ULTIMATE REFRIED BEANS WITH CHEESE
Traditionally made with pinto beans, my version of the ultimate refried beans uses a combination of black beans and light red kidney for a more robust flavor.

Steps:
- Cover beans with 4 inches of water and soak for at least 12 hours, or overnight.
- Place the pot with beans and water on the stove and heat to a boil. Reduce heat to medium-low and simmer until much of the water has been absorbed and beans are soft enough to mash, about 2 hours.
- Crush the beans thoroughly with a potato masher. Simmer for 1 hour more.
- Take an immersion blender to the pot and pulverize the beans until there are no visible solids left. If any water remains, simmer until it evaporates and beans are reduced to a thick paste.
- Add milk, lard, garlic powder, salt, chile pepper, cumin, and cayenne and stir to combine. Cook for 10 minutes more.
- Meanwhile, preheat the oven to 400 degrees F (200 degrees C).
- Transfer beans to a casserole dish and sprinkle with Oaxaca cheese. Cover with foil.
- Bake in the preheated oven until cheese is melted, about 20 minutes, removing foil at the 15-minute mark. Serve immediately.

KENTUCKY RED BEANS AND RICE TOPPED WITH CRISPY COUNTRY HAM

Steps:
- For the beans: Melt the butter in a large Dutch oven over medium heat. Once it is melted, add the onions, pepper and celery and saute until tender, about 5 minutes. Add the pecans and saute until they are dark brown, 2 to 3 minutes more. Add the Cajun/Creole seasoning, garlic powder, ground thyme, white pepper and bay leaves. Stir to coat. Add the beans and 8 cups of water. Cover and cook over medium heat until the beans are just about to be al dente, 75 to 90 minutes. Uncover, stir in the hot sauce and liquid smoke and cook until the sauce thickens, the beans are tender and the liquid has reduced by half, about 20 minutes more.
- For the rice: Preheat the oven to 300 degrees F.
- Melt the butter in a medium saucepan over medium heat. Once it is melted, add the rice, Roasted Garlic, liquid smoke and 1/2 teaspoon salt and stir to combine. Saute over medium heat until all the rice is coated with butter. Add 1 1/2 cups warm water and bring to a boil, about 2 minutes. Cover, reduce the heat to low and cook until tender and the water is absorbed, 18 to 22 minutes. Remove from the heat and set aside for 5 minutes. Fluff with a fork before serving.
- Lay out the country ham slices on a baking sheet and bake until crispy, 15 to 25 minutes, depending on the thickness of your ham. Set aside until cool enough to crumble for garnish.
- Remove the bay leaves from the bean pot. Season the beans with salt and pepper, to taste. Serve over the rice. Garnish with the crumbled country ham.
- Preheat the oven to 375 degrees F.
- Cut the top off of the garlic head, exposing the cloves but leaving the head intact. Set the head on a large piece of foil, drizzle with the olive oil and season with salt and pepper. Wrap up the foil to make a pouch and bake until the garlic soft and roasted, 35 to 40 minutes. Let cool before using.
RED BEANS
An easy red beans over rice recipe straight out of New Orleans

- Pick through beans, removing all bad beans or any other particles. Wash beans well. Place beans in a 5-quart pot. Add the 2 quarts of water. Add onions; bring to a boil. Lower heat and let beans boil slowly for 1 hour. When beans are soft, stir well, mashing some against the side of the pot.
- Heat oil in frying pan; add ham and sausage. Sauté in oil for 5 mintues. Then add the sausage, ham, and oil to beans. Deglaze pan with the cup of water, then pour into beans. Add all other ingredients. Let simmer for 30 minutes. Beans should be nice and creamy. Serve over rice.

- In a blender or food processor, puree onion, bell pepper, garlic, cilantro, and annatto powder. Set mixture aside.
- Heat a large, heavy saucepan over medium heat. Pour in olive oil and saute ham with pureed mixture for 10 minutes, until browned. Mix in beans, potatoes, pumpkin, water, and salt. Reduce heat to low and simmer, stirring occasionally, for approximately 25 minutes, until mixture thickens and potatoes and pumpkin are tender.

- Cook rice according to package directions. Transfer to a large bowl; add the beans. In a nonstick skillet, saute onion in oil for 4-5 minutes. Stir in the tomatoes, chili powder and salt. Bring to a boil; remove from the heat., In a 2-qt. baking dish coated with cooking spray, layer a third of the rice mixture, cheese and tomato mixture. Repeat layers. EASY KIDNEY BEAN AND CHEESE CASSEROLE
If you prefer spicy then add in a finely chopped jalapeno pepper. The chili powder can be increased or decreased to suit taste.Also you can add in some navy beans with the kidney beans. This is a very simple but good bean recipe.

- Set oven to 350 degrees.
- Grease a 2-quart casserole dish.
- Heat a large skillet with oil over medium heat.
- Add in onion, garlic and green bell pepper (if using) saute until the onions are just golden.
- Add in the chili powder, salt and pepper; cook stirring for 1 minute.
- Add in the red kidney beans and drained chopped tomatoes; cook, stirring for 20 minutes, seasoning with more chili powder, salt and pepper to taste.
- Spread half of the mixture into the bottom of the baking dish.
- Sprinkle with about 1-1/2 cups cheese.
- Top with remaining bean mixture.
- Then top with remaining 1-1/2 cups cheddar cheese (or to taste).
- Bake uncovered for about 25 minutes, or until the cheese is browned.
- Serve hot.

- Put beans, stock, bay leaves, onion, jalapeno, cumin, and 1/2 teaspoon salt into a medium saucepan. Bring to a boil. Reduce to a brisk simmer. Cook 15 minutes, stirring occasionally. Strain, reserving 1/2 cup cooking liquid; discard onion, jalapeno, and bay leaves.
- Return beans and reserved cooking liquid to pan, and stir in 2 tablespoons cheese. Mash slightly with a potato masher until about half of the beans are broken down, leaving remaining beans whole. Season with salt, if desired. Cover with foil until ready to serve. Serve warm, sprinkled with remaining 2 tablespoons cheese.

- In large skillet heat oil on medium heat. Add green peppers, onions and garlic. Cook until tender.
- Add salt, pepper, bayleaf, diced tomatoes and beans. Simmer 20 minutes on low.
