PASTA WITH RED KIDNEY BEANS

Pasta With Red Kidney Beans image

This recipe is a favorite! Very quick for those days when you get out of work late. I got this years ago from the back of a Ronzoni pasta box. Now I use Barilla Plus multi grain pasta. Taste the pasta from time to time, the Barilla seems to take a bit longer than the regular elbow noodles. So good! Tastes fantastic with corn bread on the side.

RED BEANS AND SPAGHETTI

Red Beans and Spaghetti image

This dish has been in my family for as long as anyone can remember. Since I am from Louisiana people eat red beans with rice, not with spaghetti; needless to say none of our friends enjoy this meal. Do not add meat.

PASTA WITH TOMATOES AND BEANS

Pasta With Tomatoes and Beans image

This pasta is one reason I always keep a few cans of tomatoes and cannellinis in my pantry. Beans contribute protein to this pasta, which makes a great vegan dish if you serve it without the cheese.

Provided by Martha Rose Shulman

Categories     dinner, weekday, pastas, sauces and gravies, main course

Time 30m

Yield Serves four

Number Of Ingredients 11

2 tablespoons extra virgin olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1 14-ounce can chopped tomatoes, with juice
Pinch of sugar
Salt
freshly ground pepper
1 15-ounce can cannellini beans, drained and rinsed
4 sage leaves or basil leaves, cut in slivers optional
3/4 pound pasta, any shape
1/4 cup freshly grated Parmesan (optional)

Steps:

  • Bring a large pot of water to a boil.
  • Meanwhile, heat the olive oil over medium heat in a large skillet or saucepan. Add the onion. Cook, stirring, until tender, about five minutes. Add the garlic, and stir together until fragrant, about 30 seconds. Add the tomatoes with juice and a pinch of sugar. Raise the heat slightly, and cook, stirring, until the tomatoes are bubbling vigorously. Lower the heat to medium-low, and cook gently, stirring and mashing the tomatoes often with the back of your spoon until they have cooked down into a thick, fragrant sauce, 15 to 20 minutes. Stir in the beans and the herbs, and season to taste with salt and pepper. Keep warm.
  • When the pasta water comes to a boil, salt generously and add the pasta. Cook al dente, following the recommendations on the package but checking about a minute before the indicated time. When the pasta is just about done, check to see if the tomato sauce seems dry. If so, add up to 1/4 cup of the pasta water to the pan and stir. Drain the pasta, toss with the sauce and serve, passing the cheese for sprinkling.

1 medium yellow onion (diced)
6 medium cloves garlic (minced)
2 teaspoons kosher salt + more to taste
1/4 teaspoon freshly ground black pepper + more to taste
1/4 teaspoon crushed red pepper flakes
2 28-ounce cans whole San Marzano tomatoes
1 1/2 cups water
1 tablespoon vegan-friendly granulated sugar

  • Set a large pot over medium heat. When hot, add the olive oil. Add the onion and cook, stirring occasionally, until soft, 5-6 minutes. Add the garlic, red pepper flakes, salt, and pepper. Cook, stirring frequently, for one more minute.
  • Squeeze the tomatoes to crush and add them to the pot along with the juices from the can. Add the water and honey and stir to combine. Add the lentils. Increase heat to bring the mixture to a boil and then reduce heat to medium. Simmer, stirring occasionally, until the lentils are almost cooked through, about 20 minutes.

  • Serve over your favorite pasta (we're partial to whole wheat spaghetti with this sauce), spooned over spaghetti squash, or in a baked sweet potato.
  • Sauce keeps refrigerated in an airtight container for 2-3 days. It also freezes very well.

MEDITERRANEAN BROCCOLI PASTA WITH WHITE BEANS

Mediterranean Broccoli Pasta with White Beans image

Simple, hearty Mediterranean bean and broccoli pasta, tossed in a light olive oil sauce, and flavored with a few spices and herbs including oregano and fresh parsley. A sprinkle of grated Parmesan and some toasted pine nuts seal the deal!

Provided by The Mediterranean Dish

Categories     Entree

Time 30m

Number Of Ingredients 14

3/4 lb elbow macaroni, whole wheat if possible
1/4 cup Private Reserve Greek Extra Virgin Olive Oil
1 small red onion, finely chopped
6 to 8 garlic cloves, minced
1/2 tsp dried oregano
1/2 tsp Aleppo pepper
1/4 tsp crushed red pepper, more if you like spicy
1 lb frozen broccoli florets, thawed (see notes for using fresh broccoli)
1 can Cannellini beans, drained and rinsed
salt and pepper
2 cups chopped fresh parsley leaves
1 1/2 tsp Za'atar spice blend, more for later
1/3 cup grated Parmesan cheese
1/3 cup toasted pine nuts

Steps:

  • Cook pasta in salted boiling water according to package until al dante. I like to add a little olive oil to the cooking water. Before you drain pasta, reserve 1 cup of the pasta cooking water for later.
  • In a large pot, heat the extra virgin olive oil over medium-high heat until shimmering but not smoking. Add chopped onions and cook for 2 minutes, stirring regularly, until translucent. Add garlic, oregano, Aleppo pepper, and crushed pepper flakes. Stir till fragrant.
  • Now add thawed broccoli florets. Cook 4 minutes, tossing regularly. Add cannellini beans. And season with salt and pepper. Cook another 3 minutes or so, tossing regularly.
  • Add the cooked pasta and about 1/3 cup of the reserved cooking water into the pot. Add fresh parsley, za'atar spice, and Parmesan cheese. Toss to combine. If you need to, add a little bit more of the pasta cooking water to help combine everything. Taste and adjust seasoning. Cook until everything is very well warmed through.
  • Transfer to serving bowls. Sprinkle toasted pine nuts, more za'atar spice, and more crushed red pepper flakes on top. Enjoy!

Yield 4 Servings

Number Of Ingredients 15

6 Tbsp. extra-virgin olive oil, divided, plus more for drizzling
⅔ cup breadcrumbs (fresh, dried, or panko)
4 garlic cloves, finely grated, divided
1½ tsp. kosher salt, divided, plus more
½ cup coarsely chopped parsley
1 lb. ziti, rigatoni, cavatelli, or other medium tube pasta
1 medium onion, finely chopped
4 whole roasted red peppers from a jar (about one 16-oz. jar), finely chopped
2 Tbsp. tomato paste
1 (15-oz.) can white beans (such as navy or cannellini), rinsed
2 tsp. finely grated lemon zest
1 Tbsp. fresh lemon juice
¼ tsp. crushed red pepper flakes
Freshly ground black pepper
Lemon wedges (for serving; optional)

Steps:

  • Heat 3 Tbsp. oil in a large Dutch oven or other heavy pot over medium-high. Add breadcrumbs, half of the garlic, and ½ tsp. salt and cook, stirring constantly to incorporate the garlic, until golden brown and crisp, about 5 minutes. Transfer to a small bowl and stir in parsley. Wipe out and reserve pot.
  • Meanwhile, cook pasta in a large pot of boiling salted water, stirring occasionally, according to package directions. Drain, reserving 2 cups pasta cooking liquid.
  • Heat 3 Tbsp. oil in reserved pot over medium-high. Cook onion, stirring occasionally with a wooden spoon, until slightly softened, 6-8 minutes. Add roasted red peppers, remaining garlic, and 1 tsp. salt. Cook, stirring often, until any liquid is evaporated and vegetables are combined and glossy looking, about 5 minutes. Add tomato paste and cook, stirring occasionally, until vegetables are coated and paste is slightly darkened in color, about 5 minutes.
  • Add beans, lemon zest, lemon juice, and red pepper flakes to pot; season with black pepper. Cook, smashing beans and stirring to combine with spoon, about 2 minutes. Reduce heat to medium and gradually add reserved pasta cooking liquid (you might not need all of it), stirring and mashing as you go, until combined and sauce is thick. Remove from heat and immediately add pasta; toss to coat.
  • Divide pasta among bowls; drizzle with a little oil and spoon breadcrumbs on top. Squeeze some lemon juice over if desired.

SPICY RED PASTA WITH LENTILS

Spicy Red Pasta with Lentils image

Simple, 30-minute spicy red pasta sauce with red lentils for added protein and fiber. Serve over gluten-free pasta for a delicious and hearty plant-based meal!

Provided by Minimalist Baker

Categories     Entree

Time 30m

Number Of Ingredients 16

1/2 cup dry red lentils ((rinsed in cool water for 1 minute))
2 cups water
1 pinch sea salt
1 Tbsp olive oil
3 cloves garlic, minced ((3 cloves yield ~1 1/2 Tbsp))
1/4 cup carrots ((very finely diced))
1/4 cup diced tomatoes ((optional))
1 15-ounce can tomato sauce*
2 Tbsp tomato paste
1 pinch sea salt ((plus more to taste))
1/2 tsp red chili flakes ((divided))
1 Tbsp dried or fresh oregano
1 Tbsp dried or fresh basil
1-2 Tbsp sweetener of choice ((such as organic cane sugar or coconut sugar))
1 Tbsp vegan parmesan cheese
8 ounces gluten-free pasta

Steps:

  • Add lentils and water to a small saucepan and bring to a low boil over medium heat, then reduce heat slightly to achieve a mild simmer (not boil).
  • Cook lentils to preferred doneness - 15 minutes for a slight bite, 20-22 minutes for more tender lentils. For this dish, I prefer 'al dente' so they don't become mushy.
  • When lentils are finished cooking, drain off any excess cooking liquid, season with a pinch of salt, and set aside.
  • While lentils are cooking, heat a large, rimmed metal or cast iron skillet over medium heat. Once hot, add olive oil, garlic, carrots and tomato (optional). Sauté for 3 minutes, stirring frequently.
  • To prevent splattering, remove skillet from heat and add tomato sauce, tomato paste, pinch sea salt, chili flake, oregano, basil, sweetener, and vegan parmesan cheese (optional), and stir to combine.
  • Place back over heat and bring to a low simmer over medium-low heat. Once simmering, reduce heat to low and continue cooking for 10-15 minutes, stirring occasionally.
  • If serving with pasta, cook according to package instructions at this time. Then drain and set aside.
  • Sample pasta sauce and adjust seasonings as needed. Add more sweetener to balance and enhance the flavors: chili flake for heat, salt for saltiness, or more herbs for depth of flavor. If too thick, thin with a little water.
  • Add the cooked, drained lentils to the sauce and stir to combine. To serve, either spoon sauce over noodles, or add pasta to the sauce and toss to coat.
  • Serve with any additional toppings, such as red pepper flakes, vegan parmesan cheese, and fresh basil.
  • Best when fresh. Store leftovers separately in the refrigerator up to 3 days. Reheat sauce in the microwave or saucepan. Add a little water to thin if too thick. I've found gluten free pasta doesn't keep well, so cook fresh for each batch.
