Steps:
- Preheat oven to 400 degrees F.
- In large bowl, combine ketchup, tomato juice, salt, black and red peppers, eggs, bread crumbs, onions and mustard.
- Mix until thoroughly blended.
- Add ground beef.
- Mix gently but thoroughly.
- Line a 9 X 5-inch loaf pan with foil.
- Press in the beef mixture.
- In a separate bowl, combine the topping ingredients.
- Mix well.
- Spread topping over the meat loaf.
- Bake at 400 degrees F for 35 to 45 minutes or until done.
- Drain off fat.
- Rest meat loaf for 5 minutes before serving.
- Garnish with herbs, if desired.
COTTAGE MEATLOAF
My family loves this meatloaf recipe. My husband and his friends are always asking me to make it for dinner. Our son can almost eat a whole mini meatloaf to himself he enjoys it so much! A must for families and a comfort food.

Steps:
- 1. Preheat oven to 400 degrees F (200 degrees C)
- 2. In a large bowl combine: ground beef, sausage, 1/2 cup ketchup, tomato juice, salt, pepper, red pepper, eggs, bread crumbs, onion, carrot, celery, 4 Tbsp worcestershire sauce,4 tsp parsley and, 2 tsp mustard until well mixed. Either line a 9x5 inch loaf pan with foil or use 4 mini pans. Then press mixture in.
- 3. In a separate bowl combine 1/2 cup ketchup, 1 tsp mustard, 2 Tbsp worcestershire sauce and, brown sugar until smooth. Spread brown sugar mixture over meatloaf. Sprinkle with parsley.
- 4. Bake in preheated oven 45 to 55 minutes, until no longer pink. Drain off fat. Let rest for 5 to 10 minutes before serving.

I've been making this for years it's a huge family hit. Not sure where I gathered the recipe from but I remember right before I got married I made this folder of recipes I wanted to try on the new hubby. Well this is one that has stuck. It's still in the orginal folder and I use it all the time.

COTTAGE CHEESE MEATLOAF FROM 1968
The recipe comes from the Sunset Ground Beef Cookbook 1968 and has been one of our all-time favorite meatloaf recipes because of the taste as well as how quickly everything is put together and baked. To up the taste I have included 1 clove of garlic minced. It's a very light textured meatloaf in a shallow pan instead of the typical loaf pan style. I am mostly putting this recipe here for safekeeping since my book is getting more and more stained after 4 decades of use. I normally eat this meatloaf with a side of ketchup and I suppose I should come up with a topping that goes on before Parmesan cheese but haven't done that yet. There is already a very similar recipe posted on zaar that uses a microwave to cook the meat.

- Combine all ingredients except the Parmesan cheese until well blended.
- Press the mixture into a shallow baking pan about 8 inch square.
- Baked in a 350 degrees F oven for 20 minutes. Remove from oven and sprinkle the Parmesan cheese evenly over the top.
- Return to the oven and continue to bake for 15-18 minutes longer. Let stand for about 5 minutes before cutting in squares to serve.
GLUTEN-FREE KETO MEATLOAF
We gave classic meatloaf a keto-friendly upgrade. We caramelized the roasted red peppers to add a layer of sweetness -- without ketchup -- that balances the deep flavors of tomato paste and Parmesan. The almond flour and egg help the meatloaf hold together and slice beautifully without drying it out, and the bacon renders over top to add further flavor.

- Preheat the oven to 375 degrees F. Grease the bottom of a rimmed baking sheet with 1 tablespoon of the olive oil. Set aside.
- Put the mushrooms in a food processor and pulse until finely chopped but not mushy and blended, about 10 times.
- Heat 2 tablespoons olive oil in a medium skillet over medium-high heat. Add the scallions and cook, stirring occasionally, until softened, about 1 minute. Stir in the mushrooms and cook until lightly browned, about 3 minutes; some liquid will be released but should evaporate while cooking. Add the tomato paste and cook 1 minute, stirring to coat the mushrooms. Transfer the mushroom mixture to a large bowl and set aside.
- Add the red peppers and remaining 1 tablespoon olive oil to the same skillet over medium heat. Cook, stirring occasionally, until light brown and well caramelized, about 10 minutes. If the bottom of the skillet starts browning too quickly, add 1 teaspoon of water and scrape with a wooden spoon. Add the red peppers to the mushroom mixture. Add the ground chuck, ground pork, Cheddar, parsley, Parmesan, almond flour, thyme, egg, 1 teaspoon salt and 1/2 teaspoon pepper and mix to combine.
- Transfer the meatloaf mix to the prepared baking sheet and form into a loaf. Arrange the strips of bacon over top in a single layer. Bake until an instant-read thermometer inserted in the middle of the loaf registers 165 degrees F, 50 to 60 minutes. Let rest for 10 minutes before serving.

- Preheat the oven to 325 degrees F.
- Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
- Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
- Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
- Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
- Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
- Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.
