RED CHICKEN POSOLE (POZOLE)

Red Chicken Posole (Pozole) image

I got this years ago from some students. It is so flavorful! Great for cold winter nights. You can use a whole chicken, or bone-in chicken breasts. I also use a whole package of the dried chilies.

Categories     main-dish

Time 2h25m

Yield 20 servings

Number Of Ingredients 12

2 pounds nix tamal (hominy)
15 dried New Mexico chili pods
2 to 3 tablespoons olive oil or vegetable oil
5 garlic cloves, plus 10 crushed cloves
4 medium onions, sliced
2 whole chickens, skins removed
3 tablespoons dried oregano
3 whole bay leaves
1/2 cup chicken base
Salt
Sliced radishes, for garnish
Sliced cabbage, for garnish

Steps:

  • Boil the nix tamal in a saucepan of water until tender, about 30 minutes; then remove it from the boiling water and set aside.
  • Break the stems from the New Mexico chilies, shake the seeds from the pods, and wash the chilies. Add the chilies to the boiling water and boil until soft, about 15 minutes. When done, put the chilies in a blender with the 5 garlic cloves. Blend until smooth and then push through a sieve. Set the paste aside.
  • In a large saute pan over low heat, heat oil and then saute the onions and 10 crushed garlic cloves until soft, about 5 minutes. Add the sauteed onions and garlic to a large stockpot with the whole chickens, oregano, bay leaves, and chicken base. Cover with water, at least 3/4 of the way up the pot. Bring to a boil and then lower the heat and simmer until the chicken is cooked, about 20 minutes.
  • Remove the chickens from the broth and allow to cool. De-bone the chickens and then return to the broth. Add the cooked hominy and chili paste. Simmer for 30 minutes and then adjust seasoning with salt. Serve in large bowls garnished with sliced radish and sliced cabbage.

CASA CHIMAYO RED POSOLE

Casa Chimayo Red Posole image

Provided by Food Network

Categories     main-dish

Time 3h30m

Yield twelve 10-ounce portions

Number Of Ingredients 13

2 to 3 pounds pork shoulder
1 teaspoon salt
1 bay leaf
1 onion, chopped fine
2 to 4 cloves garlic, minced
1 teaspoon ground cumin
10 to 12 Casa Chimayo red chile pods* (see Cook's Note), rinsed, stems and seeds removed
4 cloves fresh, peeled garlic
Salt
1 pound posole, dried and soaked overnight, or frozen and defrosted** (see Cook's Note)
1 onion, quartered
1 teaspoon salt
Optional garnishes: sliced limes, chopped fresh cilantro, finely chopped onion, oregano, cubed avocado, or grated cheese

Steps:

  • You will essentially be preparing this recipe in three stages: pork, chile and posole. These are then combined into the final posole.
  • For the pork: Place the pork shoulder in a pot and cover with water. Add the salt, bay leaf and onion. Bring to a boil, and then cook over medium heat until tender and falling off the bone, about 1 1/2 hrs.
  • Remove the meat from the broth and let cool; reserve the broth for later. Pull the meat from the bones and cut into bite-size pieces.
  • For the chile: Put the chile pods in about 2 cups of the hot broth (enough to allow the pods to puree easily in a blender) and let soak until soft, about 20 minutes.
  • Put the broth, pods and garlic in a blender and blend until smooth. (Do not fill the blender more than halfway with liquid.) Add salt to taste and set aside.
  • For the posole: Drain and rinse the posole. Put the posole in a cooking pot and cover with water; use about 2 parts water to 1 part posole. Add the onion and salt. Bring to a boil, and then lower the heat and simmer until the posole has started to "bloom", 1 to 1 1/2 hours. The posole will swell and start to resemble popcorn, but will still be chewy. At this point, add the pork, chile and any remaining broth into the posole and let it finish cooking. The key to a successful posole is watching for it to finish blooming. Posole is fully cooked when it has opened completely, and is tender when chewed. Taste and adjust seasonings.
  • Serve in a bowl and place the garnishes on the table so that each person fixes their own.

CHICKEN POZOLE

Chicken Pozole image

The canning process seals in food's flavor and natural goodness, and canned pantry essentials like green chiles, tomatoes and chicken broth elevate the flavors in this hearty, homemade Mexican stew.

Provided by Kelsey Nixon

Time 35m

Yield 4 Servings

Number Of Ingredients 20

1½ cups of chicken, shredded from a store bought (3 to 4 pound) rotisserie chicken
3 tablespoons vegetable oil
1 large yellow onion, chopped (about 2 cups)
4 garlic cloves, minced
¼ teaspoon oregano
3 teaspoons ground coriander
1½ teaspoons ground cumin
1 (4.5 oz. can) chopped green chiles
½ (14.5 oz. can) chopped tomatoes
1 (7 oz. can) canned salsa verde
2 (15 oz. cans) hominy, drained
2 (14 oz. cans) low-sodium chicken broth
Kosher salt & cracked black pepper
1 red onion, finely chopped
1 lime, cut into wedges
½ cup crema or sour cream
Crushed tortilla chips
½ cup fresh cilantro leaves, chopped
thinly sliced radishes
1 avocado, diced

Steps:

  • 1. Remove the meat from the chicken and shred it into 1-inch pieces; discard the skin and bones. Set aside about 1½ cups of the meat for the soup; reserve the remaining chicken for another use.
  • 2. In a large Dutch oven or saucepot set over medium heat, heat the oil. Add the onion and cook until translucent and fragrant, about 8 minutes. Add the garlic and cook for 3 to 4 more minutes. Add the oregano, coriander and cumin, and cook until slightly darkened and fragrant, 2 to 3 minutes. Add the green chiles, chopped tomatoes, salsa verde and cook until it just comes to a boil, about 2 minutes. Add the hominy and chicken broth and return to a boil. Reduce the heat to medium and simmer for at least 10 minutes to allow flavors to develop. Season with salt and pepper. Add the shredded chicken and cook until heated through, 3 minutes.
  • 3. To serve, divide among 4 bowls and garnish as desired.

RED POZOLE

Red Pozole image

Rich, succulent, fatty pork combines with sweet white corn hominy in red pozole, an incredibly comforting, classic, cold weather dish that's usually served at New Year's. Whether you call pozole a soup or a stew, it's a satisfying bowl of food, with or without any fixings. Serve with finely sliced cabbage, diced onion, chopped avocado, sliced radishes and peppers, fresh cilantro, lime wedges, and chips or warmed corn tortillas.

Categories     Pork Stew

Time 6h30m

Yield 8

Number Of Ingredients 16

2 ½ pounds pork shoulder, cut into 2-inch chunks
2 ½ pounds pork shanks
1 ½ pounds pork feet
1 medium yellow onion, peeled, but left whole
1 medium carrot, peeled and cut in half
2 stalks celery, cut in half
2 tablespoons kosher salt, or more to taste
1 teaspoon freshly ground black pepper
2 teaspoons ground cumin
3 large bay leaves
4 quarts water, divided
2 tablespoons dried Mexican oregano
12 medium garlic cloves, unpeeled
3 ounces dried guajillo chiles, stemmed and seeded
1 ounce dried ancho chiles, stemmed and seeded
2 (30 ounce) cans white hominy, drained and rinsed

Steps:

  • Place pork shoulder in the refrigerator. Transfer pork shanks and feet into a large pot on the stove. Add onion, carrot, and celery, salt, pepper, cumin, and bay leaves. Pour in 3 quarts water. Turn heat to high and bring to a simmer.
  • Skim foam from the surface and add Mexican oregano, rubbing it between your hands as you drop it into the pot. Reduce heat to medium-low and simmer gently until pork is tender and will easily come off the bone, about 3 ½ hours.
  • While the pork is simmering, place unpeeled garlic cloves in a dry pan over medium heat. Roast the cloves, shaking the pan occasionally over the heat, until slightly charred on the outside and just starting to get soft on the inside. Remove from the heat and transfer into a bowl to cool.
  • Place guajillo and ancho chile peppers into a 4-cup liquid measuring cup and set a strainer over the top. Ladle some simmering broth from the pot into the strainer until chiles are covered. Let soak until the pork is finished simmering.
  • When pork is finished cooking, set a strainer over a large bowl. Remove pork and vegetables with a slotted spoon and place in the strainer.
  • Meanwhile, peel the cooled garlic cloves and add them to the chile pepper and broth mixture. Puree chile mixture with an immersion blender until smooth.
  • Pass pureed chiles through a strainer into the pot of broth. Add a spoonful or two of the broth to the pureed chiles to help it pass through the strainer if needed. Pour the remaining 1 quart of water through the strainer, then add the pork shoulder to the pot. Simmer over medium-low heat.
  • While the pork shoulder simmers, remove bones from pork shanks, then cut shanks and feet into smaller pieces.
  • Once the pork shoulder has simmered for 1 ½ hours, add diced shanks and feet to the pot. Stir in hominy and continue to simmer until pork is very tender, about 1 more hour. Skim any fat from the surface as it cooks and season with more salt if needed.

CHICKEN POSOLE

Chicken Posole image

This Mexican-style soup is an entire meal. It will keep in the freezer for up to three months. You can make this soup with any pre-cooked chicken or turkey. We used store-bought rotisserie chickens, but leftover Thanksgiving turkey will work just as well. When reheating, the hominy may pop in the microwave, so the soup should be thawed overnight in the refrigerator, then reheated over low heat on the stove.

POSOLE WITH CHICKEN & PORK

Posole With Chicken & Pork image

Posole or Pozole (both spellings are correct). This is a traditional Southwestern savory stew made with a specific variety of corn , pork chicken and/or beef and green chile. It's a hearty, authentic meal, perfect for anytime. This recipe is derived from #8545, but I made so many changes I decided it was worthy of a new recipe especially since it turned out so wonderful and it's a healthier version.

Provided by Wing-Man

Categories     Stew

Time 3h45m

Yield 12 serving(s)

Number Of Ingredients 17

2 tablespoons olive oil
1 whole rotisserie roasted deli chicken, de-boned and cut up
1 lb country-style boneless pork ribs
1 (32 ounce) container low sodium chicken broth
12 ounces water
3 medium white onions (chopped)
8 garlic cloves (minced)
2 (14 ounce) containers frozen green chilies (roasted, peeled & chopped)
1/4 teaspoon garlic salt
1/2 teaspoon cumin
1 tablespoon Mexican oregano
2 1/2 ounces Menudo Spice Mix
1 bunch cilantro (chopped, including stems)
1 (32 ounce) can hominy (drained)
1 (15 ounce) can hominy (drained)
salt
black pepper

Steps:

  • Cube the pork (you can use pork roast as well) and brown it in 2 tablespoons olive oil in a 5 quart sauce pan or pot over medium heat.
  • Add onions, garlic and saute until tender.
  • Add chicken.
  • Add water and broth, stir well.
  • Place 1 tub of green chiles in blender and puree. Them add to pan.
  • Add second tub to pan.
  • Add garlic salt, cumin, Mexican oregano and menudo spice mix. I used all but about 1 tablespoon of the menudo mix. I suggest adding small amounts until it is strong enough. Stir well.
  • Add cilantro.
  • Lower heat and simmer 3 hours.
  • Add hominy and simmer until warm throughout. About 15 minutes.
  • Salt and pepper to taste.
  • I have found the frozen green chiles and menudo mix at Kroger Signature & Wal-Mart grocery stores.
  • Actually I used a whole Beer Can Chicken off my smoker that most of the fat had been cooked off. I tossed the skin. That is why I suggested using rotiserie chicken.

POZOLE ROJO CON POLLO (MEXICAN RED POZOLE WITH CHICKEN)

Pozole Rojo Con Pollo (Mexican Red Pozole With Chicken) image

This Mexican stew is perfect party food: it feeds a crowd and the toppings passed around the table add to the festive nature of the dish. It's traditional to serve the chicken in whole pieces, but you can also pull the cooked chicken off the bone and add the meat back to the stew, as you might for a chili. The chile sauce can be made up to 2 days ahead. Let cool to room temperature, cover, and refrigerate. Reheat gently before proceeding. You can also make the stew start to finish the day before and reheat it just before serving.

Time 1h25m

Yield 6-8 serving(s)

Number Of Ingredients 25

2 large beefsteak tomatoes, cored
8 large dried guajillo chilies, wiped clean with a damp paper towel
20 medium garlic cloves, peeled
1 small white onion, cut into 1/2 inch-thick rounds
5 whole cloves
1/2 teaspoon whole allspice
1/4 cup vegetable oil
3 tablespoons distilled white vinegar
2 teaspoons granulated sugar
kosher salt, to taste
2 large fresh poblano chiles
6 chicken drumsticks, skin removed
6 chicken thighs, skin removed
1 quart low sodium chicken broth
2 teaspoons dried oregano, preferably Mexican
kosher salt, to taste
1 small bunch fresh cilantro
5 fresh mint sprigs (6 inch)
4 (15 ounce) cans hominy, preferably white drained rinsed
1/2 head romaine lettuce, cored sliced crosswise 1/4 inch thick
8 medium radishes, trimmed and sliced 1/8 inch thick
2 limes, cut in thirds
2 teaspoons dried Mexican oregano
3/4 teaspoon arbol chiles, powder or 3/4 teaspoon cayenne pepper
kosher salt, to taste

Steps:

  • Position a rack in the upper third of the oven and heat the oven to 500 degrees F (or heat a toaster oven). Cut a small X through the skin on the bottom of each tomato.
  • Put the tomatoes on a small, rimmed baking sheet lined with foil and roast until tender and well charred, 20 to 25 minutes. When they're cool enough to handle, pull off and discard the skin.
  • Meanwhile, stem the chiles and cut them open lengthwise with scissors or a knife. Remove the seeds and any large ribs.
  • Heat a comal, a griddle, or a heavy-duty skillet over medium-low heat until hot. Toast half of the guajillo chiles, flipping and pressing them down with tongs or a spatula until fragrant and slightly darkened, about 1 minute.
  • Transfer to a medium bowl. Repeat with the remaining chiles. Cover the chiles with cold water and soak until softened, about 30 minutes.
  • While the chiles soak, toast the garlic and onion on the comal over medium-low heat until just tender, turning the garlic as needed and flipping the onion slices once, until golden-brown with some blackened spots, about 8 minutes for the garlic and 15 minutes for the onion.
  • Drain the chiles and put them in a blender along with the tomatoes and any juice, the garlic, onion, cloves, and allspice. Puree, adding up to 1/2 cup water a little at a time as necessary, until very smooth, about 2 minutes.
  • In a 6-quart Dutch oven or other heavy-duty pot, heat the oil over medium heat. Add the puree (it will splatter), reduce the heat to low and fry, stirring constantly with a wooden spatula, until slightly thicker, about 5 minutes.
  • Add 1 cup water, raise the heat to medium high, and bring to a boil. Stir in the vinegar, sugar, and 1 tbsp salt.
  • Reduce the heat to a simmer, partially cover the pot, and cook, stirring occasionally and adding a little water as needed to keep the sauce more or less at the same consistency, for 30 minutes.
  • If you have a gas stove, turn two burners to high and char the poblanos directly over the flame, turning them with tongs as soon as each side becomes fully blackened, about 6 minutes.
  • If you don't have a gas stove, char the poblanos on a foil-lined baking sheet under the broiler. Immediately put them in a bowl, cover, and let steam for 15 minutes to loosen the skins. When they're cool enough to handle, peel, seed, and slice them into 1/4 x 2-inch strips.
  • Add the chicken, chicken broth, oregano, and 1 tbsp salt to the pot of chile sauce and bring to a simmer over medium-high heat. Tie the cilantro and mint together with kitchen string.
  • Add the herb bouquet and the hominy to the pot and simmer, uncovered, stirring occasionally, until the chicken is cooked through (cut into a piece to check), about 20 minutes. Remove and discard the herbs, then stir in the poblanos and cook until just heated through, about 5 minutes.
  • To serve, divide the chicken legs and thighs among warm, large bowls. Ladle the pozole over the chicken. Garnish with the toppings or pass them at the table.

RED CHILE CHICKEN POSOLE

Red Chile Chicken Posole image

This is a favorite in New Mexico at Christmastime, or any day you want a spicy, satisfying stew. I experimented and created my own recipe over the years, but the addition of ancho chile is a Bobby Flay inspiration.

Provided by Spice Boy

Time 1h5m

Yield 4-6 serving(s)

Number Of Ingredients 17

2 large dried ancho chiles
2 tablespoons new mexico chile powder (hot or mild)
1/2 teaspoon cumin
1/2 teaspoon dried basil
1 teaspoon dried oregano
1 tablespoon honey
1 tablespoon red wine vinegar
1 medium onion, chopped
4 garlic cloves, minced
2 (15 ounce) cans hominy, drained and rinsed
3 chicken breasts, boneless and skinless
1 cup dry white wine
6 cups chicken broth
5 tablespoons olive oil
salt and pepper
1/4 cup flour (for dredging)
6 -8 warm flour tortillas, for serving

  • Soak the ancho chiles in hot water for 1 hour. Discard soaking water. Remove stems and seeds from chiles and puree them with the honey.
  • Season the chicken breasts with salt and pepper and dredge them in flour.
  • Heat olive oil in a stock pot over med-high heat until hot. Saute chicken breasts until golden, about 3 minutes on each side, and remove from pot (chicken will not be cooked through).
  • Add onion to pot along with additional 2 T oil. Saute about 5 minutes or until onion is soft. Add garlic, chile powder, cumin, and 1 T of the dredging flour, and saute for an additional minute. Deglaze the pan with wine.

  • Bring to a boil and simmer uncovered over medium-low heat for 15 minutes. Stir in the pureed chile mixture and simmer an additional 15 minutes.

RED CHICKEN POZOLE

Red Chicken Pozole image

Chile-spiked red pozole, or pozole rojo, is a beloved staple in many home kitchens in Mexico. In this version, we seared chicken legs then submerged them in a bath of fiery anchos and guajillos and soothing hominy. Keep the drumsticks intact, shred the thigh meat and stir it in, and arrange the fixings on the table for serving-tostadas and shredded cabbage, cilantro and limes.

Provided by Greg Lofts

Categories     Soup Recipes

Time 1h35m

Number Of Ingredients 16

4 whole chicken legs, split, or 4 thighs and 4 drumsticks (2 1/2 pounds)
Kosher salt and freshly ground pepper
3 tablespoons vegetable oil
1 large white onion, quartered lengthwise and peeled (stem end intact)
1 quart low-sodium chicken broth
3 dried guajillo chiles, stems and seeds removed
1 dried ancho chile, stem and seeds removed
1 fresh jalapeño or serrano chile, stem removed (ribs and seeds removed for less heat, if desired)
3 cloves garlic, peeled
1 teaspoon dried oregano
1/3 cup packed fresh cilantro sprigs, plus more for serving
1/2 teaspoon cumin seeds
2 tablespoons fresh lime juice, plus wedges for serving
1 can (29-ounces) hominy, drained
Sliced radishes and shredded cabbage, for serving (optional)
Tostadas or tortilla chips, for serving (optional)

Steps:

  • Season chicken with salt and pepper. Heat 2 tablespoons oil in a pot over medium-high. Add chicken, skin-sides down, and cook, flipping once, until browned all over, 7 to 9 minutes (do not crowd pan; brown in batches if necessary). Add 2 onion wedges, broth, and 3 cups water.
  • Bring to a boil, then reduce heat to medium and cook at a bare simmer (small bubbles sporadically emerging at surface) until chicken is just cooked through, 20 to 25 minutes. Transfer chicken to a plate. Strain broth and return to pot.
  • Meanwhile, heat a heavy skillet (preferably cast iron) over medium-high. Add dried chiles and cook, turning a few times, until blistered in places and fragrant, 1 to 2 minutes. Transfer to a bowl and add enough hot tap water to cover; let stand 10 minutes.
  • Meanwhile, add remaining 1 tablespoon oil to skillet. Add 1 onion wedge, jalapeño, and garlic; cook, turning a few times, until golden brown in places and beginning to soften, 7 to 9 minutes.
  • Transfer mixture to a blender (do not wipe skillet clean), along with reconstituted dried chiles and 1/2 cup soaking liquid, oregano, cilantro, cumin, lime juice, and 1 teaspoon salt. Purée until smooth. Return mixture to skillet and simmer over medium heat, stirring occasionally, until reduced and darkened slightly, 8 to 10 minutes.
  • Remove and discard skin and bones from chicken; shred meat into bite-size pieces (leave drumsticks whole, if desired). Return chicken to pot with puréed-chile mixture and hominy. Simmer, stirring occasionally, 15 minutes. Season to taste. Chop remaining onion wedge and serve soup with onion, radishes, cabbage, tostadas, cilantro, and lime wedges.
