BEEF WITH RED BEANS AND RICE
Red beans and rice is a classic Cajun dish. Try this Louisiana favorite with Ground Beef.

- Prepare Cajun-Style Beef Sausage. Heat large nonstick pan over medium heat until hot. Add sausage mixture, onion, bell pepper and celery; cook 8 to 10 minutes, breaking into 3/4-inch crumbles and stirring occasionally.
- Stir in 1-1/2 cups tomatoes, beans, rice, Cajun seasoning and broth. Cover and cook 5 to 6 minutes until rice is tender. Uncover and cook another 1 to 3 minutes or until desired consistency is reached. Top with remaining 1/2 cup tomatoes. Season with salt and pepper, as desired.

- In a large skillet heat the vegetable oil over medium-high heat. Saute the onion, celery, green bell pepper, and garlic until tender. Add the smoked sausage, Neelys Dry Rub, thyme, salt and pepper. Saute for about 5 minutes then add the red beans, chicken stock and bay leaves. Let simmer uncovered on low for 1 1/2 hours. Stirring occasionally and adding water, if necessary.
- While the beans are cooking add all the ingredients for the rice to a small saucepan over medium heat. Cover and let cook for 15 minutes. Once the rice is cooked, let stand for 5 minutes. Serve with the red beans.

- In a heavy bottomed 4 quart pot, heat oil over medium heat. Cook onion, bell pepper, garlic, and celery in bacon fat until soft.
- Add the ground beef and cook until browned all the way through.
- Pour in the broth and beans. Add cajun seasoning. Bring to a boil, and reduce to a simmer.
- Stir sausage into beans, and continue to simmer for 30 minutes.
- Serve beans over hot rice.

- Rinse beans, and then soak in a large pot of water overnight.
- In a skillet, heat oil over medium heat. Cook onion, bell pepper, garlic, and celery in olive oil for 3 to 4 minutes.
- Rinse beans, and transfer to a large pot with 6 cups water. Stir cooked vegetables into beans. Season with bay leaves, cayenne pepper, thyme, sage, parsley, and Cajun seasoning. Bring to a boil, and then reduce heat to medium-low. Simmer for 2 1/2 hours.
- Stir sausage into beans, and continue to simmer for 30 minutes.
- Meanwhile, prepare the rice. In a saucepan, bring water and rice to a boil. Reduce heat, cover, and simmer for 20 minutes. Serve beans over steamed white rice.

- Sort beans and rinse with cold water. Place beans in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand until beans are softened, 1-4 hours., Drain and rinse beans, discarding liquid. Return to Dutch oven. Add the water, ham hock, bay leaves and onion powder. - In a heavy bottomed 4-quart pot over medium heat, heat bacon fat, butter or oil and add 1 chopped, medium onion, 2 chopped green bell peppers, 2 tablespoons of minced garlic, and 3 chopped celery ribs, cook until soft.
- Add 1 lb of ground beef and continue cooking until browned.
- Add 4 cans of kidney beans, 2 cups of broth and 2 teaspoons of Cajun seasoning. Bring everything to a boil and then reduce heat to simmer.

- Brown hamburger and onions.
- Pour in chicken broth.
- Then mix in the red kidney beans, kielbasa, garlic, Cajun seasoning and cayenne pepper.
- Bring to boil and let simmer for 60 minutes.
- Cook one cup of rice and when done mix into pot.
- Mix the flour and cold water to make a slurry and pour into pot to thicken sauce.
- Serve and enjoy.

- Prepare the rice in a large pot according to package directions.
- Cut the kielbasa into 1-inch chunks and quarter the chunks. Place in a large skillet over medium-high heat for about 5 to 10 minutes, or until lightly browned. Season with cayenne pepper to taste. Transfer this to the pot with the rice, reserving the grease in the skillet.
- In the same skillet over medium-high heat, saute the ground beef for 5 minutes. Stir in the rice, and onion; reduce heat to medium and saute for 5 more minutes. Drain well and add to the pot. Stir the kidney beans, pinto beans, and pork and beans into the pot. Add a little water, if necessary, and simmer over low heat until ready to serve.
