflower florets, season to taste with salt and pepper.
  • Saute until until heated through.
  • Add enough Buffalo Sauce to coat and continue sautéing until both the cauliflower and the sauce are hot, about 5 minutes.
  • Transfer cauliflower to serving plate and garnish with blue cheese.

1 large head cauliflower (see note)
2 dried red chilies
1/2 sweet red pepper, seeded and coarsely chopped
3 to 4 tablespoons fruity olive oil or walnut oil

Steps:

  • Trim the cauliflower of leaves and stringy or tough stalk. Separate into florets and cut the stalk into thick strips. Boil in salted water until just cooked, about 10 minutes, drain and run under the cold tap.
  • Meanwhile, chop up the chilies and put with their seeds and the red pepper into a large frying pan. Add the oil. Heat gently for about 10 minutes to extract some of the pepper flavors into the oil.
  • Raise heat to moderate and put in the cauliflower. Stir to reheat; the vegetable should stew rather than fry; it must not color. Transfer the vegetable to a hot dish with the pepper and chili bits leaving behind any surplus oil. Serve immediately.

1 small head cauliflower, broken into small florets
1 cup all-purpose flour
1 teaspoon paprika
salt and ground black pepper to taste
2 cups almond milk, or as needed
½ cup bread crumbs, or as needed
2 ounces vegan margarine (such as Earth Balance®)
1 (8 ounce) bottle hot pepper sauce (such as Frank's RedHot®)

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Line a cookie sheet with parchment paper.
  • Mix flour, paprika, salt, and pepper together. Add enough almond milk to create a slightly thick, soupy texture.
  • Place bread crumbs in a shallow bowl. Dip cauliflower pieces one at a time into the batter, then roll in bread crumbs. Place on the prepared cookie sheet.
  • Bake in the preheated oven until starting to brown, 15 to 20 minutes.
  • While 'wings' are baking, melt margarine and whisk together with hot sauce.
  • Reduce oven temperature to 425 degrees F (220 degrees C). Dip 'wings' into the sauce and place back on the cookie sheet; continue baking for 10 to 15 minutes. Serve immediately.

1 small onion
1 lime
1 medium cauliflower
1 (14 ounce) can chopped tomatoes
4 fresh jalepino bell peppers, seeded and finely chopped (or 4 fresh serrano chillies,seeded and finely chopped)
1/4 teaspoon caster sugar
3 ounces feta cheese, crumbled
salt
chopped fresh flat leaf parsley (to garnish)

Steps:

  • Chop the onion very finely and place in a bowl.
  • With a zester peel away the zest of the lime in thin strips.
  • Add to the chopped onion.
  • Cut the lime in half and add the juice from both halves to the onions and lime zest mixture.
  • Set aside so that the lime juice can soften the onion.
  • Cut the cauliflower into florets.
  • Tip the tomatoes into a pan and add the peppers (or chillies) and sugar.
  • Heat gently.
  • Meanwhile, place the cauliflower in a pan of boiling water and cook gently for 5 to 8 minutes until tender crisp.
  • Add the onions to the tomato salsa and salt to taste, stir in and heat through, then spoon about a third of the salsa into a serving dish.
  • Arrange the drained cauliflower florets on top of the salsa and spoon the remaining salsa on top.
  • Sprinkle with the feta, which should soften a little on contact.
  • Serve immediately, sprinkled with chopped fresh flat leaved parsley.

¾ cup gluten-free baking flour (such as Premium Gold® Flax and Ancient Grains All-Purpose Flour)
1 cup water
½ teaspoon garlic powder, or to taste
salt and ground black pepper to taste
2 heads cauliflower, cut into bite-size pieces
2 tablespoons butter
½ cup hot pepper sauce (such as Frank's RedHot®)
1 teaspoon honey

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Lightly grease a baking sheet with cooking spray.
  • Mix flour, water, garlic powder, salt, and pepper together in a bowl using a whisk until batter is smooth and somewhat runny. Add cauliflower to batter and mix until cauliflower is coated; spread onto the baking sheet.
  • Bake in the preheated oven until lightly browned, 20 to 25 minutes.
  • Melt butter in a saucepan over medium heat. Remove saucepan from heat and stir hot pepper sauce and honey into butter until smooth. Brush hot sauce mixture over each cauliflower piece, repeating brushing until all the hot sauce mixture is used.
  • Bake in the oven until cauliflower is browned, about 10 minutes. Remove baking sheet from oven and allow the cauliflower to cool 10 to 15 minutes.
