RED BEAN SOUP WITH GUACAMOLE SALSA

Steps:
- Heat the oil in a large, heavy based saucepan.
- Add the onions and garlic.
- Cook for about 4-5 minutes until softened but not coloured.
- Add the cumin, cayenne and paprika and cook for 1 minute, stirring continuously.
- Stir in the tomato puree and cook for a few seconds, then add the oregano.
- Add the tomatoes, kidney beans and the water.
- Bring mixture to the boil and simmer for 15-20 minutes.
- Cool the soup slightly, then puree it in a food processor or blender until smooth.
- Return to the saucepan and add seasoning to taste.
- Salsa------------.
- Halve, stone and peel the avocados, and dice finely.
- Place in a small bowl and gently, but thoroughly, mix with the red onion and the chillis, and the coriander and lime juice.
- Reheat soup and ladle into bowls.
- Spoon a little of the salsa into the middle of each bowl of soup.
- If you want to spice it up further offer the Tabasco to your guests.
RED BEAN SOUP WITH ANDOUILLE SAUSAGE (CROCK POT)
Posting this for ZWT 2006 (French, Cajun & Creole region). I absolutely love red beans & rice though I make it my own weird way and when I found this recipe, I had to try it. I played with the spices some as it was rather bland the original way. I serve this kind of gumbo style with a scoop of cooked rice put into the bowls before I add the soup.

Steps:
- Melt butter in large saucepan. Add onion, garlic, celery and green pepper. Cook and stir for five minutes. Place in slow cooker.
- Add broth, ham or ham hock, beans, bay leaf and other seasonings. Cover and cook on high for two hours.
- Remove ham hock if you used it. Cut off what meat you can and add it to the crock pot. Add parsnips or white potatoes and sweet potato. Cover and cook for an additional two hours.
- Add sausage. Cover and cook for an additional 30 minutes or until heated through. Discard bay leaf. Salt and pepper to taste and serve with rice.

- Heat the oil in a medium pan, add the onion (reserving 1 tbsp to make the guacamole later) and pepper and fry, stirring frequently, for 10 mins. Stir in the garlic and spices, then tip in the tomatoes and beans with their liquid, half a can of water and the bouillon powder. Simmer, covered, for 15 mins.
- Meanwhile, peel and de-stone the avocado and tip into a bowl, add the remaining onion, coriander and lime juice with a little chilli (if using) and mash well. Ladle the soup into two bowls, top with the guacamole and serve.

This came from Jan/Feb 2003 issue of Quick Cooking. I haven't tried it yet but it looks good. The original recipe called for chicken broth but I changed that to vegetable broth. Adjust seasonings to taste.

- For the soup: In a medium nonstick skillet, heat oil over medium heat; add onion and salt. Cook, stirring occasionally, until onion is softened, about 5 minutes.
- Add broth, bring to a boil, and simmer for 3 minutes; transfer to a medium bowl to cool.
- Place half of the cooled broth mixture in a blender (make sure to get an equal amount of liquid and onions); add yellow peppers and 1⁄2 cup of the yogurt; purée until smooth.
- Transfer yellow pepper purée to a covered container and refrigerate until chilled, about 30 minutes.
- Rinse blender and transfer remaining broth mixture to it. Add red peppers and remaining 1⁄2 cup yogurt; purée until smooth.
- Transfer red pepper purée to another covered container and refrigerate until chilled, about 30 minutes.
- For the salsa: While soups are chilling, in a small bowl combine avocado, cilantro, and lime juice.
- To serve the soup, simultaneously ladle a generous 1⁄2 cup of the yellow pepper soup and a generous 1⁄2 cup of the red pepper soup into each of 4 shallow bowls, allowing soups to meet in center. Garnish each with salsa and serve.

- Put cucumber, garlic, scallions, capsicum, herbs, vinegar, sugar, stock & half the chopped avocado into a food processor fitted with a steel blade (or put the ingredients straight into the serving bowl & use a hand-held blender with equal results & less dishes!).
- Blend well, then pour into a large serving bowl and add wine, salt, pepper, olive oil & diced tomato.
- From now on it must be stirred, not blended.
- Just before serving, toss the remaining avocado in the lemon juice, stir into the soup & serve with garlic croutons.

RED BEAN SOUP
This came from a Cajun Cookbook that my friend had loaned to me. The prep. time does not include soaking the beans overnight.

- Put the beans in a saucepan, cover with fresh water and bring to a boil.
- Boil for 10 minutes and drain.
- Set aside.
- Melt the butter in a dutch oven or very large saucepan and cook the onion, garlic, celery and carrot, covered, until softened.
- Add the beans, ham, ham bone, water, worcestershire sauce, parsley, thyme, bay leaves, lemon juice, pepper flakes, and salt and pepper to taste.
- Bring to a boil and simmer 2 hours or until beans are very soft.
- Discard the ham bone.
- Scoop out the chunks of ham and reserve.
- Press the soup through a fine sieve and return it to the saucepan.
- Discard the solids in the sieve.
- Cut the chunks of ham into small dice and add to the soup.
- Reheat, and taste and adjust the seasonings.
- Serve hot, sprinkled with a little parsley.
